PIZZA WITH CARAMELIZED ONIONS, RICOTTA AND CHARD



Pizza With Caramelized Onions, Ricotta and Chard image

This luxurious pizza is topped with tender caramelized onions spread over a creamy mixture of ricotta, Parmesan cheese and chopped Swiss chard.

Number Of Ingredients 11

2 tablespoons extra virgin olive oil
1 1/4 pounds onions, sliced
1 teaspoon chopped fresh thyme leaves
2 garlic cloves, minced
Salt
freshly ground pepper
1/2 pound chard, stemmed, leaves washed
1 14-inch pizza crust (1/2 batch pizza dough)
3/4 cup ricotta (6 ounces)
2 ounces Parmesan, grated 1/2 cup, tightly packed
1 egg yolk

Steps:

  • Thirty minutes before baking the pizza, preheat the oven to 500 degrees. Heat the olive oil over medium heat in a large, heavy skillet. Add the onions. Cook, stirring often, until tender and just beginning to color, about 10 minutes. Add the thyme, garlic and a generous pinch of salt. Turn the heat to low, cover and cook another 10 to 20 minutes, stirring often, until the onions are golden brown and very sweet and soft. Remove from the heat.
  • While the onions are cooking, stem and wash the chard leaves, and bring a medium pot of water to a boil. Fill a medium bowl with ice water. When the water comes to a boil, salt generously and add the chard. Blanch for one to two minutes, just until the leaves are tender, and transfer to the ice water. Drain and squeeze out excess water. Alternatively, steam the chard for two to three minutes until wilted, and rinse with cold water. Chop the chard medium-fine.
  • Roll out the dough, oil a 14-inch pizza pan and dust with cornmeal or semolina. Place the dough on the pan.
  • In a medium bowl, combine the ricotta, egg yolk, Parmesan and chard. Spread over the pizza dough in an even layer, leaving a 1-inch border around the rim. Spread the onions over the ricotta mixture.
  • Place in the hot oven, and bake 10 to 15 minutes until the crust and bits of the onion are nicely browned. Remove from the heat, and serve hot or warm.

This dish is good hot or at room temperature. I serve it as a side when the kids want mac and cheese for dinner. They do not eat it, but it makes me feel grown-up. It is very tasty.

1 large yellow onion, chopped
2 tablespoons olive oil
1 teaspoon brown sugar
1 bunch red Swiss chard, rinsed and chopped
¼ cup kalamata olives
2 tablespoons capers
½ teaspoon coarse sea salt, or to taste
freshly ground black pepper to taste
1 lemon, juiced

Steps:

  • In a cast iron skillet, cook onions in olive oil over medium-high heat until they begin to brown. Stir in brown sugar, and continue cooking for a few minutes.
  • When onions are brown and tender, stir in chard and olives. Cook until chard is slightly wilted. Stir in capers and salt, and continue cooking until chard is completely wilted, about 3 minutes. Season with black pepper and squeeze lemon over the top.

The warm, nutty flavor of good varieties of whole wheat pasta is robust enough to stand up to intense, complicated sauces, yet satisfying with just a little butter and Parmesan shaved over the top.

3 tablespoons butter or olive oil
5 anchovy fillets
2 garlic cloves, finely chopped
2/3 cup bread crumbs
1 tablespoon extra virgin olive oil, plus additional for drizzling
1 yellow onion, halved from stem to root and thinly sliced crosswise
Kosher salt
pepper
1 pound Swiss chard, ribs removed, leaves chopped
1/2 pound whole-wheat pasta, such as fusilli

Steps:

  • In a large skillet over medium heat, melt the butter. Add 3 anchovies to the skillet; cook until melted, about 2 minutes. Add the garlic and cook 1 minute. Stir in the bread crumbs and toast until golden, 3 to 4 minutes. Transfer to a bowl.
  • Wipe the skillet clean and return it to a medium-high heat. Add the oil, the onion and a pinch of salt. Cook, stirring occasionally, until very soft and caramelized, 15 to 20 minutes. Chop the remaining 2 anchovies and add them to the skillet. Cook until melted. Add the Swiss chard, a handful at a time, and cook until wilted, about 4 minutes. Cover and keep warm.
  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions. Drain well. Toss with the chard mixture and bread crumbs, season with salt and pepper and drizzle with oil.

1 bunch beet leaves or 1 bunch spinach, about 12-oz ., touch stems removed
1 1/2 tablespoons olive oil
1 large onions or 2 small onions, sliced 1/4-inch thick
3 garlic cloves, peeled and minced
1 tablespoon red pepper flakes
1/2 cup vegetable broth or 1/2 cup water
12 corn tortillas
1 cup mexican queso fresco (feta is a nice substitute) or 1 cup fresh cheese (feta is a nice substitute)
3/4 cup chipotle salsa

Steps:

  • Cut the chard crosswise into 1-2 inch slices. In a large skillet heat the oil over medium-heat. Add the onion and stir occasionally for about 10 minutes, until they become golden and caramelized. Add the garlic and red pepper and stir for 1 minute, until fragrant. Add the broth, greens and a pinch of salt. Cover reduce heat to low and cook until the greens are almost tender, (spinach will just take about 2 minutes, chard about 5, and heartier greens like collards, about 7-8) stirring occasionally. Remove lid and turn heat back to medium, stirring, until the mixture is nearly dry and adjust salt to taste.
  • Meanwhile, heat a flat skillet over medium-high heat and warm the tortillas for a minute or so per side. Fill the warm tortillas with veggies and top with crumbled queso and salsa.
  • **You can use your favorite salsa, or make a quick, smokey chipotle salsa. Place 1-2 tomatoes, cut in half, half side down under the broiler with a few peeled cloves of garlic until slightly charred - a few minutes. Blend, tomatoes, garlic and 2-3 chipotles in adobo sauce (you'll find these in a can) with a splash of olive oil and salt and pepper to taste.

12 ounces lasagna noodles, uncooked
4 tablespoons olive oil
1 garlic clove, minced
2 bunches red swiss chard, stemmed, coarsely chopped and blanched
1 cup ricotta cheese
salt and pepper
4 1/2 cups onions, thinly sliced
1 teaspoon sugar
1 teaspoon balsamic vinegar
3 cups low-fat milk
1/3 cup flour
1 1/4 cups parmesan cheese, grated or 1 1/4 cups asiago cheese
2 tablespoons parmesan cheese, grated or 2 tablespoons asiago cheese

Steps:

  • Cook noodles just until tender. Cover with plastic wrap and set aside.
  • In a large skillet, heat 1 tablespoon oil over medium heat.
  • Add garlic and cook, stirring often, about 30 seconds.
  • Add chard and cook, stirring often, until tender, 5 minutes.
  • Transfer to a medium bowl and stir in ricotta. Season with salt and pepper and set aside.
  • Wipe out skillet, heat remaining oil over medium heat.
  • Add onions, cook and stir, until onions begin to brown all over.
  • Sprinkle with sugar, cook and stir until deep amber in color, about 20 minutes.
  • Remove from heat and splash with vinegar.
  • In a medium saucepan, heat 2 1/2 cups milk over medium heat until steaming.
  • Put flour in a small bowl and whisk in 1/2 cup milk until smooth; whisk into hot milk and continue to whisk until until sauce simmers and thickens. Cook and stir 1 minute longer.
  • Stir in parmesan or Asiago cheese until melted and smooth. Season with salt and pepper.
  • Preheat oven to 400 degrees.
  • Lightly oil a 9x13-inch baking dish.
  • Coat bottom of dish with 1/2 cup sauce.
  • Line bottom with a single layer of noodles.
  • Spread half the chard over noodles.
  • Add another layer of noodles, arrange onions on top and season with salt and pepper.
  • Spread another 1/2 cup of sauce over all.
  • Add another layer of noodles, followed by remaining chard.
  • Finish with remaining noodles and sauce. Sprinkle with remaining Parmesan.
  • Tightly cover with foil sprayed with cooking spray.
  • Bake 30 minutes.
  • Uncover and bake 10-15 minutes, until light brown and bubbly.
  • Let stand 10 minutes before serving.

Steps:
