Candied Ginger Molasses Cookies {Flourless} image

Flourless chewy ginger molasses cookies are delicious gluten free holiday cookies, made with real food ingredients! Easy to make, no oils, dairy free, healthy, and delicious!

1/3 cup dark molasses
2 tbsp coconut palm sugar or brown sugar divided) - see notes for substitutes
1 cup no stir creamy almond or peanut butter
1 large egg (at room temperature works best) - see notes for vegan flax egg option.
1 tbsp arrowroot starch or tapioca starch
1 tsp baking soda
1/2 tsp ground ginger powder
1/2 tsp cinnamon
2/3 cup candied ginger chips (or chopped crystalized ginger)

Steps:

  • Preheat your oven to 350ºF (176ºC) and line a baking sheet with parchment paper. You can also use aa non-stick baking mat. See notes.
  • In a large bowl, combine your molasses and almond butter, mix together. Add your egg and coconut sugar and beat with hand mixer or stand mixer until smooth.
  • Add the arrowroot starch, spices, and baking soda, mixing until well combined.
  • Fold in your ginger chips.
  • You can either place the dough in the fridge to harden a bit or immediately Scoop out a large tablespoon of dough, roll into a ball, and then place on a cookie sheet. Continue to roll dough into balls until dough is used up, spacing 2 inches a part. The oils from the nut butter might start to drip from the dough, but that shouldn't be a problem when baking.
  • Sprinkle extra sugar on top or roll each ball in a little bit of extra sugar. .
  • Bake for 9-11 minutes on silicon mat or 8-10 minutes on regular parchment. Check at 7 minutes in case your oven cooks fast. If you want more chewy, remove cookies at 7-9 minutes.
  • Remove and let cool 10 minutes before place on cookie plate or storing. Store in ziplock bag or airtight container.

2 teaspoons ground ginger
1 teaspoon ground cinnamon

1 stick (4 ounces) unsalted butter, at room temperature
1 cup sugar, plus more for rolling
1/3 cup molasses
1 large egg

Steps:

  • Preheat the oven to 375 degrees F. Line two baking sheets with parchment paper.
  • Whisk the flour, ginger, cinnamon, baking soda, cloves and salt together in a medium bowl. Set aside.
  • Beat the butter and sugar together in a large bowl with an electric mixer on medium-high speed until well combined, about 3 minutes. Add the molasses and egg and beat until lighter in color, about 3 minutes. Add the flour mixture and mix on low until well blended.
  • Using a tablespoon, form the dough into 1-inch balls and roll in sugar. Place each ball 2 inches apart on the prepared baking sheets. Bake until golden and crackled, 12 to 15 minutes; the cookies will still be a little soft. Baking these in 3 batches one sheet at a time gets you the nice, crackly top. The second sheet of cookies can stay on the counter until ready to bake. Form the remaining dough, roll the balls in sugar and place on the now cooled first baking sheet. Allow the cookies to cool for 5 minutes on the baking sheet, and then remove to a rack to cool completely.

1 cup dark brown sugar, lightly packed
1/4 cup vegetable oil
1/3 cup unsulfured molasses
1 extra-large egg, at room temperature
1 1/4 cups chopped crystallized ginger (6 ounces)
Granulated sugar, for rolling the cookies

Steps:

  • Preheat the oven to 350 degrees F. Line 2 sheet pans with parchment paper.
  • In a large bowl, sift together the flour, baking soda, cinnamon, cloves, nutmeg, ginger, and salt and then combine the mixture with your hands. In the bowl of an electric mixer fitted with the paddle attachment, beat the brown sugar, oil, and molasses on medium speed for 5 minutes. Turn the mixer to low speed, add the egg, and beat for 1 minute. Scrape the bowl with a rubber spatula and beat for 1 more minute. With the mixer still on low, slowly add the dry ingredients to the bowl and mix on medium speed for 2 minutes. Add the crystallized ginger and mix until combined.
  • Scoop the dough with 2 spoons or a small ice cream scoop. With your hands, roll each cookie into a 1 3/4-inch ball and then flatten them lightly with your fingers. Press both sides of each cookie in granulated sugar and place them on the sheet pans. Bake for exactly 13 minutes. The cookies will be crackled on the top and soft inside. Let the cookies cool on the sheets for 1 to 2 minutes, then transfer to wire racks to cool completely.

Even though I have several cookies that are traditional to make for Christmas, every year, I like to try a new cookie. You never know when you'll find a real winner. Last year I found this recipe -- and a winner it is! I had just gotten some fresh crystalized ginger and wanted to use it in an easy recipe. This cookie, which I found at Cooks.com. fits the bill perfectly. It has a hauntingly subtle flavor -- and when you get to a chunk of crystalized ginger, WOW! Deliious!

3/4 cup butter
1 cup sugar
1 egg
2 1/2 cups flour
2 teaspoons baking soda
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F.
  • Cream butter and sugar. Add egg and mix well. Combine flour, soda, cinnamon, cloves and salt, mixing to combine. Add to creamed ingredients and mix well. Chill.
  • Roll into balls smaller than golf balls and flatten with the bottom of a glass dipped in sugar. These spread a little so don't crowd.
  • Bake in preheated oven for 10 minutes.
  • NOTE: These are very plain looking cookies. You may want to melt chocolate chips and drizzle over the cookies to "fancy them up" a bit.

This cookie is for the true spice lover. I just love the smell of the house when they are baking and was so fortunate to be one of my friend Lisa's taste-tester's for this recipe (and of course promptly asked for the recipe). I can't remember how many this makes so yield time is estimated. I generally make my cookies using a smaller cookie scoop so we can enjoy them longer. Oh, and if you don't have a lot of time to make these, you can omit the chilling time and they will still turn out--I'm honestly not sure if I ever chill the dough when I'm making these...rebel, I know. ;-)

1/4 cup granulated sugar
2 tablespoons candied ginger, coarsely chopped
3/4 cup unsalted butter, melted and cooled
3/4 cup dark brown sugar
1 large egg
3/4 cup unsulphured molasses, mild flavor
2 2/3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground ginger
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground cloves

Steps:

  • Preheat the oven to 375 degrees. Line 2-3 cookie sheets with parchment paper or silicone mats.Combine the sugar and candied ginger in a food processor and grind until fine.
  • Pour into a small bowl and set aside.
  • In a medium mixing bowl, wisk together the melted butter and brown sugar. Add the egg and molasses and mix well.
  • Combine the flour, baking soda, salt, and spices and sift into the butter mixture, stirring with a wooden spoon or rubber spatula to blend.
  • Cover with plastic wrap and chill for at least an hour.
  • Using a #20 cookie scoop or a 1/4 cup measure, scoop balls of dough, and gently flatten to form 2-1/2 to 3 inch discs.
  • Roll each disc in the ginger sugar, and place on the lined cookie sheet, leaving about 3 inches between each cookie.
  • Bake 12-15 minutes, until just golden brown around the edges, but still slightly soft. Do not overbake.
  • Remove from the oven and immediately slide the paper or mat onto a metal rack to cool.
  • I use a small cookie scoop for these to make smaller (and more!) cookies. Start out baking them for 8 minutes and then adjust the time accordingly.
