1 Cup Pecans or nuts of choice (roughly chopped or halved)
1/4 Cup Butter
3 Tbsp. Erythritol-Based Brown Keto Sweetener (brown lakanto and brown swerve both work well)
2 Tbsp Keto Maple Syrup
1 1/2 tsp. Molasses
1/2 Cup Heavy Cream
1/8 tsp. Xanthan Gum
1 tsp. Melted Butter Or Oil
2 tsp. Pure Vanilla
1/8 tsp. Sea Salt
1 Tbsp. Filtered Water
3/4 Cup Keto Chocolate Chips
1 Tbsp. Coconut Oil
1/2 Cup Cocoa Powder
1/2 Cup Coconut Oil (melted)
Keto Sweetener
1 tsp. Pure Vanilla

Steps:

  • In a medium-sized saucepan, melt the butter over medium heat until melted.
  • Turn heat down to a low simmer and simmer 5 minutes, or until a deep golden brown. Stir occasionally and be careful not to let it burn!
  • Stir in the sweetener, maple-flavored syrup, and molasses. Return to a low simmer. Then, simmer for 8-10 minutes, stirring occasionally. Again, be careful not to let it burn! *Note-If using the timer, you may need to exit out of the ad at the bottom of the page to see it.
  • In a small bowl, mix together the xanthan gum and 1 tsp. of melted butter or oil. Add the heavy cream and xanthan gum mixture. Stir until combined and slightly thickened.
  • Remove from heat and stir in the pure vanilla, water, sea salt, and pecans.
  • Prepare one of the chocolate coating recipes below and set aside.
  • For chocolate coating number 1: Line a baking sheet with parchment paper and drop Tablespoon-sized amounts of the caramel pecan mixture onto the parchment paper. Then, Drizzle the chocolate over the caramel pecans, roughly 1 to 2 tsp. per cluster. Place in freezer for 30 minutes to an hour, or until the caramel and chocolate are set. Store, tightly covered, in the fridge for up to 1 month or in the freezer up to 3 months.
  • For chocolate coating number 2: Line a mini muffin tin with 15 liners. Evenly divide the caramel pecan mixture between the muffin cups. Drizzle the chocolate over the caramel pecans, evenly dividing between each cup. Place in freezer for 30 minutes to an hour, or until the caramel and chocolate are set. Store, tightly covered, in the fridge for up to 1 month or in the freezer up to 3 months.

Approximately 3.5 oz. pecan halves
1/4 cup water
1/2 cup coconut sugar
1 cup coconut milk
1/4 tsp real salt
1 tsp vanilla
(For low carb there is great option for caramel sauce here)
8 oz chocolate (soy and dairy free for paleo or stevia sweetened for low carb)
2 tsp coconut oil

Steps:

  • Line two cookie sheets with a silpat (get a silpat here) or parchment paper.
  • Group the pecans in clusters of about 3-4 pieces.
  • In a medium saucepan over medium-high heat, add the water and coconut sugar and bring to a boil.
  • Reduce heat to medium, add the coconut milk and salt. Stir continuously for about 15-20 minutes or until the mixture thickens and darkens in color (very frequent stirring keeps the coconut sugar from burning).
  • Remove from the heat and stir in the vanilla extract.
  • Spoon about 1 tsp of the caramel over the pecans
  • Place the chocolate and coconut oil in the bowl of a double boiler over medium low heat.
  • Allow the chocolate and coconut oil to melt and stir until smooth
  • Spoon about 1 tsp of the chocolate mixture over the caramel.
  • Refrigerate until hardened (about 30 minutes).

3 tablespoons butter
2 tablespoons water
2 cups chopped pecans
1 pound dark chocolate, broken into small pieces

Steps:

  • Place caramels, butter, and water in a microwave-safe bowl. Microwave on high, stirring every 30 seconds, until smooth, about 3 minutes. Stir in pecans.
  • Drop caramel pecan mixture by spoonfuls onto parchment paper. Place in freezer for 15 to 20 minutes.
  • Place chocolate in a microwave-safe bowl and microwave on high, stirring every 15 seconds, until melted and smooth, 1 to 2 minutes. Dip each caramel cluster into chocolate using a fondue fork until coated; place on parchment paper to dry. Chill until firm, if necessary.

1 1/4 cups pecan halves, toasted

Steps:

  • Microwave chocolate in 8-inch glass baking dish uncovered on high power about 1 minute; stir. Microwave, stirring after 30 seconds, until melted, about 1 minute. Add pecans and stir to coat.
  • Line baking sheet with waxed paper. Using soup spoons, drop pecans in 24 mounts on waxed paper. Let stand until hardened, refrigerating if necessary. Store in airtight container in refrigerator up to 3 weeks.

6 ounces unsweetened cacao bar, chopped
2 tablespoons pure maple syrup
1/2 teaspoon pure vanilla extract
1 cup pecan halves, toasted and cooled
1/2 cup Vegan Caramel, recipe follows
1/2 cup packed pitted dates
2 tablespoons pure maple syrup
2 tablespoons coconut oil, melted
2 tablespoons almond butter
1 teaspoon pure vanilla extract
Large pinch of salt

Steps:

  • Add 2 inches of water to a medium saucepan and bring to a gentle simmer. Place the cacao in a medium heatproof bowl and set it over the saucepan (do not let the bowl touch the water). Stir occasionally until the cacao is melted and smooth. Remove the bowl from the saucepan. Stir in the maple syrup and vanilla. Set aside.
  • Meanwhile, on a silicone baking mat or parchment, create little mounds of pecans (3 or 4 per candy is perfect). Top each mound with a tablespoon or so of the vegan caramel. Pour the melted cacao over each mound, letting the pecans stick out a bit. Let the candies set at room temperature until the chocolate is fully hardened, at least 30 minutes. Serve or refrigerate for up to 2 weeks.
  • Combine all of the ingredients in a blender and blend until smooth.

  • on a greased baking sheet, arrange pecans in 6 clusters of 5 pecans, each.
  • place a caramel on each cluster.
  • bake at 300 degrees for 4-5 minutes or until caramels are melted.
  • top with a chocolate square.
  • bake 1 minute longer or until chocolate is melted.
  • spread the chocolate over caramel until smooth.
  • remove clusters from pan to cool on a wire rack.
