FILLING:
1/3 cup finely chopped unpeeled apple
1/3 cup evaporated milk
1/3 cup sugar
1/3 cup chopped walnuts
DOUGH:
1/2 cup butter, softened
1/4 cup confectioners' sugar
1/4 cup packed brown sugar
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
TOPPING:
1 package (14 ounces) caramels
2/3 cup evaporated milk
Green toothpicks
1 cup chopped walnuts

Steps:

  • In a small saucepan, combine filling ingredients. Cook and stir over medium heat until thickened; set aside to cool. , In a large bowl, cream butter and sugars until light and fluffy. Beat in egg. Beat in vanilla. Combine flour and salt. Gradually add to creamed mixture and mix well. , Shape dough into 1-in. balls. Flatten and place 1/4 teaspoon filling in center of each. Fold dough over filling and reshape into balls. Place 1 in. apart on greased baking sheets. , Bake at 350° for 12-15 minutes or until lightly browned. Remove to wire racks to cool. , In a small saucepan over low heat, heat caramels and evaporated milk until caramels are melted; stir until smooth. Insert a toothpick into each cookie and dip into caramel until completely coated; allow excess to drip off. Dip bottoms into nuts. Place on wire racks to set.

Caramel Apple Crisp Bites bring all of the flavors of fall into one delicious dessert. The apple cinnamon filling and the graham cracker crust will warm your heart and fill your tummy.

2 cup graham cracker crumbs ((I used store bought in a can. I find these to work the best))
12 tablespoons butter (melted)
1/2 cup powdered sugar
4 cups peeled, cored and chopped apples ((we used golden delicious))
1/3 cup sugar
1/4 cup brown sugar
2 1/4 tablespoons flour
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
Caramel topping ((store bought!))

Steps:

  • Preheat oven to 350 degrees and grease mini muffin pan with non-stick butter spray
  • Melt butter
  • In a medium size bowl mix graham cracker crumbs, powdered sugar and butter with a spoon (slowly add the butter and evenly distribute)PLEASE SEE UPDATE/NOTE BELOW
  • Evenly distribute mixture to the 24 mini muffin cups. Press along the bottom and sides to make a "cup"
  • Bake for 5 minutes and let cool completely
  • Chop the apples into little pieces - I used a mini food processor. Don't puree, just finely chop
  • Mix apples, sugar, brown sugar, flour, cinnamon and nutmeg in a bowl
  • Bake in a baking dish for 15 minutes on 375 degrees, until apples are slightly softened
  • Scoop a teaspoon or so of the apple mix and place on top of the graham cracker crust cups (while still in the muffin pan) and sprinkle any extra graham cracker on top of the apples.
  • Bake for 5 minutes on 350 and let cool completely. Use a knife to loosen from pan and they should pop right out.
  • Drizzle with caramel topping

In a medium size bowl mix graham cracker crumbs, powdered sugar and butter with a spoon (slowly add the butter and evenly distribute Some people have found the crust recipe to work perfect, while some others found the 12 tablespoons of butter was way to much and the butter started to pool - you may want to start by using 1/2 C butter (1 stick vs. 1 1/2 sticks, or 12 T) Melt the butter and add slowly to the crumbs, a little bit at a time, making sure it's not too wet. You can always add more or save the leftover butter for later. You want a soft dough that sticks together slightly when you try to form a ball, not a wet dough. 5. Evenly distribute mixture to the 24 mini muffin cups. Press along the bottom and sides to make a "cup" 6. Bake for 5 minutes and let cool completely 7. 5 large Granny Smith apples - peeled, cored, and thinly sliced
½ cup white sugar
1 tablespoon all-purpose flour
½ teaspoon ground cinnamon
1 tablespoon lemon juice
¼ cup water
1 ½ cups all-purpose flour
1 cup brown sugar
1 cup quick cooking oats
1 cup butter, softened
1 (14 ounce) package individually wrapped caramels, unwrapped
1 (5 ounce) can evaporated milk

Steps:

  • Preheat oven to 350 F (175 degree C).
  • In a medium size bowl, toss apples with sugar, flour, cinnamon, lemon juice, and water; spread evenly into a 8x8 inch pan. In another bowl, mix together flour, brown sugar, oats, and butter; spoon mixture evenly over apples.
  • In a heavy sauce pan over low heat, melt the caramels with the evaporated milk. Heat , stirring frequently, until mixture has a smooth consistency. Drizzle the caramel sauce over the top of the crumble.
  • Bake in preheated oven for about 45 minutes (apple mixture will bubble and topping will be golden brown).

The caramel sauce does double duty in this warm, comforting crisp. First, it lends sweetness to the apple filling, and second, it yields a lot of leftovers to serve alongside. Use firm, tart apples like Mutsu, Jonathan or Honeycrisp, which will hold their shape during baking. Room-temperature apples work best here: If your apples are cold from the refrigerator, the caramel sauce may seize a bit. Save any extra caramel sauce in your fridge for a rainy day - that is, of course, if you haven't eaten it all.

3/4 cup/170 grams unsalted butter (1 1/2 sticks), diced
1 cup/240 milliliters heavy cream
1 teaspoon vanilla bean paste or extract
1 teaspoon kosher salt
3 pounds/1,360 grams tart, firm apples, such as Mutsu, Jonathan or Honeycrisp (about 6 medium apples)
1 tablespoon fresh lemon juice
1 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1/8 teaspoon ground cloves
Pinch of kosher salt
1 cup/130 grams all-purpose flour
1 cup/90 grams old-fashioned oats
1/3 cup/40 grams chopped pecans (optional)
1/3 cup/75 grams light brown sugar

Steps:

  • Make the caramel sauce: Add the granulated sugar and 1/4 cup water to a 3-quart saucepan and stir to combine. Add the butter and set it over medium-high heat, but do not stir. Cook, without stirring, until the butter and sugar have completely melted and started to bubble, 4 to 5 minutes.
  • After the mixture has begun to brown at the edges, use a heatproof spatula to carefully stir it occasionally until it is deep golden brown and beginning to smoke just slightly, about 4 to 5 minutes. Do not walk away from the pan during this process as the caramel will go from perfectly golden to burned in moments.
  • When the mixture is deep golden, remove the pan from the heat, and carefully whisk in the heavy cream. The mixture will expand and sputter before turning into a smooth sauce. Add the vanilla and salt. If the caramel is at all lumpy, return the pan to the stove on low heat and whisk until smooth. You should have about 2 cups. Carefully pour the caramel into a heat-safe container to cool.
  • Prepare the filling: Heat your oven to 350 degrees and set a rack in the center. Peel, core and slice the apples into 1/2-inch slices, removing any bruised bits if necessary. Combine the sliced apples, lemon juice, spices and salt in a large bowl, and stir to combine. Drizzle 1/2 cup caramel sauce over the top and stir again. Scrape the apples and all of their juices into a 9- or 10-inch oven-safe skillet.
  • Make the topping: In the same bowl, combine the flour, oats, pecans, sugar and salt. Stir until well combined, then add the butter and mash it into the dry ingredients with your fingers until crumbs form. Pour the crumb topping evenly over the apples. Bake the crisp until the topping is golden and the juices are bubbling, 40 to 50 minutes. Serve warm with more warm caramel sauce and ice cream. Store any remaining sauce in an airtight container in the refrigerator for about a week. It can be rewarmed for later use in a saucepan over low heat.

  • In a large bowl, combine the Oats, butter, brown sugar, honey, peanut butter, and Maple syrup, and blend until all ingredients are well mixed. Place butter on your fingers and press the Oat mixture into a muffin tin until all the Oat mixture has been used - about 16 - 20 muffin spaces. Place the muffin tin(in the oven at 400 degrees for about 10 minutes, or until the crusts are golden brown. Remove the muffin tin (from the oven and allow them to cool for about 20 minutes, then remove the Oat cups from the muffin tins and place on Parchment paper to continue cooling.
  • Place the Apple pie filling in a heavy sauce pan on the stove over medium heat. Add the brown sugar, cinnamon, and vanilla, and heat until thick and bubbly (about 10 - 15 minutes). Remove from heat, and fill the crisp Oat cups with the filling, and let the cups completely cool. When filled cups have completely cooled, place in the refrigerator to chill.
  • In the mixing bowl of a stand mixer, make the whipped cream: This is a stabilized whipped cream, so it won't fall or break down like other whipped cream does after a few minutes. Place the softened cream cheese, vanilla, and half of the powdered sugar, and mix just until blended. Add the rest of the powdered sugar, and mix until smooth and creamy. Scrape down the sides of the mixing bowl with a spatula, and mix on low to blend any unmixed ingredients. Add the heavy cream, and blend the ingredients together, just until mixed. Make sure all of the cream cheese mixture is blended with the cream before whipping the cream. Turn mixer on high, and whip the cream until stiff peaks form. When the cream is whipped, remove the mixing bowl from the stand, and place in the refrigerator until time to serve.
  • Before serving, top the Apple Crisp Cups with the Whipped cream, drizzle with caramel, serve, and Enjoy!
