PULL-APART CARAMEL ROLLS
These caramel-coated pull-apart rolls are crazy easy to make, thanks to the store-bought biscuit dough and simple homemade caramel sauce. Enjoy these rolls on their own or with a big dollop of whipped cream!

- For the biscuits: Preheat the oven to 350 degrees F. Grease a 9-inch square baking dish with butter.
- Mix the granulated sugar and cinnamon together in a medium bowl. Cut the biscuits into quarters, then toss in the cinnamon-sugar until well coated. Transfer to the prepared baking dish.
- For the caramel sauce: Meanwhile, heat the cream, brown sugar, granulated sugar and butter together in a medium saucepan over medium heat. Cook, stirring occasionally with a heatproof silicone spatula, until all of the sugar has dissolved, about 4 minutes. Reserve 1/4 cup of the caramel sauce for serving.
- Pour the remaining caramel over the biscuits. Bake until golden brown and crisp at the edges, about 30 minutes.
- For the whipped cream: While biscuits are baking, whisk the cream and confectioners' sugar together in another medium bowl with an electric mixer on medium-high speed until fluffy and whipped to stiff peaks. Refrigerate until ready to serve.
- Let the biscuits cool in the pan for 5 minutes, then invert onto a serving platter. Drizzle with the reserved 1/4 cup of caramel sauce and serve warm with the whipped cream.

Steps:
- In a 8 inch round baking dish heat butter in microwave on high until melted.
- Stir in caramel topping and pecans.
- Push mixture away from center of dish and put a small glass ramekin upside down in the center.
- Combine biscuit mix and milk stirring just until blended.
- Drop batter from a teaspoon into 16 mounds on top of caramel mix.
- Combine sugar and cinnamon, sprinkle on top of biscuit batter.
- Cook in microwave on high setting for 2 minutes 25 seconds.
- Turn ½ way and cook an additional 2 minutes 25 seconds; until biscuit is not longer doughy.
- Let sit 5 minutes.
- Turn upside down on a serving plate, remove ramekin.
- Serve warm.

- Preheat oven to 350° combine sugar and cinnamon; set aside. Combine caramel topping and syrup; set aside. Sprinkle half of the pecans into a greased 10-in. fluted tube pan. Drizzle with a third of the caramel mixture. , Open the tubes of breadstick dough (do not unroll). Cut each into six slices; dip in butter, then roll in cinnamon-sugar. Place half in the pan; sprinkle with remaining pecans. Drizzle with half of the caramel mixture. Top with remaining dough. Steps:
- Place the butter, icing sugar, flour, cornflour and egg in a food processor and process until a smooth dough forms.
- Roll tablespoons of the mixture into balls and-place on lined baking trays.
- Flatten the dough slightly and place the trays in the refrigerator for 10 minutes or until firm.
- Bake the biscuits in a preheated oven, 180C until lightly golden.
- Cool on racks.
- To make the filling, combine the condensed milk, butter and golden syrup in a heatproof bowl.
- Place over a pan of boiling water and stir occasionally for 10-15 minutes until the caramel is thick.

- Combine brown sugar, butter and water in glass pie plate.
- Microwave on medium until butter is melted (30 sec.).
- Stir and add nuts to dish. (optional).
- Separate biscuits on wax paper and cut each biscuit into quarters.
- Add the biscuits to the sugar mixture.
- Stir to coat each piece.
- Push biscuits away from the center of the pie plate and then set a custard cup in the middle of the plate open end up.

- Preheat oven to 350 degrees F (175 degrees C). Spray a fluted tube pan (such as Bundt®) with cooking spray.
- Melt margarine in a saucepan over medium-low heat. Stir cream and brown sugar into melted margarine until sugar dissolves, 2 to 3 minutes. Remove saucepan from heat.
- Spread 1 can of biscuit dough into the bottom of the prepared tube pan; sprinkle with cinnamon. Layer 1 more can biscuit dough into the tube pan and sprinkle with cinnamon. Layer last can biscuit dough into tube pan. Pour margarine mixture over biscuit dough.

SALTED CARAMEL BISCUIT BARS
A healthier take on one of our favourite chocolate bars, these biscuits are packed with wholesome ingredients, and free from refined sugar and dairy

- Heat oven to 180C/160C fan/gas 4 and line a large baking tray with baking parchment.
- For the base, blitz the oats in a food processor until flour-like. Add the remaining ingredients and whizz until the mixture starts to clump together. Scrape into a bowl, then roll and cut into 18 equal-sized rectangular bars, about 9 x 2cm. Place on the prepared tray and use a small palette knife to neaten the tops and sides of each biscuit. Bake for about 10 mins until lightly golden at the edges, then leave to cool.
- Meanwhile, put all the caramel ingredients in the food processor (no need to rinse it first) and blitz until it forms smooth, shiny clumps. Using a spatula, push the mixture together, then roll into 18 even-sized balls using your hands.
- Once the biscuits are cool, squash the caramel onto them. Use your fingers to press it into shape and smooth out any bumps, especially around the edges (as they will show underneath the chocolate coating).
- Melt the chocolate in a heatproof bowl set over a pan of simmering water - make sure the water doesn't touch the bowl (otherwise, it might seize and go grainy). Carefully dip one of the caramel-coated biscuits in the chocolate, turning it gently with a small palette knife (use this to lift it out as well). Use a spoon to drizzle over more chocolate to coat it fully. Let the excess chocolate drip into the bowl, then carefully put the biscuit back on the lined tray.
- Repeat with the remaining biscuits, then chill in the fridge for at least 30 mins or until the chocolate has set. Put the biscuits in an airtight container and store in the fridge. Will keep for five days.
