Number Of Ingredients 10

1 gallon salted water
2 tablespoons extra-virgin olive oil
4 ounces pancetta or slab bacon, diced
1 teaspoon diced garlic
2 tablespoons white wine
1/2 cup cream
1 teaspoon freshly ground black pepper
1 pound fresh linguini
1 cup grated Pecorino Romano
2 eggs, separated

Steps:

  • Put the water in a large pasta pot and bring it to a boil over medium heat.
  • Add the oil and pancetta to a large saute pan over low heat. Cook the pancetta until crisp, being careful not to burn it, about 5 minutes. Add the garlic and stir for 5 seconds. Add the wine, cream and black pepper. Cook until the sauce coats the back of a spoon. Drop the fresh linguini into water and stir to separate strands. When pasta is just undercooked remove it from the water and add it to the pan with the sauce. Gently stir for 1 minute. Remove the pan from the heat, add 1/2 the cheese and the egg white and stir, being careful not to break the noodles. Add the egg yolk and lightly toss. Transfer the pasta to a serving bowl or platter and garnish with the remaining cheese. Enjoy.

3/4 pound pancetta or slab bacon, 1/4-inch dice
2 large eggs
2 large egg yolks
1 cup good quality freshly grated Parmigiano-Reggiano, plus additional for serving
1/4 cup roughly chopped parsley leaves
Kosher salt and freshly ground black pepper

Steps:

  • 1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions. Drain and reserve about 1 cup of pasta water.
  • 2. Meanwhile, in a large skillet cook pancetta over medium heat until slightly crispy; set aside with all the drippings.
  • 3. While the pancetta is cooking, in a medium bowl, whisk the eggs and yolks with Parmigiano-Reggiano, parsley and generous amount of salt and pepper to taste. After draining the pasta, return it to the pot and add the pancetta and drippings. Working quickly, add the egg and cheese mixture stirring everything together until the noodles are coated and creamy. Add pasta water, as needed, to loosen the noodles slightly if the sauce becomes too thick. Season with additional salt and pepper, if desired. Transfer to serving bowls and serve hot with additional cheese.

We like to splurge every once in a while and add a knob of butter to the cheesy egg sauce just to round it out. We've left that option up to you, however. Either way, we can't think of a more classic or satisfying pasta dish.

4 large eggs, plus 2 large yolks
1 cup freshly grated Parmesan, plus more for sprinkling
1/2 cup freshly grated Pecorino Romano
1 tablespoon coarsely ground black pepper
2 tablespoons unsalted butter, at room temperature (optional)
1 pound spaghetti
One 12-ounce piece pancetta, cut into matchsticks

Steps:

  • Bring a large pot of salted water to a boil over high heat.
  • Whisk together the eggs, yolks, Parmesan, Pecorino, pepper and butter if using in a large bowl until well combined.
  • Add the pasta and cook as the label directs. Reserve 1 cup cooking water, then drain the pasta.
  • Meanwhile, cook the pancetta in a large skillet over medium heat, stirring occasionally, until crisp, about 8 minutes. Add the spaghetti and half the reserved pasta cooking water to the skillet and toss to combine.
  • Add the egg mixture and toss to coat. Cook, tossing continuously to avoid scrambling the eggs, until the sauce is creamy, thinning it with the remaining pasta water if it becomes too thick (it should be saucy but not watery), about 1 minute.
  • Divide the pasta among plates and sprinkle with more grated Parmesan.

SPAGHETTI ALLA CARBONARA

1 pound dry spaghetti
2 tablespoons extra-virgin olive oil
4 ounces pancetta or slab bacon, cubed or sliced into small strips
4 garlic cloves, finely chopped
2 large eggs
1 cup freshly grated Parmigiano-Reggiano, plus more for serving
Freshly ground black pepper
1 handful fresh flat-leaf parsley, chopped

Steps:

  • Prepare the sauce while the pasta is cooking to ensure that the spaghetti will be hot and ready when the sauce is finished; it is very important that the pasta is hot when adding the egg mixture, so that the heat of the pasta cooks the raw eggs in the sauce.
  • Bring a large pot of salted water to a boil, add the pasta and cook for 8 to 10 minutes or until tender yet firm (as they say in Italian "al dente.") Drain the pasta well, reserving 1/2 cup of the starchy cooking water to use in the sauce if you wish.
  • Meanwhile, heat the olive oil in a deep skillet over medium flame. Add the pancetta and saute for about 3 minutes, until the bacon is crisp and the fat is rendered. Toss the garlic into the fat and saute for less than 1 minute to soften.
  • Add the hot, drained spaghetti to the pan and toss for 2 minutes to coat the strands in the bacon fat. Beat the eggs and Parmesan together in a mixing bowl, stirring well to prevent lumps. Remove the pan from the heat and pour the egg/cheese mixture into the pasta, whisking quickly until the eggs thicken, but do not scramble (this is done off the heat to ensure this does not happen.) Thin out the sauce with a bit of the reserved pasta water, until it reaches desired consistency. Season the carbonara with several turns of freshly ground black pepper and taste for salt. Mound the spaghetti carbonara into warm serving bowls and garnish with chopped parsley. Pass more cheese around the table.

8 ounces pancetta or thick bacon, diced
4 large eggs, at room temperature
1 cup (2 1/2 ounces) freshly grated Parmigiano-Reggiano cheese
1 teaspoon freshly ground black pepper
Kosher salt
1 pound spaghetti

Steps:

  • In a large saute pan, heat the oil over medium heat until shimmering. Add the pancetta and cook until it is browned and the fat has rendered, about 5 minutes. Reduce the heat to the lowest setting and keep warm.
  • In a large bowl, mix together the eggs, cheese, and pepper until uniform. Set aside.
  • Fill a large pot with water and add enough salt so the water tastes like seawater. Bring the water to a boil. Add the pasta and cook according to the directions on the package until al dente. Reserve 1 cup of the pasta cooking liquid.
  • Drain the pasta, transfer to the bowl with the egg mixture and add the pancetta, along with all the fat from the pan. Toss the pasta with the egg-cheese mixture and the pancetta until the eggs are cooked and the pasta is coated and creamy, about 1 minute. Serve immediately.

This is a recipe I cut out of a Woman's Day magazine from Rachel Ray. I was unable to found this on her web site. We have this several times a month. I do cook the pasta for about 11 minutes.

1 lb pasta, spaghetti
1/4 cup extra virgin olive oil
1/4 lb pancetta, chopped
1 teaspoon red pepper flakes
5 -6 garlic cloves, chopped
1/2 cup dry white wine
2 large egg yolks
freshly grated romano cheese

Steps:

  • Put a large saucepot of water to boil.
  • Once boiling, add a liberal amount of salt and pasta. Cook to al dente, about 8 minutes.
  • Meanwhile, heat a large skillet over medium heat.
  • Add olive oil and pancetta. Brown pancetta about 2 minutes.
  • Add red pepper flakes and garlic and cook 2 to 3 minutes more.
  • Add wine and stir up all pan drippings.
  • In separate bowl, beat yolks, then add 1 large ladleful (about 1/2 cup)of the pasta cooking water. This tempers the eggs and keeps them from scrambling when added to pasta.
  • Drain pasta well and add directly to skillet with pancetta, garlic and oil.
  • Pour egg mixture over pasta. Toss rapidly to coat the pasta without cooking the egg.
  • Remove from heat and add a big handful of cheese, lots of pepper and a little salt. Continue to toss and turn pasta until soaks up egg mixture and thickens, 1 to 2 minutes.
  • Serve with extra Romano.

1 tablespoon olive oil
1 yellow onion, chopped
2 garlic cloves, crushed
4 slices bacon, fat removed and chopped into chunks (the smokey variety is tastier)
600 ml light cream
4 eggs
1/2 cup parmesan cheese, the shredded variety
1 teaspoon salt, I usually add a little more
pepper
500 g fettuccine pasta
1 teaspoon oil, for boiling pasta
1 teaspoon salt, for boiling pasta
parmesan cheese, extra

Steps:

  • Place water in a large saucepan with a little oil and salt.
  • Bring to the boil and add fettucine.
  • Stir for a few minutes to prevent fettucine from sticking together.
  • Meanwhile, heat oil in a saucepan and gently cook onion, garlic and bacon on medium heat until onion becomes soft being careful not to burn.
  • In a bowl beat the eggs.
  • Pour in cream and whisk together.
  • Add salt and pepper and mix well.
  • Transfer cream mixture into saucepan (off the heat) with onion, garlic and bacon and stir quickly to combine.
  • When pasta is cooked, drain into a large serving bowl and stir in the carbonara sauce and combine well.
  • The heat of the pasta will cook the sauce and thicken.
  • Serve immediately with some extra parmesan cheese.

extra-virgin olive oil
8 slices bacon, cut crosswise into thin strips
1 onion, chopped
4 large eggs
6 tablespoons heavy cream
1/4 cup fresh grated parmesan cheese
1 lb spaghetti
cracked black pepper
1/4 cup fresh flat-leaf parsley, chopped

Steps:

  • Bring a large pot of salted water to a boil for the spaghetti.
  • Heat a 3-count of olive oil in a skillet over medium heat. Add the bacon and onion and cook for 7-8 minutes, until the onion is caramelized and the bacon is crisp. While cooking the onion and bacon, crack the eggs into a big serving bowl. Add the cream and cheese and whisk. Scrape the bacon and onion into the bowl along with the cooking fat.
  • Before draining pasta, scoop out 1/4 cup of the pasta cooking water and add it to the bowl with the bacon and eggs. Drain the spaghetti and add it to the bowl - toss well. Place a plate on top of the bowl to hold in the heat and let sit 5 minutes. Remove the plate, toss in some salt and cracked black pepper and the parsley.

1 tablespoon cornstarch
4 eggs, lightly beaten
1 cup half-and-half cream
3/4 cup chopped onion
2 tablespoons olive oil

1 cup frozen peas
8 bacon strips, cooked and crumbled
1/2 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon white pepper

Steps:

  • Cook spaghetti according to package directions. Meanwhile, in a large bowl, combine the cornstarch, eggs and cream until smooth; set aside. , In a large skillet, saute onion in oil until tender. Add garlic; cook 1 minute longer. Gradually stir into egg mixture. Add peas to hot skillet; cook and stir for 1 minute or until heated through. Pour egg mixture into skillet all at once, stirring constantly. , Cook and stir over medium-low heat until mixture is just thick enough to coat the back of a metal spoon with a thin film and a thermometer reads 160°, about 5 minutes. Remove from the heat., Drain spaghetti; toss with sauce. Sprinkle with bacon, cheese, salt and pepper; toss again. Serve immediately with additional cheese if desired.
