1 cup (2 sticks) butter, plus more for greasing pan
5 ounces unsweetened chocolate
1/4 cup unsweetened cocoa powder
2 cups granulated sugar
1 tablespoon vanilla
3 large eggs
1 1/4 cups all-purpose flour
Half of a 14-ounce can dulce de leche
Powdered sugar, for sprinkling

Steps:

  • Preheat the oven to 350 degrees F. Grease an 8-by-8-inch baking pan (a square pan will result in thicker brownies).
  • In a medium-large saucepan, melt the butter with the chocolate over low heat, whisking occasionally until smooth and melted. Sprinkle in the cocoa powder and whisk to combine. Allow to cool for about 10 minutes.
  • Stir in the granulated sugar and vanilla until just combined. Stir in the eggs. Gently stir in the flour until halfway incorporated. Pour the batter (it will be very thick!) into the prepared pan.
  • Place the dulce de leche in a glass bowl. Warm it in the microwave for 30 to 45 seconds. Drop large dollops of dulce de leche on the surface of the brownie batter. Use a knife to slowly swirl it through the batter. Don't drag the knife sideways through the batter; hold it so the thin side of the knife leads the way.
  • Bake for 40 minutes, then check the brownies with a toothpick. If they are overly gooey/messy, return to the oven for 5 to 10 more minutes (just be careful not to burn the edges). Allow to cool completely (important!), then sprinkle with powdered sugar and cut into small squares.

Steps:

  • Preheat the oven to 350°F (180°C). Grease an 8x8-inch (20x20-cm) baking pan and line with parchment paper.
  • Make the brownies: in a large bowl, whisk together the melted butter, granulated sugar, and brown sugar. Add eggs and vanilla extract. Whisk until thoroughly combined. Sift in the flour, cocoa powder, and salt, and fold to incorporate. Fold in the chocolate chips.
  • Pour half of the batter into the baking pan and spread to cover the bottom. Arrange the caramel candies in a single layer over the batter. Pour the rest of the batter over the caramel candies and spread to cover.
  • Bake for 35 minutes or until center is cooked through. Remove the brownies from the oven and let cool.
  • Make the topping: combine the caramel candies and heavy cream in a medium heat-proof bowl. Microwave for 1 minute in 30-second intervals, stirring between each until the mixture is thick and velvety.
  • Pour the caramel topping over the brownies. Let set for 10 minutes. Sprinkle with sea salt.
  • Slice and serve.

3/4 cup baking cocoa
1 cup canola oil
4 large eggs, room temperature
1/4 cup 2% milk
1-1/2 cups all-purpose flour

1 cup chopped walnuts, divided
1 package (14 ounces) caramels
1 can (14 ounces) sweetened condensed milk

Steps:

  • In a large bowl, beat the sugar, cocoa, oil, eggs and milk. Combine the flour, salt and baking powder; gradually add to egg mixture until well blended. Fold in chocolate chips and 1/2 cup walnuts. , Spoon two-thirds of the batter into a greased 13x9-in. baking pan. Bake at 350° for 12 minutes., Meanwhile, in a large saucepan, heat the caramels and condensed milk over low heat until caramels are melted. Pour over baked brownie layer. ½ cup yellow popcorn kernals
3 tablespoons canola oil
1 cup brown sugar
¼ cup golden syrup
½ cup butter
1 teaspoon vanilla extract
¼ teaspoon bicarbonate of soda
3 cups butter, softened
1 ½ cups dark chocolate
6 eggs
1 tablespoon vanilla extract
5 ¼ cups caster sugar
3 ¼ cups flour, plain
1 teaspoon salt
⅓ cup brown sugar
1 tablespoon butter

Steps:

  • Line a baking tray with baking paper, set aside.
  • Heat the oil in a large saucepan on medium high heat. Put a few popcorn kernels into the oil and cover the saucepan.
  • Once the kernels pop, add the rest of the 1⁄2 cup (60 G) of popcorn kernels in an even layer.
  • Cover, remove from the heat and count 30 seconds. Return the pan to the heat. The popcorn should begin popping soon, and all at once. Once the popping starts vigorously, gently shake the pan by moving it back and forth over the burner. Try to keep the lid slightly ajar to let the steam from the popcorn release (the popcorn will be drier and crisper).
  • Once the popping slows to several seconds between pops, remove the pan from the heat, remove the lid, and dump the popcorn immediately into a wide bowl.
  • Break up ¾ of the popcorn into small bits: this will become the base of the brownie. Leave the remaining ¼ as is in a separate bowl.
  • Now, onto the caramel: In the same saucepan, place sugar, golden syrup, butter, vanilla extract and heat on low to medium heat until sugar has dissolved.
  • Increase to medium heat and cook without stirring for around 2 minutes (please note this is a reduced cooking time as it continues to cook in the oven).
  • Stir in baking soda and then add popcorn and stir furiously to coat kernels all over before the caramel starts to set.
  • Quickly press ¾ of the broken up popcorn into a lined 33 x 25 x 5.5 cm pan.
  • Spread the remaining ¼ out onto the lined baking tray and allow to cool and set.
  • Preheat the oven to 350°F.
  • Melt the butter and chocolate together in the microwave in short bursts on medium heat.
  • In a bowl beat the eggs with the sugar and vanilla.
  • Sift the flour into another bowl and add the salt.
  • Let the chocolate mixture cool a bit before beating in the egg and sugar mixture and then the flour.
  • Pour this over the popcorn base and bake for 30-40 minutes. (When it's ready the top should be dried to a pale brown but the middle is still dark and gooey).
  • Once the brownies are cool, slice into even squares. Top each square with a few pieces of the remaining caramel popcorn.
  • Put the brown sugar and butter in a small pan and heat on medium for 5 minutes, then drizzle over the top of each brownie.
  • Serve and enjoy!

½ cup vegetable oil
1 cup sugar
1 tsp vanilla
2 large eggs
¼ tsp baking powder
cup cocoa powder
¼ tsp salt
½ cup flour

Steps:

  • Preheat oven to 350° F. In a bowl, mix oil and sugar until well combined. Add eggs and vanilla, stir until blended.
  • Mix dry ingredients in a separate bowl. Stir dry ingredients into the oil/sugar mixture.
  • Pour into greased 9x9 square pan and top with G.H. Cretors Just the Caramel Corn Popcorn. Bake for 20 minutes. Cool completely before cutting.

1 -2 gallon prepared popcorn
2 cups brown sugar
1 cup butter
1/2 cup corn syrup or 1/2 cup maple syrup
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla
1 cup peanuts (Optional)

Steps:

  • Preheat oven to 250.
  • Prepare popcorn and set aside.
  • In a sauce pan bring to a boil brown sugar, butter and syrup.
  • Boil at a slow boil for 5 minutes without stirring.
  • Remove and add baking soda, salt, vanilla and peanuts.
  • Pour over popcorn and toss.
  • Lay out on greased cookie sheets and bake for 1 hour stirring every 20 minutes.
  • Store in Large Zip Lock Bags.

24 cups popped corn (1 cup unpopped)
1 cup butter or 1 cup margarine
2 cups brown sugar
1/2 cup corn syrup
1 teaspoon salt
1/2 teaspoon baking soda
1 1/2 teaspoons vanilla
1 1/2 cups whole peanuts (or use both) or 1 1/2 cups unsalted walnut halves (or use both)

Steps:

  • Set oven to 250 degrees F.
  • Put the popped corn in a large bowl.
  • Melt the margarine (or butter) stir in brown sugar, corn syrup and salt; bring to a boil, stirring constantly.
  • Then boil for 5 minutes WITHOUT stirring (this is important DO NOT stir for 5 minutes!).
  • Remove from heat and stir in baking soda and vanilla.
  • Add in the nuts and stir to combine.
  • Pour the mixture over popped corn in bowl; mix well with a wooden spoon to combine.
  • Transfer to a large greased roasting pan, and bake for 1 hour, stirring every 10-15 minutes.
  • Remove from oven then cool.
  • Break into pieces.
  • Store in a tightly covered tin box.
  • Delicious!

1 1/4 cups (packed) dark brown sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
1/2 teaspoon kosher salt
2 cups all-purpose flour
3/4 cup chopped roasted salted peanuts, divided
3 heaping cups caramel corn with peanuts (such as Cracker Jack)

Steps:

  • Preheat oven to 350°F. Butter a 9x13" baking pan and line with parchment paper, leaving a 1" overhang on both long sides.
  • Whisk brown sugar and 1 cup butter in a large bowl until smooth. Add eggs, one at a time, whisking between additions, until smooth. Whisk in vanilla and salt. Add flour and stir to combine. Gently fold in 1/2 cup peanuts.
  • Scrape batter into prepared pan and smooth top, pushing batter to edges. Sprinkle evenly with caramel corn and remaining 1/4 cup peanuts and press down gently.
