CARAMELIZED ONION AND MUSHROOM SOUP

Caramelized Onion and Mushroom Soup image

Savory porcini and cremini mushrooms are accompanied by mellow diced Vidalia and yellow onions and shallot in this wintry soup. Before added to the vegetables and beef stock, orzo is toasted in a skillet, giving the pasta a nutty flavor.

Categories     Food & Cooking     Soups, Stews & Stocks     Soup Recipes

Number Of Ingredients 13

1/2 ounce dried porcini mushrooms
6 ounces orzo
1 tablespoon olive oil
1 Vidalia onion, cut into 1/2-inch dice
2 yellow onions, cut into 1/2-inch dice
1 medium shallot, cut into 1/2-inch dice
1 tablespoon finely chopped fresh thyme
3/4 pound cremini mushrooms, cleaned, stem trimmed and cut into 1/2-inch pieces
2 tablespoons Madeira wine
4 14.5-ounce cans low-sodium beef stock, skimmed of fat
1 teaspoon coarse salt
1/2 teaspoon freshly ground pepper
Chopped flat-leaf parsley, for garnish

Steps:

  • Place porcini in a bowl. Cover with 2 cups boiling water; let sit until softened, about 20 minutes. Remove from liquid. Finely chop, and set aside. Strain liquid through fine cheesecloth or a coffee filter, discarding grit; set aside.
  • Place orzo in a large skillet over medium-low heat. Toast, stirring continuously, until light golden, about 6 minutes. Remove from heat; set aside.
  • Bring a pot of water to a boil; add toasted orzo; cook until al dente, 3 to 4 minutes. Drain, and set aside.
  • Warm olive oil in a stockpot over low heat. Add Vidalia onion, yellow onion, shallot, and thyme; cook, stirring occasionally, until onions are very soft and golden brown, 45 to 50 minutes. Increase heat to medium; add cremini mushrooms; saute, stirring frequently, until mushrooms have softened and browned, about 8 minutes. Add Madeira; cook 1 minute more. Add reserved porcini, reserved strained liquid, beef stock, salt, and pepper; bring to a simmer. Add reserved pasta; continue to cook until pasta is heated through, about 2 minutes more. Serve immediately, garnished with chopped parsley.

CREAM OF CARAMELIZED ONION AND MUSHROOM SOUP

Cream of Caramelized Onion and Mushroom Soup image

This soup is very flavourful, easy, and pretty, and a steaming bowl of it, with a slice of toasted sourdough or wholegrain bread, makes for a deeply satisfying meal.

Provided by evelynathens

Categories     Low Cholesterol

Time 1h

Yield 4-6 serving(s)

Number Of Ingredients 16

1 tablespoon butter
1/2 tablespoon olive oil
1 lb sweet onion, peeled, cut in half, cut thin crosswise
1 lb portabella mushroom, cleaned, cut in slices
1 stalk celery, chopped
1 large carrot, chopped
2 garlic cloves, minced
1/2 teaspoon salt
4 cups chicken stock (a little more may be required to thin soup if too thick)
1 1/2 teaspoons dried thyme or 1 1/2 teaspoons dried herbes de provence
1 small bay leaf
1/2 cup half-and-half
4 ounces part-skim ricotta cheese
4 ounces swiss cheese, grated
salt and freshly-cracked black pepper, to taste
minced fresh parsley (to garnish)

Steps:

  • Melt 1 tablespoon butter with 1/2 tablespoon olive oil in saucepan over medium heat. Add onions and saute, stirring every few minutes, until they are caramelized, about 15-20 minutes. Add the mushrooms, celery, carrot, garlic and salt, and saute, stirring occasionally, for a further 5 minutes. Add chicken stock, thyme (or herbes de provence) and bay leaf to saucepan. Reduce temperature to a slow boil and cook, covered, for 15-20 minutes longer, or until vegetables are tender. Remove from heat. Discard bay leaf.
  • (Carefully) blend soup in batches, either in blender, or using immersion blender, until soup is mostly pureed, leaving a bit of texture in the vegetables. Return to saucepan and over a low heat, whisk in half and half, ricotta and swiss cheeses, until cheeses have entirely melted into the soup. (If soup is too thick, thin with a little more hot broth). Season to suit your taste with salt and freshly-cracked black pepper.
  • Serve in deep bowls, garnished with a sprinkle of minced, fresh parsley.

CARAMELIZED ONION AND SHIITAKE SOUP WITH GRUYERE-BLUE CHEESE

Caramelized Onion and Shiitake Soup With Gruyere-Blue Cheese image

From The Best of Cooking Light, March 2009. "Earthy shiitake mushrooms and pungent cheese toasts give this soup more heartiness than classic French onion soup. For a light main course option, pair with a simple green salad."

Time 2h15m

Yield 6 bowls, 6 serving(s)

Number Of Ingredients 14

1 tablespoon olive oil
8 cups sliced yellow onions (about 2 lbs)
5 cups sliced shiitake mushroom caps (about 10 oz whole mushrooms)
4 garlic cloves, minced
2 fresh thyme sprigs
1/2 cup dry white wine
1 (14 ounce) can reduced-sodium fat-free chicken broth
1 (14 ounce) can fat-free less-sodium beef broth
1/2 teaspoon salt

12 slices French baguettes, cut 1/2 in thick toasted
1/4 cup grated gruyere cheese
1/4 cup crumbled gorgonzola
1/2 teaspoon finely chopped fresh thyme

Steps:

  • SOUP: Heat oil in a large Dutch oven over medium heat. Add onion and sauté 15 minutes or until almost tender, stirring frequently. Reduce heat and cook 40 minutes or until onions are a deep golden brown. Stir occasionally.

CARAMELIZED ONION SOUP WITH ONIONS TO SPARE

Caramelized Onion Soup with Onions to Spare image

This recipe makes more caramelized onions than you need. Set some aside before turning the rest into soup, and use them on toast, with pasta, or in omelets.

Provided by Martha Stewart

Categories     Food & Cooking     Soups, Stews & Stocks     Soup Recipes

Time 1h45m

Number Of Ingredients 13

1/4 cup extra-virgin olive oil, plus more for serving
3 tablespoons unsalted butter
4 to 6 large yellow onions, thinly sliced (about 9 cups)
1 teaspoon sugar
Coarse salt and ground pepper
4 sprigs thyme
1 dried bay leaf
1 teaspoon all-purpose flour
1 tablespoon sherry, white wine, or brandy
4 cups beef broth
Toasted stale rustic bread
1 garlic clove, peeled
Fresh parsley

Steps:

  • In a large Dutch oven or other heavy pot, heat oil and 2 tablespoons butter over medium-high. Add onions, sugar, 2 teaspoons salt, thyme, and bay leaf. Reduce heat to medium-low and cook, stirring frequently to scrape up any browned bits, until onions are deep golden brown and have a jam-like consistency, about 1 hour. If onions begin to stick, reduce heat and stir in 1 tablespoon water.
  • Discard herbs. Reserve 1/2 cup onions (leaving 1 3/4 cups in pot). Stir in 1 tablespoon butter, flour, and sherry and cook until butter is melted, 30 seconds. Add broth, increase heat, and simmer 15 minutes. Season to taste with salt and pepper. Rub bread with garlic, then place in bowls and ladle soup on top. Drizzle with oil and sprinkle with parsley.

CARAMELIZED ONION SOUP WITH SWISS CHEESE & BASIL CROUTONS

Caramelized Onion Soup With Swiss Cheese & Basil Croutons image

This delish recipe comes from Southern Living. The original recipe said it serves 8, but I think it serves 4-6. It's just DH and I, so I cut the recipe in half and use 2 large oven-safe soup mugs. The amount is perfect for dinner plus seconds! Enjoy!

Provided by KPD123

Categories     Onions

Time 1h

Yield 4-6 serving(s)

Number Of Ingredients 14

6 medium onions, thinly sliced
4 garlic cloves, minced
1/4 cup extra virgin olive oil
1 tablespoon butter
1 teaspoon cracked black pepper
1 tablespoon fresh thyme or 1 teaspoon dried thyme
1/2 cup dry red wine
8 cups water
3 tablespoons beef bouillon granules (or to taste)
1 cup swiss cheese, shredded
2 tablespoons fresh basil or 1 teaspoon dried basil
2 tablespoons mayonnaise
1/2 teaspoon cracked black pepper (to taste)
1 sourdough baguette, sliced on the bias

Steps:

  • Sauté onions and garlic in oil and butter in a large soup pot over medium heat until soft and golden brown, about 20-25 minutes.
  • Add black pepper and thyme to onions. Cook 1 minute. Then add red wine, cook about 1 minute while stirring and scraping any bits off the bottom of the pan.
  • Add water and bouillon to pot. Bring soup to a boil. Reduce heat to low. Cover and simmer, stirring occasionally for 20 minutes. (Double check to see if it needs any salt and pepper added to taste).
  • In a bowl, combine cheese, basil, pepper and mayo. Spread over one side of each bread slice.
  • Ladle soup into oven-safe bowls. Top each soup bowl with bread, cheese side up, making sure to cover entire soup surface with a layer of bread. (My soup mugs are quite large, so I use 2-3 baguette slices per serving).
  • Broil 2-3 minutes until the cheese begins to melt and brown a bit.
