APPLE ONION JAM
I created this appetizer for my love of sweet and savory together. They are french Bagette toasts spread with an herb cheese. Then they are topped off with carmelized apples and onions. They are addictive, and truely delicious. Enjoy!

Steps:
- 1. In a hot pan add 2 tablespoons of olive oil. Add the sliced onions and apples to pan. Cook over medium high heat. Cook and stir constantly until onions are caramelized. This takes about 10-15 minutes.
- 2. Add in the brown sugar and balsamic vinegar. Stir to combine. Cook one minute. Add in the cider. Turn heat to high. Bring to a boil. stir occasionally until cider cooks off.
- 3. Add the garlic , salt, pepper and thyme to onion mixture. Stir to combine. Cook for one or two minutes while stirring. Remove from heat. Cover to keep mixture warm.
- 4. Optional Cut baguettes in to 1 inch slices. Place in oven and toast them until light brown and a bit crunchy. I use toaster oven.
- 5. Spread the top of baguettes with cream cheese. Top with the apple and onion mixture and serve immediately.

Steps:
- In a large stainless or enamel stock pot combine the apples, water and lemon juice.
- Cover and boil gently for 15 minutes, stirring 3 or 4 times to prevent sticking.
- Stir in fruit pectin.
- Bring to a full boil, stirring constantly.
- Add sugar, lemon slices and cinnamon.
- Return to a full boil and boil hard for 1 minute, stirring constantly.
- Remove from heat and ladle into clean hot jars, leaving 1/4 inch head space.
- Process in a boiling water bath for 5 minutes at altitudes up to 1000 feet.
- Adjust times for higher altitudes.

- Place cider in a large saucepan. Bring to a boil; cook until liquid is reduced to 2/3 cup, 18-20 minutes. Remove from heat; stir in butter., Peel and cut each apple into eight wedges. In a large bowl, toss apples with 1/4 cup of the reduced cider and 3 teaspoons thyme. Transfer to a foil-lined 15x10x1-in. baking pan. Bake 10 minutes., Drizzle with remaining reduced cider. Bake until tender, 12-15 minutes longer. Sprinkle with remaining thyme.

- Melt the butter in a large skillet over medium heat.
- Add the apples to the pan and sprinkle with 1 tablespoon sugar.
- Sauté the apples, stirring frequently, for 6-8 minutes, until they just start to turn tender.
- Sprinkle the apples with the remaining sugar, cinnamon, and lemon zest.
- Toss the mixture gently and cook over medium heat for an additional 2 minutes, until the sugar begins to caramelize and the apples are crisp-tender.
- Transfer the apples from the skillet to a serving bowl with a slotted spoon.
- Turn the heat to high and add the apple cider to the skillet, scraping up any browned bits.

- Heat the oven to 200C/180C fan/gas 6. Squeeze the meat from the sausages into a bowl and mix with the chutney, mustard and thyme. Unravel the pastry and roll out until one side measures 43cm. Arrange the sausagemeat down the centre of the pastry. Use the egg to brush along the bottom of the pastry. Bring the pastry around the meat, and seal the edges with a fork, then cut into eight. Brush with a little more egg and sprinkle with the poppy seeds. Transfer to a lined baking sheet and cook for 25 mins or until golden.

- Peel, core, and cut apples into 1" pieces. Toss immediately with lemon juice. Set aside.
- Stir together sugar, 1/2 cup of apple juice, and vanilla bean in large nonreactive shallow preserving pan. Place over high heat and bring to a boil. Cool, without stirring, until mixture caramelizes to a medium amber color. Add apple slices and accumulated juices, remaining apple juice, cinnamon, and thyme. (Caramel will clump together but will eventually remelt.) Continue cooking on moderately high heat, watching carefully so juices do not boil over. Turn apples over in the syrup until slices are completely glazed and translucent and there is little liquid left in pan, about 20-30 minutes. Remove vanilla bean. (Some of the apples will break apart.) Remove from heat.
- Spoon into hot sterilized jars, wipe rims clean with damp towel, and seal with new lids and metal rings. Process in hot-water bath for 5 minutes. Remove, cool, check seals, label, and store.
