TRADITIONAL APPLE NOODLE KUGEL
Sweet apple and noodle dish of east European origin. Kugels can be made in many flavors, both sweet and savory. Serve either warm or cold, as a side dish or a dessert. Like lasagna, kugel tastes better the day after it is made. Jonagold and Rome Beauty are two apple varieites ideal for this dish.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8-inch square pan.
- Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain.
- Beat cream cheese and brown sugar together in a bowl using an electric mixer until smooth and creamy; beat in cottage cheese, egg, egg whites, vanilla extract, cinnamon, and nutmeg until well combined. Fold noodles and apples into cheese mixture by hand; spread into the prepared pan.
- Bake in the preheated oven until kugel is lightly browned and firm, 45 to 50 minutes.

- Place half of the noodles and apples in a buttered baking dish.
- Sprinkle with half the brown sugar and a dash of cinnamon.
- Dot with half the butter, repeat.
- Cover and bake 30 minutes.
- Stir well before serving (or, leave uncovered toward the end of baking to give the top a nice crunchy texture).
SAUTEED APPLES AND ONIONS
This was once a pioneer favorite. Yes, it sounds weird, but it's delicious. You'll want to have something to go with this that has some protein, like a garden burger or a brown rice packet, both of which you can microwave. Apples and onions only takes about 10 minutes, a few dollars and it's delicious as a topping for rice or even by itself for a light snack.

- Preheat an oven to 350 degrees F (175 degrees C).
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the egg noodles, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 5 minutes. Drain well in a colander set in the sink.
- Place a large skillet over medium-high heat; cook the sausages until completely cooked, 5 to 7 minutes.
- Stir together the sugar and cinnamon in a small bowl.
- Pour the melted butter into the bottom of a 9x13 inch baking dish; layer half of the cooked egg noodles into the bottom of the dish; top with half of the sausage slices and half of the apple slices; sprinkle about half of the cinnamon-sugar mix over the dish. Repeat layers with remaining noodles, sausage, apples, and cinnamon-sugar. Dot with the butter pieces.
- Bake in the preheated oven until the apples are soft, 30 to 45 minutes.

This is an old recipe I saw demonstrated on TV. I made it and it's really delicious. May want to cover the edges of the pan with foil at the end of baking, so the noodles don't get crisp.

- Ingredients Required. 2 numbers of fresh apples. 2 to 3 cups of corn flour. Half coconut. Sugar to taste. Salt to taste. Food color. A teaspoon of cooking oil.
- Equipment. An Idli steamer works best for this. You can use any steamer available or use a wide mouthed vessel. Noodle press. I have used a mold with medium holes.
- Make Apple Paste. Peel apples. Cut the peeled apples in to pieces and clean the core. Place the pieces in a mixer / blender. Add a pinch of food coloring.
- Make Dough. Now add the corn flour in small quantities to the apple paste and mix well. Do not add any water as the paste has lots of apple juice.
- Temper the Dough. This step is very important, otherwise you can not press the dough in to noodles. Heat a teaspoon of any cooking oil in a pan. Add the dough and lightly temper it.
- Make Noodles and Steam-cook. Boil water in a steamer. Here I have used an Idli cooker. You can use any wide mouthed vessel with a proper lid for this.
- Remove Noodles From Steam. After about ten minutes, check to see the noodles are properly cooked. If not, steam for a few more minutes. remove from the steamer and separate the noodles from the Idli pan.
- Grate Coconut. The noodles are served with grated coconut, which will add an aroma and taste to the noodles. Grate about half a coconut using a grater.
- Garnish and Serve. Spread the grated coconut over the steamed noodles. Sprinkle sugar over the hot noodles to your taste. Serve hot. Participated in the.
