So big on flavor and you will want to make more for last minute on hand appetizers, gift giving or a quick make and take to a party. 4 cloves garlic, minced
1/2 c dry white wine
1/2 c white wine vinegar
1/4 c balsamic vinegar
1 1/4 c water
2 Tbsp sugar
2 Tbsp dried oregano
2 Tbsp dried parsley
2 Tbsp dried basil
1 Tbsp salt
8 c diced roma tomatoes

Steps:

  • 1. Prepare canner, jars and lids. Makes 6 half pints.
  • 2. In large sauce pan, combine vinegars, garlic, wine, water, seasonings and salt. Bring to a boil.
  • 3. Reduce heat and let simmer for 5 minutes.
  • 4. Remove jars from canner and fill with tomatoes, leaving about 1/2 inch headspace.
  • 5. Fill jars with vinegar mixture, leaving 1/2 headspace.
  • 6. Remove any air bubbles, wipe rims and affix lids.
  • 7. Process in a boiling water bath for 20 minutes.
  • 8. Remove from canner and let cool.

1 15 oz. can petite cut diced tomatoes, drained
1 c. fresh mozzarella balls (diced)
1/4 c. Kraft Red Wine Vinaigrette Dressing
1 clove garlic (peeled and minced)
1/2 t. salt
1/4 t. black pepper
1 fresh baguette (sliced)
2 T. extra virgin olive oil

Steps:

  • In a bowl, mix together the drained tomatoes, diced mozzarella, red wine vinaigrette dressing, garlic, salt and pepper.
  • Place the baguette slices on a rimmed baking sheet and broil in the oven for a couple of minutes on each side until lightly toasted. Drizzle the toasted baguette slices with the extra virgin olive oil.
  • Top the baguette slices with the bruschetta and serve.

1.5 kg tomato ((washed, cored, chopped. 9 cups / 3 lbs. Measured after prep))
5 cloves garlic ((washed, peeled and minced))
250 ml white wine ((dry. 1 cup / 8 oz))
250 ml white wine vinegar ((5% or higher (1 cup / 8 oz. 5% or higher.))
125 ml water ((1/2 cup / 4 oz))
2 tablespoons sugar ((white OR few drops liquid stevia))
2 tablespoons basil ((dried))
2 tablespoons oregano ((dried))
2 tablespoons balsamic vinegar
Pickle Crisp ((optional))

Steps:

  • Wash tomatoes. Core but leave unpeeled. Chop into 3 cm (1 inch) pieces. Set aside.
  • Combine everything from the garlic down to and including the balsamic vinegar in a large pot. Set aside.
  • Bring the pot mixture to a boil, then lower to a simmer and gently simmer for 5 minutes to heat garlic thoroughly.
  • Meanwhile, pack tomato into the heated jars you are using, leaving 2 cm (1/2 inch) headspace.
  • Now ladle the simmered sauce into heated jars, leaving 2 cm (1/2 inch) headspace.
  • [Optional] 1/4 teaspoon pickle crisp per jar
  • Debubble, adjust headspace.
  • Wipe jar rims.
  • Put lids on.
  • Process in a water bath or steam canner.
  • Process jars for 20 minutes; increase time as needed for your altitude.

4 tablespoons olive oil
5 cloves garlic, finely minced
1 pint red grape tomatoes, halved lengthwise
1 whole baguette or crusty loaf
1 pint yellow grape tomatoes, halved lengthwise
1 tablespoon balsamic vinegar
16 whole fresh basil leaves, plus more as needed, chiffonade
Salt and freshly ground black pepper
1 stick butter

Steps:

  • In a small skillet, heat the oil over medium-high heat. Add the garlic and stir, lightly frying for about a minute, removing before the garlic gets too brown (it can be golden). Pour the garlic and oil into a mixing bowl and allow to cool slightly.
  • Add the red and yellow tomatoes, balsamic and basil to the bowl. Sprinkle with salt and pepper. Toss to combine, and then taste and add more basil if needed, and more salt if needed (don't over salt, though!) Cover and refrigerate for an hour or two if you have the time.
  • Cut the baguette into diagonal slices to allow for the most surface area possible. Melt 4 tablespoons of the butter in a large skillet and grill half the bread on both sides, making sure they're nice and buttery. Cook until golden brown on both sides. Repeat with the remaining 4 tablespoons butter and the other half of the bread.
  • To serve, give the tomato mixture a final stir, and then spoon generously over the slices of bread. Serve on a big platter as a first course or appetizer.

7-8 cups chopped (cored, and peeled plum/paste tomatoes*)
5 cloves garlic (minced)
1 cup dry white wine (for alternative, see Notes section below)
1 cup cider vinegar
1/2 cup water
2 tablespoons sugar
2 tablespoons balsamic vinegar
1 tablespoon dried basil**
1 tablespoon dried oregano**

Steps:

  • Prepare tomatoes.
  • Prepare canner, lids, and jars.
  • In a large, deep, stainless pot, combine all the ingredients except the tomatoes. Bring to a full, rolling boil over high heat, stirring often.
  • Reduce heat, cover, and boil gently for 5 minutes. Keep warm on lowest heat while filling the jars.
  • Pack tomatoes into hot jars, leaving a 1/2-inch headspace. Ladle the hot vinegar mixture into jars, making sure to keep the 1/2-inch headspace. Remove air bubbles with a non-metallic spatula, adding any additional liquid needed to retain the 1/2-inch headspace. Wipe rims, attach lids and place jars in canner.
  • Bring to a boil, then process for 20 minutes. Turn off heat, remove canner lid and wait 5 minutes before removing the jars to cool on a cloth-lined counter.
  • Check seals after 24 hours, then store in a cool, dark place.

1 1/2 pounds plum tomatoes (seeds removed and chopped)
2 teaspoons garlic (minced)
1 clove garlic ( left whole)
1/2 teaspoon oregano (dried)
1 teaspoon basil (dried, or 4 teaspoons minced fresh basil leaves)
3 tablespoons olive oil
1/2 cup Parmesan cheese (freshly grated)
10 - 1/2 slices Italian bread (thickly sliced)

Steps:

  • In a colander, sprinkle the tomatoes with salt. Let drain for 30 minutes.
  • To make an uncooked topping:
  • Mix together the chopped tomatoes, minced garlic, oregano, basil and oil. Stir in the grated Parmesan cheese. Let the mixture sit for at least 30 minutes to meld the flavors.
  • Place the bread slices on a baking sheet and toast in the oven until golden.
  • Slice the end off the whole garlic clove. Rub the cut end of the garlic over the warm toasted bread.
  • Top each slice of bread with a generous portion of the tomato mixture. Serve.
  • Some people cook their oil with the herbs and garlic before adding the tomatoes. Here is the method for the cooked topping:
  • In small skillet gently cook garlic and oregano in olive oil for 3 minutes, stirring. Let cool. Stir in basil, tomatoes, parmesan cheese, salt and pepper to taste. Spread the mixture on toasted Italian bread.
  • Makes 10 slices but can be easily multiplied to serve as many as you like.

½ small red onion, finely chopped
8 medium tomatoes (about 500g), coarsely chopped and drained
2-3 garlic cloves, crushed
6-8 leaves of fresh basil, finely chopped
30ml balsamic vinegar
60-80ml extra virgin olive oil
1 loaf crusty bread

Steps:

  • In a large bowl, mix the onions, tomatoes, garlic and basil, taking care not to mash or break up the tomatoes too much. Add the balsamic vinegar and extra virgin olive oil. Add salt and pepper to taste. Mix again. Cover and chill for at least an hour. This will allow the flavours to soak and blend together.
  • Slice the baguette loaf diagonally into 12 thick slices and lightly toast them until they are light brown on both sides. Serve the mixture on the warm slices of bread. If you prefer the mixture at room temperature, remove from the fridge half an hour before serving.

1 cup dry red wine
1/2 cup red wine vinegar
1/2 cup balsamic vinegar
1/2 cup water
2 tablespoons sugar
6 tablespoons chopped fresh oregano
6 tablespoons chopped fresh basil
5 cloves garlic
9 cups chopped cored plum tomatoes
1 cup finely chopped onion

Steps:

  • Prepare boiling water canner, jars, rings and lids as described above.
  • In a large stainless steel saucepan, combine wine, vinegars, water, sugar, oregano, basil and garlic. Bring to a boil over medium-high heat and cook until sugar dissolves, around 2 to 3 minutes. Add tomatoes and onion; return to a boil and continue cooking at a boil for 5 minutes. Season to taste with salt and pepper.
  • Ladle hot tomato mixture into hot jars, leaving 1/2-inch space between the top of the food and the rim of the jar. Remove air bubbles; add more tomato mixture as needed to keep headspace at 1/2 inch. Wipe rims clean; place lids on jars and screw on rings. Place jars in canner covered by at least 1 inch of water. Bring water to a boil and process jars over high heat for 20 minutes from when the water begins to boil - remember high altitude adjustments if needed (see above). Turn off heat and let jars rest in canner for 5 minutes. Remove and place on a clean dish towel to cool. Let rest undisturbed for 24 hours.
  • When ready to serve, drain off some of the liquid (otherwise I found it to be a bit too runny) and serve over brie or goat cheese on toasted baguette slices.

I went through a major bruschetta phase and tried many many recipes until I found the perfect one. This was originally Guy Fieri's but is slightly adapted to my taste after making it about a billion times. Cookingt time is marinating time.

1 baguette, cut in half length-wise and toasted
2 teaspoons minced garlic (I use the kind in a jar)
3 tablespoons extra-virgin olive oil
1/4 cup grated parmesan cheese
2 1/2 cups minced roma tomatoes (cut so fine its almost a paste)
1/3 cup thinly sliced fresh basil leaf
2 tablespoons balsamic vinegar
1/2 teaspoon salt
1 teaspoon fresh ground pepper

Steps:

  • In a medium mixing bowl, add the tomatoes, garlic, basil, vinegar, olive oil, cheese, salt and pepper.
  • Mix thoroughly and let sit for at least 15 minutes at room temperature to let the flavors marinate.
  • Slice the bread into individual pieces and spoon the mixture on top.
