Recipe comes courtesy of Cooking Light magazine (March 2005 edition). This is definately a different way to stuff a potato and it is very delicious! Only adjustment I made to the recipe was the cooking process of the end potato. Recipe says to microwave the fully stuffed potato to melt the cheese, but I placed them in the oven for about 5 minutes with the other dish I was preparing and it worked just fine. If you like potatoes, definately give this one a try.

2 potatoes (medium sized)
1/2 cup shredded gruyere cheese (divided)
2 tablespoons sour cream
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/2 teaspoons butter
2 cups red onions (sliced thin)
2 teaspoons sugar
2 tablespoons sherry wine
1 teaspoon Worcestershire sauce
1/2 teaspoon thyme (dried)
1 garlic clove (minced)

Steps:

  • Pierce potatoes with a fork; arroange on paper towels in microwave.
  • Microwave on High for 10 minutes or until done.
  • Cut each potato in half lengthwise; scoop out pulp, leaving a 1/4 inch thick shell.
  • Combine potato pulp, 1/4 cup cheese, sour cream, salt& pepper.
  • Spoon potato mixture evenly into shells.
  • Melt butter in a nonstick skillet over medium heat.
  • Add onion and sugar; saute 8 minutes or until browned.
  • Stir in sherry, worcestershire sauce, thyme,& garlic.
  • Cook 1 minute or until liquid evaporates scraping pan to loosen browned bits.
  • Top each potato half with about 2 tablespoons onion mixture and 1 tablespoon of cheese.
  • Microwave on high 1 minute or until thoroughly heated.
  • (Note: can also warm potatoes in oven for a few minutes if you're already using your oven.).

2 sweet potatoes
1 tablespoon olive oil
2 red bell peppers, thinly sliced
1 sweet onion, thinly sliced
¼ cup fat-free sour cream
salt and pepper to taste

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Scrub and dry the sweet potatoes, then prick several times with a fork and place onto a baking sheet. Bake in the preheated oven until the sweet potatoes are easily pierced with a fork, 50 minutes to 1 hour.
  • Heat the oil in a large skillet over medium heat. Stir in the onion and bell pepper; cook and stir until the onion has softened and turned translucent, about 5 minutes. Reduce heat to medium-low, and continue cooking and stirring until the onion is very tender and dark brown, 20 to 30 minutes more.
  • Split open the baked sweet potatoes and top with the onion mixture, salt, pepper, and a dollop of sour cream.

1-1/2 cups mashed sweet potatoes
1-1/2 cups (6 ounces) crumbled Gorgonzola cheese

1 cup turkey gravy, warmed

Steps:

  • In a large skillet, saute onions in butter until softened. Add garlic powder and salt. A great side to roasts and BBQ's, especially in a buffet line or at a dinner party. They can be made a day ahead and heated in the oven before serving. Any unused mashed potatoes can be put in a casserole and refrigerated up to 10 days. Simply reheat in the oven when needed. The recipe is intentionally vague about ingredient quantities other than the mashed potato stuffing. Make as many or as few onions as you need. You can make large, dinner-sized onions or tiny appetizer onions. Prep time and yield will vary accordingly.

6 ounces cream cheese
1 cup sour cream

  • Clean onions; with knife, cut a 1/16th" deep X in the bottom of the onions; parboil onions 10 minutes in salted water.

1 large sweet onion (Walla Walla, Bermuda, Spanish) thinly sliced
1/8 teaspoon salt
2 pouches (4.7 oz each) Betty Crocker™ Country style Yukon gold mashed potatoes
3 cups milk
3 cups water
6 tablespoons butter
1/3 cup Gorgonzola cheese, finely crumbled
1 tablespoon chopped fresh thyme leaves
Additional fresh thyme leaves, if desired for garnish

Steps:

  • Heat oven to 375°F. Place foil baking cup in each of 9 regular-size muffin cups.
  • In 12-inch nonstick skillet, melt 1 tablespoon butter over medium-high heat. Stir in onion slices to coat with butter. Cook uncovered 10 minutes, stirring every 3 to 4 minutes. Reduce heat to medium-low. Sprinkle with salt. Cook 10 to 15 minutes longer, stirring every 5 minutes, until onions are golden brown. Remove from skillet; cool slightly. Chop onions.
  • Meanwhile, in 4-quart saucepan, heat water, milk and butter to boiling; remove from heat. Stir in potatoes until well blended, then whip with fork until smooth. Let stand about 1 minute or until liquid is absorbed. Stir in cheese and chopped thyme.

  • Melt 1/4 cup butter in large skillet over medium heat.

  • In large saucepan bring potatoes and chicken broth to a boil and cook 20 minutes or until tender.
  • Drain potatoes well.
  • Add remaining 1/2 cup butter to potatoes and mash until smooth.
  • Whisk together whipping cream and next 7 ingredients.
  • Add to potatoes mixing well.
  • Spoon half of potato mixture into lightly greased 9x13 baking dish.
  • Spoon caramelized onions evenly over potatoes.
  • Spoon remaining potatoes evenly over onions.

3 tablespoons butter (can use more)
2 tablespoons olive oil
1 tablespoon minced fresh garlic (or to taste)
6 medium onions (about 6 cups, thinly sliced)
1/4 cup dry sherry
2 teaspoons finely chopped tarragon (can use more)
seasoning salt (or use white salt)
pepper
6 large yukon gold potatoes (peeled and thinly sliced) or 6 large russet potatoes (peeled and thinly sliced)
2 -3 cups chicken broth

Steps:

  • Set oven to 350 degrees.
  • Butter an 8-cup baking dish (or larger).
  • In a large skillet melt the butter with oil over medium heat add in sliced onions; saute stirring often until a rich golden brown (about 18-20 minutes).
  • Add in the garlic the last 5 minutes of cooking.
  • Add in the sherry and tarragon; cook until the liquid is absorbed season with salt and pepper, remove from heat and set aside.
  • Arrange a layer of sliced potatoes in the bottom of the baking dish, season with salt and pepper.
  • Top with 1/3 of the caramalized onion mixture.
  • Arrange another layer of potatoes over the onions, season with salt and pepper.
  • Repeat the layers until all of the potatoes and onions are used up (finishing the top with potatoes).
  • Bring the chicken stock to a simmer and pour slowly over the potatoes.
  • Cover the mixture directly but lightly with parchment paper, then cover the dish with foil.
  • Bake for about 40 minutes.
  • Uncover the dish and bake about 20 minutes more or until the potatoes are tender.
  • Cool for 10 minutes before serving.
