This is a great dish that easily doubles for big parties or potlucks. Also it is a great and different change to mashed potatoes.

1 (2 lb) bag hash browns (thawed)
1 pint sour cream
8 ounces shredded cheddar cheese
1 (10 1/2 ounce) can cream of chicken soup
1 cup margarine (softened) or 1 cup butter (softened)
1 cup of chopped onions or 1/2 cup dehydrated onion
1 cup corn flakes or 1 cup crushed cracker
1/4 cup of melted margarine or 1/4 cup butter
1 teaspoon garlic powder
1 teaspoon salt

Steps:

  • Preheat oven to 350 degrees.
  • Mix all ingredients except the cornflakes or crackers and the 1/2 stick of melted butter together in a bowl.
  • Grease 9x13 inch pan (you can use cooking spray) and add all ingredients from the bowl to the pan.
  • Just before baking, mix the cornflakes or crackers and the 1/2 stick of melted butter together and then sprinkle on the top.
  • Bake for 1 hour at 350 degrees.

1 (2 pound) package frozen hash brown potatoes, thawed
1 (10.75 ounce) can condensed cream of potato soup
1 (10.75 ounce) can condensed cream of celery soup
1 (16 ounce) container sour cream
¼ cup milk
½ cup chopped onion
1 teaspoon salt
½ teaspoon pepper
⅛ teaspoon dried dill weed
1 ½ cups shredded Cheddar cheese
paprika to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9 x 13 inch baking dish.
  • In a large bowl combine hash browns, potato soup, celery soup, sour cream, milk and onion. Mix well and then season with salt, pepper and dill weed. Spoon into prepared dish and sprinkle with cheese and paprika.
  • Bake in preheated oven for 1 to 1 1/2 hours, or until well browned and bubbly.

2 lbs frozen hashbrowns (thawed)
2 cups lowfat sour cream ( (regular is okay too!))
3 teaspoons garlic powder
2 teaspoons onion powder
2 cups shredded sharp cheddar cheese
2 teaspoons salt (or to taste)
½ teaspoon pepper (or to taste)
2 cups cornflakes cereal (crushed)
4 tablspoons butter (melted)
2 tbs flour
6 tablespoons butter
1 cup chicken broth ( (I use low sodium))
1 cup milk
salt and pepper to taste

Steps:

  • To make the homemade cream of chicken soup, melt butter in a large sauce pan. Sprinkle flour into the pan and stir until mixture comes together. Gradually whisk in chicken broth and milk until incorporated. Bring to a boil and continue to stir until sauce thickens. Remove from heat.
  • Preheat oven to 350 degrees and lightly grease a 9x13 inch baking pan. In a large bowl combine hash brown potatoes, sour cream, garlic powder, onion powder, cheddar cheese, salt and pepper to taste, and cream of chicken soup, and mix well.
  • Spread mixture into prepared baking pan. Cover with crushed cornflakes. Drizzle melted butter over the cornflake topping.
  • Bake for 35-45 minutes until mixture is bubbly and cornflakes are golden brown on top. Allow to cool slightly before serving.

5 large potatoes, peeled and cut into eighths
1/2 cup sour cream
3 ounces cream cheese, softened
4 tablespoons butter, divided
1 teaspoon salt

Steps:

  • Cover potatoes with water in lg pot.
  • Cook until tender.
  • Drain and mash.
  • Add sour cream, cream cheese, and 3 T butter; mix well, add salt.
  • Spoon into 11x7 baking dish.
  • Melt 1 T butter; drizzle over potatoes.
  • Bake, covered, at 350* for 30 minutes.
  • Uncover and bake 10 minutes more.

This recipe came from my Nana (aka one of my best-friends) who has made it for every special occasion. It is so good but so bad but an absolute must for a comfort food recipe collection. Note: don't eat these first or you won't be able to finish your meal!

9 large white potatoes
1 (250 g) package cream cheese
1 cup sour cream
2 teaspoons onion powder
2 tablespoons butter
1 egg (beaten)
1/2 tablespoon garlic powder
paprika

Steps:

  • Peel and chop potatoes and boil in water until fork tender.
  • Drain and mash potatoes in large bowl.
  • Add cream cheese, sour cream, onion powder butter, egg, and garlic powder.
  • Beat with hand mixer until fluffy.
  • Scrape mixture into large casserole dish, and for nice appearance use back of spoon to "peak" potatoes like meringue.
  • Dot with butter and sprinkle with paprika.
  • *Mixture may be refrigerated at this point until needed, let stand at room temperature 1 hr before baking*.
  • Bake in preheated 350°F oven for 30 minutes or until peaks slightly brown.
  • Enjoy *this dish really holds its heat so be careful*.

I have made these with the frozen southern style shredded potatoes too and they turn out great.

1 cup chopped onion
1 pint sour cream
1 (10 1/2 ounce) can cream of chicken soup

chives (optional) or pimiento, chopped (optional)

Steps:

  • Thaw out hash browns for 1/2 hour. Combine all ingredients and bake at 350 degrees for 1 1/2 hoursin a greased casserole dish. The peppers, chives or pimeintos can be added for color.

Make everyone's favourite side dish, creamy mashed potatoes. This simple recipe results in fluffy, comforting mash that the whole family will love

1 kg floury potatoes (like Maris Piper), cut into chunks
50g Yeo Valley Organic salted butter, plus 1 tbsp
50g whole milk

Steps:

  • Tip the potatoes into a large pan, cover with cold water and sprinkle with a generous pinch of salt. Set the pan over a high heat and bring to the boil. Once boiling, reduce the heat to a simmer and cook for 15-20 mins until the potatoes are very tender - they should be able to be easily pierced with the tip of a knife. Drain well, then return to the pan and leave to steam-dry for 5 mins.
  • Pass the potatoes through a ricer into a large bowl for a lump-free mash (you may need to do this in batches). Alternatively, mash with a potato masher until smooth, then press through a sieve using the back of a spoon to get rid of any remaining lumps.
  • Tip the 50g Yeo Valley Organic salted butter, the milk and some seasoning into the bowl with the hot mash. Beat everything together with a wooden spoon or spatula until the butter has melted and the mixture is smooth and creamy. Add a splash more milk to loosen, if needed. Top with the remaining 1 tbsp butter and leave it to melt for a few seconds before serving.
