CARAMEL PRETZEL BITES

I created this recipe wanting to make my own version of a pretzel log dipped in caramel, chocolate and nuts from a popular candy store. These are smothered with homemade caramel. -Michilene Klaver, Grand Rapids, Michigan

2 teaspoons butter, softened
4 cups pretzel sticks
2-1/2 cups pecan halves, toasted
2-1/4 cups packed brown sugar
1 cup butter, cubed
1 cup corn syrup
1 can (14 ounces) sweetened condensed milk
1/8 teaspoon salt
1 teaspoon vanilla extract
1 package (11-1/2 ounces) milk chocolate chips
1 tablespoon plus 1 teaspoon shortening, divided
1/3 cup white baking chips

Steps:

  • Line a 13x9-in. pan with foil; grease foil with softened butter. Spread pretzels and pecans on bottom of prepared pan., In a large heavy saucepan, combine brown sugar, cubed butter, corn syrup, milk and salt; cook and stir over medium heat until a candy thermometer reads 240°(soft-ball stage). Remove from heat. Stir in vanilla. Pour over pretzel mixture., In a microwave, melt chocolate chips and 1 tablespoon shortening; stir until smooth. Spread over caramel layer. In microwave, melt white baking chips and remaining shortening; stir until smooth. Drizzle over top. Let stand until set., Using foil, lift candy out of pan; remove foil. Using a buttered knife, cut candy into bite-sized pieces.

These salty, sweet, chewy, crunchy Caramel Pretzel Cookies are filled with crunchy corn flakes, pretzels, and chewy caramel bits.

1¾ cups light brown sugar
1 cup butter (melted)
1 egg
1 egg yolk
1 tablespoon vanilla
2 cups all-purpose flour *
½ teaspoon baking soda
½ teaspoon kosher salt
1 cup old fashioned rolled oats
1 cup pretzel sticks or twists (roughly chopped (see note))
2 cups corn flakes
1 cup caramel bits
1¾ cups brown rice flour
½ cup tapioca starch
¼ cup potato starch
1 teaspoon xanthan gum

Steps:

  • Preheat the oven to 325°F. Place the sugar in a large mixing bowl. Add the hot melted butter and stir until smooth. Add the eggs and vanilla and stir to combine. Whisk together the flour, baking soda, salt, and oats; stir the flour mixture into the wet ingredients.
  • Gradually add the pretzels, corn flakes, and caramel bits, stirring to mix everything throughout the dough. Scoop the dough into generous 2-3 tablespoon size balls and place on a parchment-lined baking sheet. Leave a couple inches between each cookie.
  • Bake for 12-14 minutes. Remove from the oven before the edges of the cookies have browned. The cookies should be puffy and cracked across the top. Cool for 1-2 minutes on the baking sheet and then remove to a wire rack. When the cookies have completely cooled, store in an airtight container. Enjoy!

1/4 cup butter, softened
1/2 cup brown sugar
1/4 cup sugar
1/4 cup caramel ice cream topping
1/2 teaspoon vanilla extract
2 teaspoons milk
1 1/4 cups flour
80 miniature pretzel twists
8 ounces milk chocolate melts or 8 ounces dark chocolate melts
8 ounces white chocolate candy melts
candy sprinkles

Steps:

  • In a mixing bowl, beat the butter and sugars until creamy. Add the caramel, vanilla, and milk and mix again. Slowly beat in the flour until a dough forms.
  • Roll the cookie dough into 40 balls. Place a ball on top of 40 pretzel twists. Top with another pretzel twist and press down gently.
  • Place the chocolate melting chocolate in a microwave safe bowl and heat 30 seconds. Stir and repeat until melted. Dip half of each pretzel bite into the chocolate. Place on a wax paper lined baking sheet to dry.
  • After the bites have set up, melt the white chocolate the same way. Dip the other side of the pretzel bites in the white chocolate. Place on the wax paper lined tray and top with sprinkles. Keep in a sealed container on the counter for a few days. Refrigerate if keeping longer.

2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter, softened
1 cup brown sugar, packed
½ cup granulated sugar
1 teaspoon vanilla extract
2 large eggs
2 cups pretzel twist, plus more for topping
1 ½ cups chocolate chips
1 ½ cups caramel candy, unwrapped

Steps:

  • Preheat the oven to 400°F (200°C).
  • In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  • In a large bowl, beat together the butter, brown sugar, granulated sugar, and vanilla extract until smooth.
  • Add the eggs, 1 at a time, beating to incorporate before adding the next.
  • Add the flour mixture a bit at a time while beating, until it forms a smooth dough.
  • Add the pretzels to a zip-top bag and crush with a rolling pin.
  • Fold in the chocolate chips and crushed pretzels until evenly combined.
  • Press a caramel flat and place in the middle of a ball of dough, about 2 tablespoons.
  • Fold the dough around the caramel, using a bit more to seal if necessary. Place on a well-greased or parchment-lined baking sheet.
  • Bake for 8-10 minutes, then remove from the oven.
  • While still warm, press a single pretzel into the top of each cookie. Serve with a cold glass of milk or on their own!

1/2 cup sugar
3 tablespoons water
1/4 cup whipping cream
2 tablespoons butter
1/2 teaspoon vanilla
1/4 teaspoon salt
1 cup Gold Medal™ all-purpose flour
1/2 cup sugar
1/2 cup cold butter or margarine, cut into pieces
1/4 teaspoon salt
2 egg yolks, beaten
1 cup coarsely chopped small pretzel twists
1 bag (12 oz) semisweet chocolate chips (2 cups)
1 can (14 oz) sweetened condensed milk (not evaporated)
1 teaspoon vanilla

Steps:

  • In 2-quart saucepan, heat 1/2 cup sugar and the water to boiling over medium heat, brushing down sides of pan with wet pastry brush until sugar is dissolved. Cook over medium heat, without stirring, 8 minutes or until mixture turns golden amber color. Meanwhile, in 1-quart saucepan, cook whipping cream and 2 tablespoons butter over medium-low heat until butter is melted. Carefully add whipping cream mixture to sugar mixture (mixture will spatter). Remove from heat; stir in 1/2 teaspoon vanilla and 1/4 teaspoon salt with whisk until smooth. Cool completely, about 1 hour.
  • Meanwhile, heat oven to 350°F. Line 9-inch square pan with foil; spray foil with cooking spray. In food processor, place flour, 1/2 cup sugar, 1/2 cup butter and 1/4 teaspoon salt. Cover; process, using quick on-and-off motions, until mixture looks like coarse meal. Add egg yolks. Cover; process, using quick on-and-off motions, just until dough comes together. Press dough in bottom of pan. Sprinkle with pretzels, pressing lightly into dough.
  • Bake 20 to 25 minutes or until light golden. Cool completely in pan on cooling rack, about 30 minutes.
  • In 2-quart saucepan, heat chocolate chips and condensed milk over low heat 5 to 8 minutes, stirring constantly, until melted and smooth. Remove from heat; stir in 1 teaspoon vanilla. Pour over cooled crust. Spoon caramel by heaping teaspoonfuls over fudge; swirl caramel through fudge with knife for marbled design. Refrigerate 2 hours or until set. Cut into 6 rows by 6 rows. Store in refrigerator.

24 pecan halves
24 mini pretzel twists
24 individually wrapped soft caramel squares
8 ounces good-quality milk chocolate, melted

Steps:

  • Preheat the oven to 325 degrees F.
  • Put the pecan halves on a baking sheet in a single layer and bake, shaking the sheet once halfway through, until lightly toasted, 5 to 6 minutes. Transfer the nuts to a plate to cool.
  • Line the baking sheet with parchment paper or a silicone baking mat. Arrange the pretzels neatly on the baking sheet, then top each pretzel with an unwrapped caramel. Bake until the caramels soften (but are definitely not melting), 4 to 5 minutes. Remove the baking sheet from the oven and gently press a pecan half onto each caramel, just enough for the caramel to fill the pretzel. Set aside to cool completely.
  • Remove the cooled pretzel/caramels from the baking sheet. Spoon 24 small dollops (1 1/2-teaspoon helpings) of the melted chocolate all over the baking sheet, then lightly drop a pretzel onto the middle of each dollop, making sure the pretzel is centered. Allow them to cool completely before serving (you can hasten this along in the fridge).

These white chocolate dipped Funfetti Cookie Dough Bites are perfect anytime, but I especially love the idea of serving a platter of these at a birthday parting instead of traditional cake and ice cream.

1/2 cup butter
1 cup sugar
1 cup flour
1/2 cup milk
1 teaspoon vanilla
1/2 cup candy sprinkles
1/2 cup white candy melting chips

Steps:

  • Cream sugar, butter and vanilla.
  • Add milk. Add flour while continuing stirring.
  • Once well blended, stir in half of the sprinkles.
  • Form into balls and place on parchment lined cookie sheet.
  • Place in freezer for at least 1 hour.
  • Melt candy chips by heating in microwave for 30 seconds then stirring and repeating until melted and smooth.
  • Using a fork, dip balls into candy and flip to cover completely. Lift with fork and gently tap on edge of the bowl allowing excess chocolate to drip off.
  • Place back on parchment paper.
  • Sprinkle with candy sprinkles.
  • Refrigerate 10 minutes until chocolate has set.
  • If you'd like, you can print this recipe to save for another time.

  • In a large bowl using a handheld or stand mixer with a paddle attachment, beat the butter, granulated sugar and brown sugar together on medium speed until light and creamy. Add the milk and vanilla extract and mix until combined. Turn the mixer off and add the flour and salt. Mix on low speed at first, then turn the mixer up to medium speed and mix until combined. The dough will be thick and crumbly, just keep mixing until it comes together. Mix in mini chocolate chips.
  • Roll the dough into balls, about 2 teaspoons of dough per sandwich. The amount of dough per sandwich may vary; it depends how thick you want each dough filling. Sandwich balls between two pretzels and place on prepared baking sheet. Freeze for 20 minutes.
  • While the pretzel bites are chilling, break up the chocolate and melt with the shortening for about 1 minute in microwave, stirring every 20 seconds. The shortening is used to thin the chocolate out. Dip the pretzel bites halfway into the melted chocolate and place bites back on baking sheet. Refrigerate the dipped bites for at least 10 minutes to allow the chocolate to set. Cover and store pretzel bites in the refrigerator for up to 5 days.
