Steps:
- 1. Prepare canner, jars and lids. Makes 6 half pints.
- 2. In large sauce pan, combine vinegars, garlic, wine, water, seasonings and salt. Bring to a boil.
- 3. Reduce heat and let simmer for 5 minutes.
- 4. Remove jars from canner and fill with tomatoes, leaving about 1/2 inch headspace.
- 5. Fill jars with vinegar mixture, leaving 1/2 headspace.
- 6. Remove any air bubbles, wipe rims and affix lids.
- 7. Process in a boiling water bath for 20 minutes.
- 8. Remove from canner and let cool.
CANNED TOMATO BRUSCHETTA

- In a bowl, mix together the drained tomatoes, diced mozzarella, red wine vinaigrette dressing, garlic, salt and pepper.
- Place the baguette slices on a rimmed baking sheet and broil in the oven for a couple of minutes on each side until lightly toasted. Drizzle the toasted baguette slices with the extra virgin olive oil.
- Top the baguette slices with the bruschetta and serve.

- Wash tomatoes. Core but leave unpeeled. Chop into 3 cm (1 inch) pieces. Set aside.
- Combine everything from the garlic down to and including the balsamic vinegar in a large pot. Set aside.
- Bring the pot mixture to a boil, then lower to a simmer and gently simmer for 5 minutes to heat garlic thoroughly.
- Meanwhile, pack tomato into the heated jars you are using, leaving 2 cm (1/2 inch) headspace.
- Now ladle the simmered sauce into heated jars, leaving 2 cm (1/2 inch) headspace.
- [Optional] 1/4 teaspoon pickle crisp per jar
- Debubble, adjust headspace.
- Wipe jar rims.
- Put lids on.
- Process in a water bath or steam canner.
- Process jars for 20 minutes; increase time as needed for your altitude.

- In a small skillet, heat the oil over medium-high heat. Add the garlic and stir, lightly frying for about a minute, removing before the garlic gets too brown (it can be golden). Pour the garlic and oil into a mixing bowl and allow to cool slightly.
- Add the red and yellow tomatoes, balsamic and basil to the bowl. Sprinkle with salt and pepper. Toss to combine, and then taste and add more basil if needed, and more salt if needed (don't over salt, though!) Cover and refrigerate for an hour or two if you have the time.
- Cut the baguette into diagonal slices to allow for the most surface area possible. Melt 4 tablespoons of the butter in a large skillet and grill half the bread on both sides, making sure they're nice and buttery. Cook until golden brown on both sides. Repeat with the remaining 4 tablespoons butter and the other half of the bread.
- To serve, give the tomato mixture a final stir, and then spoon generously over the slices of bread. Serve on a big platter as a first course or appetizer.

- Prepare tomatoes.
- Prepare canner, lids, and jars.
- In a large, deep, stainless pot, combine all the ingredients except the tomatoes. Bring to a full, rolling boil over high heat, stirring often.
- Reduce heat, cover, and boil gently for 5 minutes. Keep warm on lowest heat while filling the jars.
- Pack tomatoes into hot jars, leaving a 1/2-inch headspace. Ladle the hot vinegar mixture into jars, making sure to keep the 1/2-inch headspace. Remove air bubbles with a non-metallic spatula, adding any additional liquid needed to retain the 1/2-inch headspace. Wipe rims, attach lids and place jars in canner.

- Check seals after 24 hours, then store in a cool, dark place.

- In a colander, sprinkle the tomatoes with salt. Let drain for 30 minutes.
- To make an uncooked topping:
- Mix together the chopped tomatoes, minced garlic, oregano, basil and oil. Stir in the grated Parmesan cheese. Let the mixture sit for at least 30 minutes to meld the flavors.
- Place the bread slices on a baking sheet and toast in the oven until golden.
- Slice the end off the whole garlic clove. Rub the cut end of the garlic over the warm toasted bread.

- Prepare boiling water canner, jars, rings and lids as described above.
- In a large stainless steel saucepan, combine wine, vinegars, water, sugar, oregano, basil and garlic. Bring to a boil over medium-high heat and cook until sugar dissolves, around 2 to 3 minutes. Add tomatoes and onion; return to a boil and continue cooking at a boil for 5 minutes. Season to taste with salt and pepper.
- Ladle hot tomato mixture into hot jars, leaving 1/2-inch space between the top of the food and the rim of the jar. Remove air bubbles; add more tomato mixture as needed to keep headspace at 1/2 inch. Wipe rims clean; place lids on jars and screw on rings. Place jars in canner covered by at least 1 inch of water. Bring water to a boil and process jars over high heat for 20 minutes from when the water begins to boil - remember high altitude adjustments if needed (see above). Turn off heat and let jars rest in canner for 5 minutes. Remove and place on a clean dish towel to cool. Let rest undisturbed for 24 hours.
- When ready to serve, drain off some of the liquid (otherwise I found it to be a bit too runny) and serve over brie or goat cheese on toasted baguette slices.
