An unusual but moist and tasty cake. I found this recipe online but I don't remember which site. Alternate recipe; replace cantaloupe with honeydew melon and cinnamon with ginger.

3/4 cup vegetable oil
1 3/4 cups sugar
3 eggs, room temperature
2 cups self-rising flour (or 2 cups regular flour teaspoons baking powder)
2 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon baking soda
1 cup cantaloupe, diced
1 cup apple, diced
1 cup white raisins (I omitted the raisins and it came out fine)

Steps:

  • Preheat oven to 375 degrees F. Grease a 9" x 13" baking pan.
  • Combine oil, sugar, and eggs; beat until smooth.
  • Sift together flour, cinnamon, and baking soda; add to oil mixture and stir until combined.
  • Fold in cantaloupe, apple, and raisins.
  • Spread mixture in prepared pan.
  • Bake 20 minutes.
  • Lower oven temperature to 325 degrees F; bake 10 minutes longer, until a tester inserted in the center comes out clean.

I haven't made this yet, but found the recipe on www.justfruitrecipes.com. I'm reposting it here since it seems like every time I'm ready to make it and go back to their site, their server is down.

Number Of Ingredients 4

6 lbs soft ripe cantaloupes
1 1/2 cups sugar
1 lemon, juice of
1/4 teaspoon ground nutmeg

Steps:

  • Remove the seeds of the cantaloupes and scoop out the edible portion of the pulp.
  • Dice the fruit coarsely and simmer, uncovered, in a preserving kettle until tender; or puree the pulp in a blender.
  • Measure the pulp; there should be 4 cups.
  • Return pulp to the preserving kettle and add the sugar, lemon juice, and nutmeg.
  • Cook the mixture uncovered over medium heat, stirring constantly, until the butter is thick enough to spread, about 1 1/2 hours.
  • Ladle into hot, sterilized jars and seal immediately.

I have no idea what I will use this on, but it sounds too good not to share. In my cookbook it says you can refigerate 1 week or freeze for 6 weeks. It says to place it on a chicken breast or fish fillet hot off the grill. Servings and Prep time are a guess. **Chill time not included in cook time.

1 cup coarsley chopped cantaloupe (Or papaya or peaches)
1/2 cup butter, softened
2 tablespoons lime juice
1 teaspoon lime zest

  • In a small saucepan simmer fruit unitl soft. Cool to room temperature.
  • Place all ingredients in blender or food processor until smoothe.
  • Shape butter into a roll. wrap in plastic wrap.

PROSCIUTTO, CANTALOUPE AND BUTTER SANDWICH WITH BASIL DRIZZLE

2 cups loosely packed fresh basil leaves
1 cup fresh parsley leaves
1/2 teaspoon kosher salt
1/4 teaspoon crushed red pepper flakes
1 clove garlic, crushed and peeled
Juice of 1/2 lemon (about 2 tablespoons)
1 Calabrian chile
1/2 cup extra-virgin olive oil
8 tablespoons good-quality salted butter, softened
One 16- to 18-inch baguette, split and warmed
6 ounces thinly sliced prosciutto
1/4 peeled and seeded ripe cantaloupe, very thinly sliced (a vegetable peeler works well)

Steps:

  • For the basil drizzle: Combine the basil, parsley, salt, red pepper flakes, garlic, lemon juice and chile in a mini food processor and pulse to make a chunky paste. Add the olive oil and process until smooth and bright green.
  • For the prosciutto, cantaloupe and butter sandwich: Spread the butter on both cut sides of the baguette. Drizzle the bottom piece with a tablespoon or so of the basil drizzle. Layer the prosciutto and cantaloupe on the bottom piece of the baguette, ruffling and folding the prosciutto as you go. Drizzle a tablespoon of the basil drizzle over the top. Drizzle the cut side of the top piece with 1/4 cup or so of the basil drizzle. Place the top piece of baguette on the prosciutto and cantaloupe and cut into 2 sandwiches using a serrated knife. Serve the extra basil drizzle on the side or reserve for another use.

3 cups firm ripe cantaloupe, seeded, peeled, crushed, lightly drained (about 2 large)
1/2 cup strained fresh lemon juice
5 3/4 cups sugar
1/2 teaspoon unsalted butter
2 (3 ounce) packages liquid pectin

Steps:

  • In an 8-quart pan, combine the cantaloupe, lemon juice, sugar, and butter.
  • Over med-low heat, stirring constantly, heat the mixture until the sugar is completely dissolved.
  • Increase heat to med-high and bring the mixture to a full rolling boil, stirring constantly.
  • Stir in the entire contents of both pectin pouches; return mixture to a full rolling boil, stirring constantly.
  • Boil, stirring constantly, for 1 minute.
  • Remove pan from the heat; skim off any foam.
  • To prevent jam from separating in the jars, allow the jam to cool for 5 minutes before filling the jars.
  • Gently stir the jam every minute or so to distribute the fruit.
  • Ladle the hot jam into hot jars, leaving 1/4-inch headspace.
  • Wipe jar rims and threads with a clean, damp cloth; cover with hot lids and apply screw rings.
  • Process half-pint jars in a 200°F water bath for 10 minutes; pint jars for 15 minutes.

Steps:

  • In heavy duty gallon-size plastic bag, combine melon, sugar and lemon juice.
  • Seal bag and let stand at room temperature for 5 minutes.
  • Place half of melon chunks in a food processor along with 1/4 evaporated milk and process until mixture is smooth.
  • Repeat process, adding the remaining half of melon and milk.
  • Pour mixture into 4 serving dishes.
  • Chill until time to serve.

Number Of Ingredients 6

2 medium cantaloupes, peeled, seeded and cubed
2 cups orange sections, pith and seeds removed
5 cups sugar
1/2 cup bottled lime juice
2 cinnamon sticks (3 inches)
1 tablespoon grated lime zest

Steps:

  • Process cantaloupe and orange sections in batches in a blender until pureed. Transfer to a Dutch oven., Add sugar, lime juice, cinnamon and zest. Bring to a boil. Reduce heat; simmer, uncovered, until mixture is reduced to 5 cups and reaches a thick, spreadable consistency, about 2 hours, stirring frequently. Discard cinnamon sticks., Carefully ladle hot mixture into 5 hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Submerge jars in a canner with simmering water, ensuring that they are completely covered. Bring to a boil; process for 10 minutes. Remove jars and cool.
