SOUTHERN PINTO BEANS WITH COUNTRY HAM
A simple yet delicious classic with slow cooked flavor and no fussing.

Steps:
- Add dried beans to a bowl and cover with water. Sort through the beans by letting them fall between your fingers and remove any stones or dirt. Drain the water.
- Cover the beans with clean water at least 2" over the beans. Let the beans soak overnight or for 8-12 hours.
- After 12 hours, drain the water and move the beans to a large pot. Add the ham and cover with 2-3 inches of fresh water. Bring to a very gentle simmer over medium low/low heat and simmer 2 1/2 hours stirring gently only once or twice an hour.
- Add salt (half to start), stir, wait 5 minutes and taste; adjust seasoning to your preference. Simmer an additional 30 to 45 minutes until the beans are tender throughout.

EASY CROCK POT PINTO BEANS WITH DICED HAM
Steps:
- Combine all of the listed ingredients in the slow cooker and stir to blend.
- Cover the slow cooker and cook the beans on low for 5 to 7 hours, or until the vegetables are tender.
- Stir to blend before serving.

Steps:
- Cover beans with water and soak overnight; drain.
- Place beans in a 5- or 6-quart slow cooker/Crock Pot with water and remaining ingredients.
- Cover cooker and cook on low setting for 9-10 hours, or until beans are soft and done. Stir a couple of times during cooking, if possible. Serve with cornbread, rice, a green salad or slaw.

- Rinse the pinto beans in a strainer. Place beans into a large stockpot. Cover completely with water.
- Add ham bone (or chopped ham). Add additional water, if necessary to more than cover the beans and ham.
- Bring water to a boil. Reduce heat to medium-low heat. Let beans cook for approximately 4 hours. For first half of cooking time, keep a lid on the beans, but with lid vented. After about 2 hours, remove the lid and continue cooking, uncovered for remainder of time. As water level begins to reduce, add a bit more water back into the pot so that beans remain submerged during cooking time.
