Cannellini beans, chicken thighs and spicy chorizo make for a satisfying and simple one-pot supper

1 tbsp olive oil
200g chorizo sausage, thickly sliced
1 onion , chopped
400g/14oz chicken thigh fillets, cubed
1 tomato , roughly chopped
410g can cannellini bean , drained
1 large potato , cut into small cubes
500ml hot chicken stock
4 tbsp chopped parsley

Steps:

  • Heat the oil in a large pan. Cook the chorizo, onion and chicken over a high heat for 5 mins. Add the tomato and cook for a further 2-3 mins until pulpy.
  • Stir in the beans, potato and stock. Bring to the boil, then cover and gently simmer for 20 mins until the potato is soft and the chicken cooked through. Stir through the parsley and serve. You can cool and freeze the stew for up to 2 months. To serve, defrost and heat through thoroughly.

2 tablespoons extra-virgin olive oil
2 medium fennel bulbs, outer layers removed, chopped
1 medium onion, chopped
1 1/2 teaspoons kosher salt
1/2 teaspoon red pepper flakes
One 28-ounce can diced tomatoes
One 15-ounce can cannellini beans
One 10-ounce bunch kale, center rib removed, leaves chopped into 1/2-inch pieces
1 cup low-sodium chicken broth
4 turkey or chicken Italian sausage links

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 375 degrees F. Spray a grill pan with vegetable oil cooking spray.
  • In a Dutch oven, heat the oil over medium-high heat. Add the fennel, onion, 1 teaspoon of the salt and the red pepper flakes. Cook, stirring constantly, until the vegetables are soft, about 5 minutes. Add the tomatoes (plus juices), beans, kale and broth. Bring the mixture to a boil. Cover the pan with a tight fitting lid and transfer to the oven. Cook until the vegetables are tender and the kale has wilted, 25 to 30 minutes.
  • While the stew is cooking, place a grill pan over medium-high heat or preheat a gas or charcoal grill. Add the sausages and grill, turning occasionally, until cooked through, about 20 minutes. Cool and cut into 1/2-inch-thick slices.
  • Remove the pan from the oven and add the cooked sausage slices. Season with the remaining 1/2 teaspoon of salt. Spoon the stew into bowls and serve.

1 (1/2-pound) piece baked ham (1/2 to 3/4 inch thick), cut into 1/2-inch cubes
1/4 teaspoon black pepper
1 (5-ounce) bag baby romaine or baby arugula (10 cups loosely packed)
8 (3/4-inch-thick) slices baguette

Steps:

  • Cook garlic in 1/4 cup oil in a 3 1/2- to 4 1/2-quart heavy pot over moderately high heat, stirring, until golden, 1 to 2 minutes. Coarsely cut up tomatoes in can with kitchen shears, then add (with juice) to garlic in oil. Stir in broth, beans, ham, and pepper and bring to a boil. Reduce heat and simmer, uncovered, 5 minutes. Stir in greens and cook until wilted, 3 minutes for romaine or 1 minute for arugula.
  • While stew is simmering, preheat broiler. Put bread on a baking sheet and drizzle with remaining 1/2 tablespoon oil. Broil 3 to 4 inches from heat until golden, 1 to 1 1/2 minutes.
  • Serve stew with toasts.

4 slices (each 1 inch thick) ciabatta (from a 12-ounce loaf)

3 cloves garlic, peeled, 2 thinly sliced
Kosher salt and red-pepper flakes
3 medium carrots, peeled and sliced into 1/4-inch rounds (3/4 cup)
1/2 cup dry white wine, such as Sauvignon Blanc
2 cans (each 15 ounces) cannellini beans, rinsed and drained
4 cups low-sodium vegetable broth
4 cups assorted baby greens, such as kale, spinach, and chard

Steps:

  • Heat 3 tablespoons oil in a large straight-sided skillet over medium-high. Add bread; cook, flipping once and adding sage sprigs halfway through, until toasted, 10 minutes. Transfer to a plate; lightly rub one side with whole garlic clove. Season with salt.

8 bone-in, skin-on chicken thighs (about 2 1/2 pounds)
Kosher salt and freshly ground black pepper
3 tablespoons extra-virgin olive oil
1 small onion, chopped
4 cloves garlic, finely chopped

1 tablespoon tomato paste
1/2 cup dry white wine
2 cups low-sodium chicken broth
One 15-ounce can cannellini bean, rinsed and drained

Steps:

  • Preheat the oven to 425 degrees F. Sprinkle the chicken with salt and pepper. Heat the oil in a large oven-proof skillet over medium-high heat. Add the chicken, skin side down, and cook, until browned on both sides, about 4 minutes per side. Transfer the chicken to a plate.
  • Reduce the heat to medium, add the onion, garlic and red pepper flakes and cook until the onions are soft, about 7 minutes. Add half of the kale and cook, stirring to mix the flavorings in, until it starts to wilt, about 3 minutes, then add the rest of the kale. Cook, stirring to combine, for about 3 minutes more. Add the cannellini beans and the broth and bring to a simmer. Lower the heat to the minimum, half-cover, and cook for 10 minutes.
  • Using a masher or a fork, mash about half of the cannellini beans straight into the pan. This is not an exact science; you can eye-ball it. You want the broth to thicken with the mashed beans, but still keep texture from some of them, too. If the steam coming out of the stew makes it hard to mash straight into the pan, transfer some of the stew in a large bowl or measuring cup, mash the beans, then return to the pan. Stir in the Parmigiano Reggiano, lemon juice, salt, and some black pepper. Taste and adjust the seasoning if needed.
  • For the gremolata: On a cutting board, coarsely chop the parsley. Using a Microplane, zest the lemon over the parsley, then grate the garlic. Sprinkle with the salt, and keep chopping, scraping the board from time to time to mix everything together and chop the parsley to a fine texture. Transfer to a small bowl.
  • Divide the piping hot stew between serving bowl, and generously sprinkle each portion with gremolata. Serve with crusty bread.

  • Transfer the ham hocks to a plate. Simmer the stew uncovered over moderate heat until thickened and the beans and vegetables are very tender, about 45 minutes.
  • Meanwhile, discard the skin and bones from the hocks and cut the meat into bite-size pieces. Add the meat to the stew as it simmers. Season the stew with pepper.
  • Preheat the broiler. Ladle the hot stew into 8 heatproof soup bowls and place the bowls on a large cookie sheet. Cover each bowl with a toast and spread the cheese on top. Broil 4 inches from the heat, rotating the bowls as necessary, until the cheese is lightly browned, about 3 minutes. Serve right away.
