This recipe is from Colette Peters, in a wonderful book called Cakes To Dream On. This is one of the many recipes I tested when making my daughter's first birthday cake. Fabulous filling, couldn't ask for any better. I made one batch using almond extract, and one using 1/2 vanilla and 1/2 orange extract.

12 ounces semisweet chocolate (chips or chopped blocks, I used 60% bittersweet)
1 cup heavy cream
2 teaspoons flavoring (optional) or 2 teaspoons liqueur (optional)

Steps:

  • Put the chocolate in a large bowl.
  • In a small saucepan, heat the cream just until it starts to bubble.
  • Pour the cream over the chocolate; make sure all the chocolate is covered by the cream (push some pieces down if you need to).
  • Cover the bowl and let it sit there, undisturbed, for 10 minutes, until the chocolate has melted.
  • Whisk the mixture until the chocolate is dark and shiny, then cool to room temperature, or stick it in the fridge until ready to use.
  • If you refrigerate the filling before you put it on the cake, it will get very hard, and you'll need to pop it in the microwave for a few seconds to loosen it up.
  • You can, of course, pour it over the top of cake while it's still warm for a beautiful, smooth, shiny ganache topping.

1/3 cup cream
14 ounces white chocolate, chopped
1 tablespoon butter
8 ounces dark chocolate, chopped
1 1/2 cups coconut, toasted and finely ground

Steps:

  • Put the white chocolate in a large bowl.
  • Add the heavy cream to a heavy-bottomed saucepan and warm it over very low heat. Put the white chocolate into a bowl and pour in the hot cream. Whisk until all of the chocolate has melted. Add the butter and whisk until the mixture is smooth. Refrigerate the ganache for 1 to 2 hours, just enough to be able to form it into balls.
  • Use a tablespoon or small scoop to measure even amounts of ganache into small balls. Put the balls on a parchment or silicone mat lined sheet tray. Refrigerate for 1 hour to firm up before the next step.
  • Melt the dark chocolate in a double boiler (or a microwave). Dip each ball in the melted chocolate (2 forks make it easier to fish out dipped chocolate balls). Put the coconut into a medium bowl and add the ganache balls. Toss to cover them in the coconut, then put them on a wire rack over a parchment lined tray to dry. Allow the truffles to set for about 10 minutes before devouring.

1/2 pound good bittersweet chocolate such as Lindt
1/2 pound good semisweet chocolate such as Ghiradelli
1 cup heavy cream
2 tablespoons Grand Marnier, optional
1 tablespoon prepared coffee
1/2 teaspoon good vanilla extract
Confectioners' sugar
Cocoa powder

Steps:

  • Chop the chocolates finely with a sharp knife. Place them in a heat-proof mixing bowl.
  • Heat the cream in a small saucepan until it just boils. Turn off the heat and allow the cream to sit for 20 seconds. Pour the cream through a fine-meshed sieve into the bowl with chocolate. With a wire whisk, slowly stir the cream and chocolates together until the chocolate is completely melted. Whisk in the Grand Marnier, if using, coffee, and vanilla. Set aside at room temperature for 1 hour.
  • With 2 teaspoons, spoon round balls of the chocolate mixture onto a baking sheet lined with parchment paper. Refrigerate for 30 minutes, until firm. Roll each dollop of chocolate in your hands to roughly make a round ball. Roll in confectioners' sugar, cocoa powder, or both. These will keep refrigerated for weeks, but serve at room temperature.

Here is a frosting I mostly use since ages, it is creamy, foamy, not too sweet, contains no icing sugar . There is a lot of beating involved, and once you have reached the foamy texture you have to work quickly before it gets too firm to handle . Frosting pipes perfect rosettes, truffles , frosting macaroons, fairy cakes, and if sandwiching and frosting a larger cake just double the recipe.

200 g dark bitter chocolate, chopped into small pieces
1 1/2 cups fresh cream
80 g butter
100 g sugar
1/4 cup water, very cold (or 1/4 cup rum or whiskey)

Steps:

  • In a medium size saucepan cook together the cream, butter and sugar over medium -low heat, and just about bring to the boil.
  • Remove from heat and stir in the chopped chocolate pieces, untill all is melted and creamy.
  • Transfer the chocolate cream into a deep glass bowl and let cool.
  • With electric beaters on high speed start beating the choc-cream before it gets too cool, beating five minutes.
  • Gradually adding (only when choc-cream is very cool ) a tablespoonfull at a time of very cold water or whisky or rum.
  • Beat till the choc-cream is getting foamy and light in color, then quickly use before it gets too firm.
  • Sieve a little cocoa powder over the frosting to give a velvety finish.

Easy chocolate truffles image

Chocolate truffles, beautifully wrapped in boxes, will put a smile on anyone's face - and they're so easy to make

300g good-quality dark chocolate, 70% cocoa solids
300ml double cream
50g unsalted butter

Steps:

  • Chop the chocolate and tip into a large bowl. Put the cream and butter into a saucepan and heat gently until the butter melts and the cream reaches simmering point. Remove from heat, then pour over the chocolate. Stir the chocolate and cream together until you have a smooth mixture. Add any flavourings to the truffle mix at this stage (divide the mixture between bowls and mix in liqueurs or other flavourings, a tsp at a time, to taste. Try bourbon, Grand Marnier, coconut rum or the zest and juice of an orange), or leave plain. Cool and chill for at least 4 hrs.
  • To shape the truffles, dip a melon baller in hot water and scoop up balls of the mixture, then drop the truffles onto greaseproof paper. Or lightly coat your hands in flavourless oil (such as sunflower) and roll the truffles between your palms. You could also use a piping bag to pipe rounds onto baking parchment.
  • Coat your truffles immediately after shaping. Tip toppings into a bowl and gently roll the truffles until evenly coated, then chill on baking parchment. Try: crushed, shelled pistachio nuts; lightly toasted desiccated coconut; or roll a truffle flavoured with orange zest and juice in cocoa powder. To coat in chocolate, line a baking tray with baking parchment. Melt 100g milk, dark or white chocolate for 10 truffles. Allow chocolate to cool slightly. With a fork, pick up one truffle at a time and hold over the bowl of melted chocolate. Spoon the chocolate over the truffle until well-coated. Place on the baking tray, then chill.
  • To give as presents, place 8-10 truffles in individual foil or paper cases inside small, lined boxes tied with ribbon. Keep in the fridge until you're ready to give them. Will keep in an airtight container in the fridge for three days, or frozen for up to a month. Defrost in the fridge overnight.

Steps:

  • In a large saucepan, cook milk, butter and chocolate over low heat until melted. Remove from the heat; let stand for 10 minutes., Preheat oven to 325°. In a large bowl, beat eggs and vanilla; stir in chocolate mixture until smooth. Combine flour, sugar, baking soda and salt; gradually add to chocolate mixture and mix well (batter will be thin). , Transfer to three greased and floured 9-in. round baking pans. Bake until a toothpick inserted in center comes out clean, 25-30 minutes. Cool 10 minutes before removing from pans to wire racks to cool completely., For filling, in a small saucepan, melt butter and chocolate. Stir in confectioners' sugar and heavy whipping cream until smooth., For ganache, place chocolate in a small bowl. In a small saucepan, bring cream just to a boil. Pour over chocolate; whisk until smooth. Cool, stirring occasionally, until ganache reaches a spreading consistency., Place one cake layer on a serving plate; spread with half of the filling. Repeat layers. Top with remaining cake layer. Spread ganache over top and sides of cake. Store in the refrigerator.

Butter, for pan
1 pound bittersweet chocolate
1 cup heavy cream
Tempered Chocolate for Truffles

Steps:

  • Butter an 8-inch square pan; line bottom with parchment. Chop chocolate into 1/4-inch pieces; place in a large heat-proof bowl.
  • Bring cream to a boil over medium-high heat; pour directly over chopped chocolate. Allow to sit for 10 minutes; use a rubber spatula to stir chocolate and cream until totally combined. Pour mixture into prepared pan. Cover with plastic wrap; chill until mixture is cold and set, 30 to 45 minutes.
  • Turn ganache onto a cutting board. Using a very sharp knife, trim edges to form right angles. Cut into 7 strips about 7/8 inch wide. Cut strips crosswise to form cubes. Place on a parchment-lined tray; chill for 5 minutes if soft, otherwise proceed to next step.
  • Once chocolate is tempered, use it immediately. Drop truffles into tempered chocolate one at a time; turn over to completely cover. Use a chocolate-dipping fork to lift truffle out. Tap fork; allow excess to drip back into bowl. With a second dipping fork, slide truffle onto a parchment-lined tray. Working as quickly as possible, repeat with remaining truffles (if tempered chocolate cools too much, it goes out of temper). When all truffles are dipped, you may drizzle with excess tempered chocolate.
  • Allow truffles to sit for at least an hour or overnight to fully set. Store at room temperature in a cool dry place.

2 teaspoons baking powder
2/3 cup whole milk
1/2 teaspoon double-strength vanilla
4 egg whites, room temperature
6 tablespoons butter, softened
1/2 cup granulated sugar
1/4 cup sour cream
12 round white truffles or 12 dark chocolate truffles, unwrapped
6 ounces white chocolate, for baking chopped
8 ounces cream cheese, softened
1/4 cup butter, softened (1/2 stick)
1/2 teaspoon double-strength vanilla
2 cups powdered sugar

Steps:

  • Preheat oven to 325°F (160°C). Place paper liners in wells of Muffin Pan. Whisk flour and baking powder in Small Batter Bowl. Combine milk and vanilla in small bowl. In a 2qt mixing bowl, beat egg whites on high speed of electric mixer until stiff peaks form. In 4qt mixing bowl beat butter and granulated sugar on medium-high speed until fluffy; beat in sour cream until smooth. On medium speed, add flour mixture in three additions, alternating with milk mixture in two additions, mixing until smooth. Whisk in one-third of the egg whites. Fold in remaining egg whites using whisk. Using a large scoop, divide batter evenly among liners.
  • Bake 17-20 minutes or until wooden pick inserted in centers comes out clean. Remove pan from oven to a cooling rack. Immediately snip a 1/2-inch-deep (1-cm) "x" into top of each cupcake using kitchen shears. Press one truffle into each cupcake until flush with top of cupcake. Remove cupcakes from pan. Cool 30 minutes or to room temperature. (Truffles will melt into cupcakes.).
  • Meanwhile, for frosting, place white chocolate in microwave safe bowl, uncovered, on HIGH 1-1 1/2 minutes or until chocolate is mostly melted, stirring every 30 seconds. Let stand 3 minutes or until slightly cooled. In a large mixing bowl, combine melted chocolate, cream cheese, butter and vanilla; using clean beaters, beat on medium speed until well blended. Slowly add powdered sugar; beat well.
  • Place frosting in a piping bag fitted with open star tip. Pipe frosting evenly around tops of cupcakes. Garnish cupcakes with chocolate curls.

  • Grease a baking sheet and preheat oven to 400°F.
  • In a medium saucepan, melt butter in the boiling water.
  • Add flour, cocoa, sugar and salt while stirring vigorously.
  • Cook until mixture forms a ball that won't separate.
  • Remove from heat and cool for 10 minutes. Add eggs one at a time, beating after each addition until smooth.
  • Drop about 1/4 cup batter for each puff on a greased baking sheet and space puffs about 3 inches apart.
  • Bake for 25-30 minutes.
  • Meanwhile, melt chocolate chips in top of a double boiler.
  • In a separate bowl, beat cream cheese and jam until smooth.
  • Beat in melted chocolate then stir in whipped topping.
  • When puffs have been removed from oven, allow them to cool for a few minutes, then split them in half and remove any soft dough inside.
  • Cool completely then fill with cream cheese mixture.
