Spiced caramelized pears in panela or piloncillo brown sugar syrup, these sweet pear preserves are made with ripe pears, panela or piloncillo (a type of unprocessed brown sugar), ginger, cinnamon, and cloves.

4 pears (cored and cut in quarters (or halves))
16 ounces 1lb of panela or piloncillo, in a block or grated (if it's sold grated as "raspadura")
1 cup water
1 tablespoon freshly grated ginger
2 cinnamon sticks
4 cloves
Additional spices/aromatic flavors based your preference (orange peel, vanilla, cardomon, etc)

Steps:

  • In a large pan, combine the water, panela or piloncillo (whole or grated), cinnamon sticks, ginger and cloves. Cook over low heat until the panela or piloncillo has completely dissolved.
  • Add the quartered/halves pears and bring the syrup to a boil. Cook over medium to medium high heat for 25 minutes, it should be on a medium boil the whole time. The secret to keep the pears from turning to mush is to avoid stirring them, if needed just gently move them around to rearrange them.
  • Remove from the heat and let the pears cool down.
  • Can be served warm as a topping for ice cream, crepes, pancakes, waffles, or as a simple dessert on its own with a slice of queso fresco.

3 medium pears, such as Anjou or Bartlett, quartered and cored
1/4 cup packed light-brown sugar
1 teaspoon pure vanilla extract
Salt
Vanilla ice cream, for serving

Steps:

  • In a large skillet, melt butter over medium-high. Add pears, one cut side down, and cook until browned, then reduce heat to medium and cook 3 minutes. Turn pears to other cut side and cook 4 minutes. Add sugar and 1 tablespoon water, swirling pan to combine. Turn pears skin side down and cook until sauce is thickened slightly, 2 minutes. Stir in vanilla and pinch of salt. Serve warm with ice cream.

1 tablespoon lemon juice
2 tablespoons unsalted butter

This is very good autumn recipe; really surprising in taste. You may replace honey with sugar, because I have heard from a friend of mine that honey is not recommended to be heated (something with intestines). Anyway, I am submitting the original recipe.

40 g butter
4 tablespoons honey
1/4 teaspoon cardamom (grounded)
1/2 teaspoon cinnamon (grounded)
1 vanilla (or 10 g bourbon vanilla flavored sugar package)
2 large pears
250 g mascarpone
10 g sugar (with vanilla flavor)
30 g almonds (or non salted pistachio)

Steps:

  • First mix mascarpone and sugar 2 ours before serving so sugar san join with mascarpone. Put it in cold place.
  • Roughly ground almonds and dry fry them until brownish.
  • Take a 24cm large heavy pan (preferably Teflon) and add honey, butter cardamom, cinnamon and inside "flesh" from vanilla (or package of bourbon vanilla sugar) and let it melt and join.
  • Peal the pears, cut in half and remove seeds.
  • Sauté the pears 8-10 minutes, turning them from time to time.
  • When ready, put some mascarpone on a plate, put half a pear on it, cover with caramelized spiced honey and cover with roughly grounded fried almonds (or pistachio).

  • Halve pears lengthwise; remove cores. (A melon baller removes cores easily, but a small spoon works, too.) Place sugar on a plate.
  • Heat a large skillet over medium. Press cut side of each halved pear in sugar. Pressing the cut sides of pears in sugar before cooking helps them caramelize. Place cut side down in skillet (fit will be snug). Cook until beginning to brown, 7 to 8 minutes.
  • Add 1/2 cup water. Cover; simmer until pears are tender, 5 to 10 minutes (depending on ripeness), adding more water if sugar begins to burn.
  • If liquid in pan is thin, simmer until thickened to a saucelike consistency; if it is thick, add more water. Serve sauce over pears.

There's extra flavor richness in this pear butter that is contributed by the spices and some caramelized sugar. Enjoy!

15 bartlett pears
2 cups water
6 cups sugar
1 teaspoon ground cloves
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground ginger
2 tablespoons lemon juice

Steps:

  • Wash the pears but do not peel or core them; slice pears into a heavy saucepan (at least 5-quart size).
  • Add water, cover, and cook until tender (about 30 minutes).
  • Remove from heat and press the pears through a colander or a food mill.
  • Measure the pear pulp (you should have about 8 cups) and return to the pan.
  • Using a frying pan, heat 1 1/2 cups of the sugar, stirring until it melts and caramelizes to a medium brown color.
  • Pour immediately into the pear pulp (the syrup will sizzle and harden, but dissolve again as the preserves cook).
  • Add the remaining sugar, cloves, cinnamon, and ginger.
  • Cook uncovered, until thick (about 45 minutes).
  • Stir frequently as it begins to thicken to prevent it from sticking.
  • Stir in lemon juice just before removing it from heat.
  • Pour hot mixture into steralized 1/2 pint jars, put on lid, and crew band tightly.
  • Process in boiling water bath for 15 minutes.

6 slightly under-ripe pears
2 tablespoons butter
1/2 cup flowery white wine, such as riesling
1/4 cup superfine sugar
black pepper
creme fraiche (recipe is in my recipes)

Steps:

  • Squeeze juice from lemon.
  • Measure and reserve 1 tblsp of juice; add remaining juice to cold water in large bowl.
  • Pare, quarter and core one pear at a time and place in acidulated water.
  • Drain pears; pat dry with paper toweling.
  • Heat butter in large skillet over medium-high heat.
  • When foam subsides, add pears; increase heat to high.
  • Saute pears until just golden on all sides, about 10 minutes.
  • Add wine.
  • Boil and cook until wine is reduced to thick glaze, about 5 minutes.
  • Sprinkle pears with sugar and reserved lemon juice.
  • Cook, stirring gently, over medium heat, until pears are lightly glazed.
  • Give a good grind (but not too much) of coarse black pepper.
  • Serve warm with a dollop of crème fraiche.

1 cup walnuts, roughly chopped
1 1/2 cups rolled oats
1 teaspoon chili powder
1/4 teaspoon kosher salt
1 tablespoon maple syrup, plus 1/2 cup
3 tablespoons olive oil
1 tablespoon unsalted butter (Grass Fed if available)
4 small pears, peeled, cored and halved through the stem
1 cup fresh cranberries (or frozen)
1/2 orange, rind of, juice and an
1 teaspoon whole allspice
2/3 cup natural yogurt
4 -5 sprigs mint

Steps:

  • Preheat oven to 400 degrees F. Line a baking sheet with parchment paper. In a small bowl stir to combine the walnuts, rolled oats, chili powder, salt, 1 tablespoon maple syrup and olive oil. Spread evenly onto prepared baking sheet and bake for 15-20 minutes turning twice for a golden crunch. Remove and allow to cool.
  • In a large oven safe sauté pan, melt butter over medium high heat. Place pears in pan, cut side down, and cook until golden and caramelized, about 5 minutes.
  • Add cranberries, 1/2 cup maple syrup, juice and zest of 1/2 orange and allspice to the pan. Transfer to the oven and bake or 30 minutes or until cooked through. Turn the pears half way through the baking time and baste with pan juices.
  • Spread yogurt onto a serving plate or platter and top with pears and cranberries. Sprinkle spiced walnut granola over the pears and drizzle with orange maple pan sauce. Garnish with mint sprigs to serve.
