TURKEY-MEATLOAF BURGERS
Using dark meat makes these burgers extra-juicy and flavorful.

Steps:
- Drain 1 jar relish in a sieve; discard liquid. Pulse 2/3 cup drained relish with onion and garlic in a food processor until finely chopped.
- Heat 1 tablespoon oil in a skillet over medium-high; add relish mixture. Cook, stirring, until a thick paste forms, about 7 minutes. Stir in soy sauce. Transfer to a bowl; let cool 5 minutes. Stir in turkey, Worcestershire, mustard, bread, 1 1/2 teaspoons salt, and pepper to taste. Form into 8 patties, each about 4 inches in diameter. Refrigerate, covered, at least 1 hour and up to 8 hours.
- Preheat grill to medium. Brush both sides of burgers with oil, then brush grates. Grill 5 minutes. Flip; lightly brush tops with chili sauce and grill until a thermometer inserted into centers registers 165 degrees, 5 to 6 minutes more.
- Combine chili sauce and mayonnaise. Drizzle kale with vinegar and remaining 1 teaspoon oil; season with salt and pepper. Brush split sides of rolls with butter; grill until lightly toasted. Sandwich burgers in rolls with chili-sauce mixture, remaining relish, and kale.

Steps:
- In medium skillet over medium high heat, saute onion, celery in oil/butter until soft.
- Add apple and continue cooking another 3 minutes.
- Place in a bowl and let cool.
- Add the crumbs, seasonings, parsley, mustard, egg and turkey.
- Mix and shape into 4 patties.
- In small bowl combine cranberry sauce, sour cream and chives.
- set aside.
- In large non stick skillet over medium high heat, fry the patties until done.
- top with cheese and let melt slightly.
- Meanwhile gently toast cut buns.
- On bottom bun, place some onion, lettuce leaf, patty and spoon on some sauce.
- Place top on the patty.
- Serve with your favorite crudities.

- Mix together the turkey, onion, sage, bread crumbs, cranberry sauce, and salt and pepper.
- Mix in egg white.
- Press into 4x4 inch rounds, about 3/4 inch thick.
- Chill the burgers for 30 minutes.
- Brush burgers with oil and place on grill or under preheated medium broiler.
- Cook for 10 minutes.
- Turn the burgers over and brush again with oil.
- Cook for another 12-15 minutes until cooked through.
- Fill the burger rolls with lettuce, tomato, and a burger, and top with cranberry sauce.

TURKEY MEAT LOAF BURGERS WITH CRANBERRY SAUCE & WHITE CHEDDAR

- Heat a large skillet over medium heat. Melt the butter and add the chopped onions, celery, and apple, then season with salt and pepper and cook for 3 to 4 minutes under a loose foil tent. Stir in the bread crumbs and transfer to a bowl to cool a bit. Add the meat, poultry seasoning, salt, pepper, parsley, mustard, and the egg and mix. Form 4 burgers. Wipe out the skillet and heat a liberal drizzle of EVOO in it over medium-high heat. Cook the patties for 11 to 12 minutes until cooked through. Melt the cheddar over the tops of the burgers during the last minute or two of cooking.
- While the burgers cook, toast the split English muffins under the broiler or in the toaster.
- Mix together in a small bowl the cranberry sauce, sour cream, and chives.
- Serve the burgers on English muffins with red onion, lettuce, and the cranberry sauce.

- Heat oven to 180C/160C fan/gas 4. Heat the oil in a large frying pan and cook the onion for 8-10 mins until softened. Add the garlic, Worcestershire sauce and 2 tsp tomato purée, and stir until combined. Set aside to cool.
- Put the turkey mince, egg, breadcrumbs and cooled onion mix in a large bowl and season well. Mix everything to combine, then shape into a rectangular loaf and place in a large roasting tin. Spread 2 tbsp barbecue sauce over the meatloaf and bake for 30 mins.
- Meanwhile, drain 1 can of beans only, then pour both cans into a large bowl. Add the remaining barbecue sauce and tomato purée. Season and set aside.
- When the meatloaf has had its initial cooking time, scatter the beans around the outside and bake for 15 mins more until the meatloaf is cooked through and the beans are piping hot. Scatter over the parsley and serve the meatloaf in slices.

- Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
- Combine the white bread, garlic, and boiling water in a mixing bowl; mash with a fork to combine. Add the turkey, red onion, cranberries, Brie, rosemary, ketchup, salt, and pepper; mix thoroughly with your hands. Shape the mixture into 6 patties.
- Cook under the preheated broiler until no longer pink in the center and the juices run clear, about 6 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- *NOTE: If using canned cranberry sauce, drain first.
- Preheat oven to 350 degrees.
- In large bowl combine all ingredients *except* for the cranberry sauce and sage leaves. Do not overmix.
- Lightly oil or spray a 9"x5" loaf pan. Turn the meat mixture into the prepared pan and gently pat down.
- Bake the mixture until the loaf is firm and top is lightly browned, approximately 1 hour.
- Remove pan from oven and spread the cranberry sauce on top of the meatloaf. Let stand in the pan for 5-10 minutes before serving.
- Remove meatloaf from pan and transfer to serving platter. Garnish with a few sage leaves.
APPLE-CHEDDAR TURKEY BURGERS

- In a bowl, combine turkey, scallions, parsley, poultry seasoning, salt and pepper. Form into four patties, pressing your thumb in the middle of each to prevent it from bulging.
- In a large skillet, heat the olive oil over medium-high heat. Add the patties and cook for 6 minutes on each side for medium. Top each with 3 apple slices and 2 cheese slices, tent the pan with foil and cook until the cheese melts, 1 to 2 minutes.

- Preheat the oven to 375°F (190°C). Grease a 9 x 5-inch (22 x 12 cm) loaf pan with butter and line the pan with a piece of parchment paper, leaving overhang on the 2 long sides.
- Melt the butter in a large pan over medium heat. Add the onion, celery, carrots, ½ teaspoon salt, ¼ teaspoon pepper, and ½ teaspoon ground sage. Cook for 4-5 minutes, or until the vegetables are tender. Transfer to a large bowl and let cool for 15 minutes.
- While the vegetables cool, stir together the stuffing mix and chicken stock in a medium bowl.. Let sit for 15 minutes, until the stuffing mix is soggy and has absorbed all of the liquid.
- Once the vegetables have cooled, add the soaked stuffing mix, ground turkey, remaining teaspoon salt, remaining ¼ teaspoon pepper, remaining ¾ teaspoon ground sage, and the egg. Mix until well combined. Transfer to the prepared loaf pan, pressing down to smooth the top.
- Bake the turkey and stuffing loaf for 25 minutes.
- While the meatloaf loaf bakes, make the glaze: In a medium bowl, mix together the cranberry sauce, ketchup, and mustard.
- Pour the glaze over the meatloaf, then return to the oven and bake for another 20 minutes, or until the internal temperature 165°F (75°C).
- Let cool in the pan for 10 minutes, then use the parchment to carefully lift out the meatloaf and transfer to a cutting board. Cut into 1-inch-thick slices and serve immediately.
