SWEET AND SPICY CANDIED BACON (MILLIONAIRE'S BACON)
Steps:
- Preheat oven to 350 degrees.
- Place a wire rack on a foil lined baking sheet. Arrange the bacon on the wire rack and sprinkle with the cayenne pepper, crushed red pepper and black pepper. Lightly pat the brown sugar on top of the bacon to create a thin layer.
- Transfer the baking sheet to the oven and bake for 30-40 minutes or until the brown sugar has melted and the bacon is crisp. Remove from the oven and allow to cool for 10 minutes. Using tongs, transfer the bacon to a parchment lined baking sheet and allow to cool to room temperature. Store in an airtight container for up to 3 days at room temperature.

CANDIED BACON
This is a really easy breakfast item because you can put it in the oven, set the timer and forget about it while you make everything else and pull it out just before sitting down so it's piping hot.

Steps:
- Preheat the oven to 325 degrees F.
- Put bacon slices in a bowl, season them with pepper and toss with the brown sugar. Cover a baking sheet with parchment or foil and arrange the bacon in a single layer on top. Sprinkle any sugar left in the bowl over the bacon. Top with another layer of parchment or foil and top it, squarely, with another baking sheet. The baking sheet will flatten the bacon as it cooks.
- Place the tray in the center of the oven and bake for 20 minutes. Check the bacon by lifting the top tray and parchment. If it is not golden brown and fairly crispy, resist the temptation to turn up the oven temperature, and cook it for 10 to 15 minutes longer. Check it again. Keep in mind that when you remove the tray and transfer the bacon to a serving platter or individual plates, the bacon will "crisp" up a little more. Be patient!

Steps:
- Preheat oven to 400°. For this recipe, you will need to use a baking rack & baking sheet that fit together. Line the baking sheet with nonstick foil or foil sprayed with non-stick coating. Also spray the baking rack with a nonstick cooking spray. Place the strips of bacon onto the baking rack, evenly spaced in a single layer. Top each strip with about 1 tablespoon of brown sugar and a moderate sprinkling of fresh cracked pepper. Bake in the preheated oven ((on the middle rack)) for 20-25 minutes until the bacon is evenly golden brown & crisp*. Once the bacon is perfectly cooked, remove it from the oven and allow it to cool for 7-10 minutes before removing from the baking rack. This step will allow the sugar to harden, thereby crisping the bacon. Once this step is complete, the bacon is ready to be taken off the rack and served**. Cut into pieces or use whole.
