1 large head cauliflower, broken into small pieces & sliced thinly
1/2 cup celery leaves, chopped
1/4 cup thinly sliced green onion

Steps:

  • In a large bowl, combine the sour cream,salad dressing,caraway seeds & salt.
  • Add cauliflower,celery leaves & onions. Toss to coat.
  • Refrigerate 2-3 hours before serving.
  • Prep. time does not include chilling.

1 pound small white potatoes
2 cups small cauliflower florets (about 6 ounces)
1/2 small white onion, thinly sliced
1/3 cup white wine vinegar
1 tablespoon sugar
2 teaspoons caraway seeds
Kosher salt
6 whole black peppercorns
5 sprigs fresh dill

Steps:

  • Put the potatoes in a medium pot, cover with water and bring to a boil over medium-high heat; lower the heat and simmer until fork-tender, 15 to 20 minutes. Add the cauliflower to the pot and cook until fork-tender, 2 to 3 minutes. Drain and let rest until cool enough to handle. Peel off the potato skins (use a clean dish towel to rub off the skins) and cut into chunks. Combine the potatoes, cauliflower and onions in a medium bowl.
  • Combine 1/2 cup water, the vinegar, sugar, caraway, 1/2 teaspoon salt, the peppercorns and dill in a small pot and bring to a simmer. Strain and pour the hot vinegar mixture over the vegetables, and toss in another 1/4 teaspoon salt. Cover and refrigerate until cold, tossing occasionally, at least 2 hours (up to overnight).

1/2 pound fine noodles
Salt and freshly ground pepper to taste
1 tablespoon olive oil
1/2 teaspoon caraway seeds

Steps:

  • Drop noodles into salted boiling water to cover. Stir until water returns to a boil. Cook until noodles are tender, 7 minutes or longer. Do not overcook.
  • Drain and return noodles to the pot. Add olive oil, caraway seeds and pepper to taste. Toss well until coated. Serve immediately.

Yield Makes about 3 1/2 cups, serving 2

Number Of Ingredients 7

1/2 pound boiling potatoes
1/2 cup chopped cauliflower leaves
1/4 cup chopped white part of scallion
1/4 teaspoon caraway seeds
2 cups 1-inch cauliflower flowerets
1/3 cup thinly sliced scallion greens
freshly grated Parmesan to taste

Steps:

  • In a saucepan combine the potatoes, peeled and cut into 1/2-inch pieces, the cauliflower leaves, the white part of scallion, the caraway seeds, and 3 1/2 cups water, simmer the mixture for 15 minutes, or until the potatoes are very tender, and in a blender or food processor purée the mixture coarse. In the pan combine the purée and the flowerets, simmer the soup for 5 minutes, or until the flowerets are tender, and stir in the scallion greens and salt and pepper to taste. Serve the soup sprinkled with the Parmesan.

1-1/2 cups diced carrots
1 cup sliced celery
3/4 cup sliced green onions
1/2 cup sliced radishes
1 cup plain yogurt
2 tablespoons white vinegar
1 tablespoon sugar
1 teaspoon caraway seeds
1 teaspoon celery seed
1/2 teaspoon salt, optional
1/4 teaspoon pepper

Steps:

  • In a large bowl, toss cauliflower, carrots, celery, green onions and radishes. Combine all of the remaining ingredients; pour over vegetables and stir to coat. Cover and chill for several hours.
