Smoked Ham, Gruyere and Caramelized Onion Frittata image

8 extra-large eggs
2 tablespoons heavy cream
1 cup grated gruyere cheese
Kosher salt and freshly ground pepper
1 tablespoon unsalted butter
1 small onion, diced
4 small red potatoes, diced
1 cup diced smoked ham or Canadian bacon
1/4 cup grated Parmigiano-Reggiano cheese, for topping
Chopped fresh chives, for topping
Sour cream, for serving

Steps:

  • Preheat the oven to 400˚. In a large bowl, whisk the eggs, heavy cream, gruyere, a big pinch of salt and a few grinds of pepper until foamy.
  • Melt the butter in a 10-inch cast-iron skillet over medium heat. Add the onion and the potatoes and cook, stirring, until the onion is translucent and the potatoes are fork-tender, about 12 minutes. Pour the egg mixture over the top. Pull the edges away from the sides of the pan with a rubber spatula so the eggs flow to the bottom of the pan. Cook until the frittata is half set, 2 to 3 minutes, then sprinkle in the ham.
  • Transfer the skillet to the oven and bake until the frittata is puffed and golden, 10 to 12 minutes. Sprinkle with the Parmigiano-Reggiano and chives and serve with sour cream.

1 tablespoon oil
3 onions, sliced
8 eggs
3/4 cup cream (or milk)
black pepper
1/2 cup cheddar cheese, grated (aged)
1 tablespoon thyme leaves

Steps:

  • Place butter and oil in a 23 cm (9 inch) non stick frypan over low heat and cook until butter has melted; add onions to pan.
  • Cook onions, stirring occasionally, for 10-15 minutes or until onions are golden brown, soft and caramelized.
  • Place eggs, cream and pepper in a bowl and whisk to combine; pour egg mixture over onions in frypan and sprinkle with cheese and thyme and cook frittata for 5-6 minutes or until it is almost set.
  • To finish cooking, place frittata under a preheated hot grill for 1 minute; cut into wedges and serve with hot buttered toast or with a spicy chutney.
  • Pumpkin Frittata - Add 1/2 cup mashed pumpkin or sweet potato when whisking eggs.
  • Blue Cheese and Potato Frittata - When onions have cooked in the pan, sprinkle 1 cup cooked cubed potato over them, pour in egg mixture and sprinkle blue cheese instead of cheddar over eggs.
  • Antipasto Frittata - After adding eggs to the pan, top them with char grilled antipasto vegetables such as capsicum (red or green pepper), eggplant (aubergine) and zucchini (courgette), sprinkle frittata with cheddar and continue with steps three and four.

1 large red onion, sliced
1 cup cooked chickpeas
6 eggs
1/2 cup cream
1/2 teaspoon salt

  • Heat oil and butter in a heavy based large frypan, add onion and saute over gentle heat for approximately 10 minutes until soft and caramelised.
  • Add chickpeas and stir to combine.
  • In a separate bowl, beat together eggs, cream, salt and pepper.
  • Pour over onion mixture in frypan.
  • Sprinkle with parmesan and thyme and cook for 5-6 minutes.
  • Transfer frittata to under a hot grill for 1-2 minutes to lightly brown the top.

  • Melt butter in large skillet over medium heat. Add onions and toss to coat with butter. Cover and slowly cook onions, stirring occasionally, for 10 minutes or until a golden Color is reached. 4 tsp rapeseed oil
2 large red onions , finely sliced
4 tsp clear honey
8 large eggs
140g goat's cheese
100g salad leaf (such as rocket, baby leaves, watercress and spinach)
250g cooked beetroot , sliced
juice ½' lemon

Steps:

  • Heat the grill to high. Put the oil and onions in a medium-to-large ovenproof non-stick frying pan and sweat on a low-medium heat with the lid on for about 10 mins, or until they begin to soften and brown a little at the edges. Reduce heat to low, add the honey, stir well, then leave to bubble for 1 min or so. Meanwhile, crack the eggs into a bowl and beat with a fork, then add some black pepper.
  • Pour the eggs into the pan and cook for 5-6 mins until almost set. Break the goat's cheese into large chunks and dot over the top. Place the frittata under the hot grill for 3 mins, then shake to check that the egg is set firm and the cheese is soft and bubbling. Pop it back under the grill for 1 min or so more if needed.
  • Mix the salad leaves and beetroot in a large bowl. Dress with the lemon juice and toss. Cut the frittata into quarters - cool then chill half for Frittata and salad (see 'goes well with'). Serve the rest warm with the salad on the side.

Onions and garlic are slowly pan-cooked until caramelised and then used as the base of a delicious frittata. Adapted from a recipe on the Simply Great Recipes website. Obviously you can use your own pesto recipe or a pesto from your favourite deli in place of the commercially available one. I left the Leggo's pesto named in the original recipe in this recipe, as that makes for a quicker version when time is limited. For the best results from this simple dish, use free range eggs.

1 tablespoon oil
6 medium onions, sliced
1 teaspoon brown sugar
4 garlic cloves, roughly chopped
8 eggs, beaten
3/4 cup milk
1/4 cup leggo's pesto sauce, Traditional Basil
3/4 cup grated tasty cheese or 1/4 cup feta and 1/2 cup grated tasty cheese
salt, to taste
fresh ground black pepper, to taste

Steps:

  • In a medium bowl beat together the eggs, milk and Leggo's Pesto - Traditional Basil.
  • Heat the oil in a large (preferably non-stick) pan, over a medium-high heat, add the onions, sprinkle with sugar, and cook for 15 minutes, stirring occasionally or until the onion slices are golden brown. Add the garlic in the last 4-5 minutes.
  • Pour the egg mixture onto the onions in the pan and cook over a medium heat for 4-5 minutes.
  • Sprinkle the egg mixture with the grated cheese (and feta, if you are using part feta) and add salt and freshly ground pepper to taste; and finish cooking the frittata under a preheated grill for 3-4 minutes or until the frittata has set.
  • Slide the frittata out of the pan onto a serving platter and serve hot or at room temperature.

2 tbsp olive oil
3 large onions (red or white), sliced
pinch of salt
2 tbsp soft brown sugar
1-2 tbsp balsamic vinegar

Steps:

  • Heat the oil in a large deep frying pan over a low heat.
  • Add the onions with a generous pinch of salt and cook slowly for 30-40 mins. Stir occasionally to prevent them from sticking or burning until they become soft and golden. If the onions start to catch, add a splash of water to the pan and mix well.
  • Add the sugar and vinegar to give them a sweet, slightly sharp chutney flavour. Keep cooking on a low heat for another 5 mins, stirring occasionally until the mix is sticky, the sugar has dissolved and the vinegar has reduced. The onions are now ready to serve, or use in a recipe.

1 cup diced baking potato
3 tablespoons water
1 lb onion, sliced
1/3 cup water
1 tablespoon chopped fresh sage
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup grated parmesan cheese, divided
2 tablespoons skim milk
6 egg whites, lightly beaten
4 eggs, lightly beaten

Steps:

  • Place potato and 3 tbs water in a small bowl. Cover with plastic wrap, vent and microwave 4 minutes or until tender, stirring once. Set aside.
  • Heat a 10" skillet over med-high heat. Coat pan with cooking spray and add onion.
  • Cover and cook 10 minutes or until lightly browned, stirring occasionally.
  • Uncover and cook 10 minutes or until golden brown, stirring frequently. While onions cook, add 1/3 cup water, 1 Tbs at a time to prevent sticking.
  • Stir in potato, sage, salt and pepper. Spoon into bowl and cool.
  • Combine 1/4 cup cheese, milk, egg whites and eggs in a bowl.
  • Add egg mixture to potato mixture and stir well.
  • Preheat broiler.
  • Pour mixture into skillet coated with cooking spray.
  • Cook over medium heat for 7 minutes or until bottom of frittata is browned and top is almost set.
  • Sprinkle remaining cheese on top and broil for 5 minutes or until cheese melts and top is set.

  • Preheat the oven. Move the rack to the middle position on the oven and preheat to 400°F. Coat a 10-12" oven-safe skillet with olive oil spray.
  • Blend the ingredients. Whisk the eggs, milk, mustard, sage, salt and pepper together in a large mixing bowl until well blended.
  • Bake the frittata. Put the pan in the oven and bake until the eggs are set, 8 to 10 minutes. To check, cut a small slit in the center of the frittata.
