CANDIED PECAN PEAR SALAD
For special occasions, I like to dress up packaged salad greens with sweet pears, crunchy pecans and a slightly tart pomegranate dressing.-Douglas Wasdyke, Effort, Pennsylvania

Steps:
- In a small heavy skillet, melt butter. Add pecans; cook over medium heat until toasted, about 4 minutes. Sprinkle with sugar and cinnamon; cook and stir for 2-4 minutes or until sugar is melted. Spread on foil to cool., For dressing, in a blender, combine 1/2 cup pomegranate seeds, vinegar, mustard, honey, salt and pepper; cover and process until smooth. While processing, gradually add oil in a steady stream. , Cut pear into thin slices; sprinkle with lemon juice. In a salad bowl, combine the greens, pears, blue cheese and candied pecans. Drizzle with dressing and toss to coat. Sprinkle with remaining pomegranate seeds. Serve immediately.

I got this recipe off a whole foods market website. It is very light and refreshing. The recipe as written calls for organic fruits and vegetables.

- Ingredient option: You can substitute store-bought candied pecans and store bought vinegarette for a simpler prep.
- Preheat oven to 325.
- Spoon the sugar and cinnamon in a plastic bag. Mix it up and set it aside. Place the egg white in a bowl and add the pecans tossing to coat completely. Place the pecans in the plastic bag with sugar and cinnamon. Shake the bag to coat all the pecans. Spread them on a cookie sheet and bake for 20 minutes. Remove from oven and let them cool, breaking them up with a spatula.
- Meanwhile, toss the pears, apples, greens, onion slices and cheese in large serving bowl. Add the pecans when they have cooled.
- In a smaller bowl, whisk together the olive oil, vinegar, salt and pepper. Toss into the salad and serve immediately.

- In a medium bowl, whisk together the oil, seasoned red wine vinegar, and 1/4 teaspoon salt. Marinate pears and onion in the dressing 8 minutes.
- Meanwhile, have foil handy. In a small skillet, combine the sugar and 1/4 teaspoon salt; cook and stir over medium-low heat, 3 to 4 minutes, scraping sides of skillet as needed, until sugar is smooth, melted, and golden (it burns quickly, so watch it closely). Add nuts; stir to coat. Watch the color and as soon as sugar turns a rich (not dark) caramel color (several seconds later), immediately transfer the nuts to foil. Pour caramel left in pan over nuts (nuts become crunchy as they cool).
- When cool, break nuts apart; set aside. Use a slotted spoon to transfer pears and onions to a large bowl. Add lettuce and just enough dressing to lightly coat; toss gently. Add the cheese and pecans; toss gently. Season with salt and pepper to taste. Serve immediately.

- Melt butter in small frying pan over low heat.
- Add pecans and brown sugar.
- Cook 2 to 3 minutes, stirring constantly until mixture is caramelized.
- Spread out on wax paper to cool.
- In bowl toss together spinach, pecans, apple and cheese.
- Add oil and vinegar and toss again until everything is coated.
- Chef's note: To make ahead for a special dinner--toss apple with dressing. Layer on greens, cheese and pecans. Cover with plastic wrap and put in refrigerator until needed, tossing just before serving.

- Heat oven to 200C/180C fan/gas 6 and put the pecans on a non-stick baking sheet. Sprinkle over the sugar and maple syrup, and toss to combine. Roast for 5-7 mins until golden, then leave to cool completely before roughly chopping.
- Meanwhile, make the dressing by combining the ingredients and seasoning well. In a large bowl, combine the pear with the rocket, and toss with a little of the dressing.
- Just before serving, blowtorch or grill the goat's cheese rounds until golden. To serve, put the remaining dressing in a squeezy bottle and swirl around the edge of the plate. Put the pear and rocket salad in the middle, scatter over the nuts and top with the goat's cheese.

The combination of these ingredients is fantastic. The candied pecans give a nice little crunch to the salad. Add some seafood or grilled chicken and you have a full meal. To save time buy the prepackaged washed baby spinach. This recipe came from Rose Reisman's "Secrets for Permanent Weight Loss" cookbook.

- Preheat oven to 350 degrees. Spray baking sheet with vegetable spray.
- To make the candied pecans, rinse the pecans with cold water.
- Drain but do not let dry.
- In a small bowl, combine the icing sugar, cinnamon, allspice and nutmeg.
- Dip the pecans in this mixture to coat well.
- Spread them on the prepared baking sheet.
- Bake for 15 minutes.
- Cool and Chop.

- Make candied pecans.
- In a large bowl, toss together the pomegranate seeds, grapes, red onion, and the blue cheese.
- Divide torn lettuce leaves among 8 salad plates, and top each salad with the fruit mixture.
- Halve and core pears and cut into 1/2-inch slices-- put a pear half, skin side up, in the center of each salad.
- Arrange candied pecans around the pears.
- Just before serving, heat balsamic vinegar, olive oil, and brown sugar in a small saucepan over medium heat, cooking and stirring until brown sugar dissolves. Off the heat, and season to taste with salt and pepper.
