Caramelized onion and spinach quiche is the perfect breakfast and will be loved by all. Packed with sweet onions, swiss cheese, and all the perfect flavors in a flaky homemade pie crust. This will be on the regular rotation from now on.

2 Cups Flour
6 Tablespoons Butter
6 Tablespoons Lard or Shortening
1 Teaspoon Salt
5 Tablespoons Ice Water + more if needed
1 Egg
1 Yellow Onion
1 1/2 Tablespoon Butter - divided
3-5 Ounces Spinach
8 Eggs
1/2 Cup Milk
1/2 Teaspoon Salt
1/4 Teaspoon Red Pepper Flakes
1/8 Teaspoon White Pepper
1 Cup Swiss Cheese - grated

Steps:

  • In a large bowl, add in flour, salt, cold butter and lard.
  • Using a pastry cutter, cut butter and lard into the flour until mixture resembles small pea size shapes.
  • Fill a large glass with water and ice. Using a tablespoon measure, spoon in 5 tablespoons of the ice water into the flour and butter mixture. Using a fork or spatula, mix well. You may need to add in more water if still floury and needed. You want the dough to just begin to come together. Do not add too much water.
  • Sprinkle flour out onto the counter and spoon out dough on top. Roll around flour so that all sides are covered and bring together into a ball shape. Split dough in half making 2 pie dough balls. This recipe makes 2 pie shells.
  • Roll out one half with a rolling pin in a circle until it is larger than your pie plate.
  • Gently pick up the crust and place into the plate plate. Make sure it get the dough to lay evenly all the way to the edges. Crimp your edges with your fingers, cutting off any excess if needed.
  • Once your pie crust is in the pie plate, place a sheet of wax paper or parchment paper over the top, larger than the actual pie plate. Place pie weights or dried beans over top of the paper and spread evenly over the bottom of the shell, making sure to get all the way to the edges, corners, and sides. Place in the oven at 350 degrees for 30 minutes. Once finished, remove and let cool until the quiche mixture is ready. Remove the pie weights once cooled down a bit.
  • In a large skillet, add in 1 tablespoon of butter and the onion, thinly sliced.
  • Turn on medium low and cook for 30 minutes, stirring often. Over the next 30 minutes, the onions will turn a caramel color. Make sure to keep an eye on them and do not turn the heat up. This can be done while the crust is blind baking.
  • With about 5 minutes left, add in the spinach and another 1/2 tablespoon of butter. Cook until the spinach has wilted then remove from the heat.
  • In a large bowl, add 8 eggs and beat with a fork until the yolks are broken.
  • Add in the milk, salt, red pepper flakes, white pepper, and shredded swiss cheese. Mix well.
  • Add in the caramelized onions and spinach. Mix until everything is evenly distributed.
  • Pour carefully into the blind-baked pie crust and place into the oven to bake at 350 for 45 minutes or until the middle is set and doesn't jiggle anymore.

2 Tbsp butter
2 medium yellow onions (thinly sliced)
6 eggs
1 tsp dried thyme (or 1/2 tsp fresh)
1 tsp salt
1/4 tsp nutmeg
1/4 tsp pepper
1 C Gruyere cheese (shredded)
1 C heavy cream (or whole milk)
arugula
sour cream (watered down with 1 tsp water)

Steps:

  • Heat a large skillet over medium heat, melt butter and add onions.
  • Heat oven to 350°F. Spray pie dish with non stick spray. Set aside.
  • Caramelize onions by stirring every few minutes. If they start burning, turn down the heat and stir more often. Keep cooking until soft and golden. About 20 minutes.
  • In a medium bowl, whisk eggs, spices, 1/2 the cheese and heavy cream.
  • Place onions in the bottom of the pie dish. Pour egg mixture on top.
  • Add remaining cheese around the outer edge of the pie dish. If you put it in the middle, it'll keep the quiche from rising in the center.
  • Bake on center rack for 30-35 minutes or until center is just set.
  • Allow to cool 5 minutes, then dish and serve. Top it off with fresh arugula and watered down sour cream (so it drizzles, rather than dollops).

3 tablespoons butter
2 tablespoons fresh thyme, chopped
3 sweet onions, sliced
3/4 cup cheddar cheese, shredded
1/4 cup milk
1/4 cup 35% cream
4 large eggs
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon nutmeg

Steps:

  • Melt butter in a large fry pan. Add thyme and onion, saute over medium heat for 15-20 minutes or until onions are golden brown.
  • Add onions to a buttered quiche pan. Cover with cheese.
  • In a mixing bowl whisk together milk, cream, egg, salt, pepper, and nutmeg.
  • Pour over onions and cheese.
  • Cook at 425 degrees for 20-25 minutes or until crust is golden brown and a knife inserted in the centre comes out clean.

2 teaspoons olive oil
1 small onion, diced
¾ cup heavy whipping cream
3 eggs
salt and ground black pepper to taste
¾ cup shredded mozzarella cheese
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8-inch baking dish.
  • Heat butter and olive oil in a skillet over medium-high heat; cook and stir onion in the heated butter-olive oil until onions soften, about 10 minutes. Transfer onion to a plate to cool.
  • Whisk cream, eggs, salt, and black pepper in a bowl; stir in mozzarella cheese, Parmesan cheese, and onion. Pour mixture into the prepared baking dish.
  • Bake in the preheated oven until eggs are set and a knife inserted in the center comes out clean, about 35 minutes.

A lovely and savory combination of flavors, this recipe appeared the day before Thanksgiving in our local newspaper, *The Bangor Daily News*. Made it several days later to serve with leftover turkey, using Swiss rather than Gruyere to save money. We were more than satisfied!

2 cups acorn squash or 2 cups butternut squash, mashed
1 small onion, diced
olive oil
1 pie crust (store-bought or home-made)
1 teaspoon rosemary
1 garlic clove, chopped
1/2 teaspoon salt
fresh ground pepper, to taste
4 eggs
milk
3/4 cup gruyere cheese or 3/4 cup swiss cheese, grated

Steps:

  • Preheat oven to 375 degrees. Heat small amount of olive oil in pan and saute diced onion until slightly translucent.
  • Fold onions into squash with rosemary, garlic, salt and pepper.
  • Crack eggs into 2-cup measuring cup. Add enough milk to make 2 cups. Whisk eggs and milk together. Add to squash mixture; blend well.
  • Place crust in pie pan and prick bottom with fork. Spread small amount of cheese on bottom of crust. Pour in squash and onion mixture. Top with rest of the cheese. Bake for 40 minutes, until quiche is set and cheese is golden and bubbling.
