I found this recipe while browsing thru a cookbook last night. I have had this before and it was really good.

1 1/2 lbs ground beef
2 eggs
1/4 cup ketchup
3/4 cup herb stuffing mix
1/2 ounce ranch dressing mix, mix for dips
1 (6 ounce) package fried onions

Steps:

  • In a large bowl mix ground beef, eggs, herb stuffing mix, ranch seasoning and fried onions.
  • Shape into loaf shape and place into a 9 x 5 inch pan.
  • Cover loosely with foil.
  • Bake at 350°F for 50 - 60 minutes or until meat is thoroughly cooked. If desired, brush with ketchup for the last 10 minutes of cooking, uncovered.

I have tried a lot of recipes and finally with a few additions and subtractions, this is it!

1/4 c milk
1/2 c dry bread crumbs
1/4 c chopped onion
1 tsp salt
1 tsp ground black pepper
1/2 c diced green pepper
1 1/2 lb ground beef
1/2 c ketchup
2 tsp brown sugar
1 tsp dry mustard powder

Steps:

  • 1. Preheat oven to 350. Grease 9x5 loaf pan. In a bowl lightly mix eggs, milk, bread crumbs, onion, green pepper, salt, pepper, until combined.
  • 2. Gently work in the ground beef until mixed. Press the meat into the loaf pan.
  • 3. Bake in oven until loaf is no longer pink inside and juices run clear about 50 minutes. Thermometer inserted should read 160 degrees.
  • 4. While the meatloaf is baking, mix together ketchup, brown sugar, mustard in bowl. Spread on top of meatloaf during last 15 minutes.

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix sausage and ground sirloin in a large bowl until thoroughly combined; add eggs, bread crumbs, onion, and ranch dressing; mix well. Form into a loaf and place into the center of a 9x13-inch baking dish.
  • Arrange fingerling potatoes and baby carrots around meatloaf and cover dish with foil.

2 tablespoons dried parsley
1 tablespoon plus 1 teaspoon onion powder
2 teaspoons garlic powder
1½ teaspoons dried dill weed
1 teaspoon dried chives
1 teaspoon fine sea salt
1 teaspoon fresh ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). In a large bowl place the ground beef, egg, mushrooms, Ranch seasoning and salt. Mix well to combine. Form into 6 mini loaves and place into mini meatloaf pans. Bake in the preheated oven approximately 30-35 minutes, or until internal temperature reaches 160 degrees F (70 degrees C).   • Bake until an instant-read thermometer inserted in the thickest part registers 160 degrees F, 50 to 60 minutes. Let stand for at least 10 minutes before removing from the pan. Using a serrated knife, carefully cut the loaf into 6 slices.
