SPICED CANDIED CASHEWS

Steps:
- Line a baking sheet with parchment paper.
- Put the nuts, sugar, water, and salt into a large skillet over high heat. Bring the mixture to a boil, stirring frequently, and cook until the water is nearly evaporated and the liquid becomes syrupy, about 10 minutes.
- Meanwhile, mix the spices together in a small bowl.
- After 10 minutes, sprinkle the spices over the nuts and stir well. Continue stirring constantly while the water evaporates completely, about 5 minutes. When there is no longer any sugar syrup left in the bottom of the pan, turn off the heat and stir the nuts vigorously but carefully in the pan until the sugar seizes up and the nuts are evenly coated with crystallized sugar.
- Turn the nuts out onto the lined baking sheet and spread into an even layer. Cool completely before sifting the excess sugar from the coated nuts and storing in an airtight container.
- Cook's Note: DO NOT touch the nuts at any time while cooking or just afterward. Cooked sugar is extremely hot and can burn instantly when touched.
CANDIED CASHEWS AND PECANS
Cashews and Pecans tossed in cinnamon sugar & egg white mixture and roasted until crunchy to make this dangerously addictive candied cashews and pecans.

- Preheat the Oven to 325°F (163°C). While the oven is preheating, Cut the 2 tablespoons butter into cubes and place them evenly on a baking sheet and put the baking sheet in the oven for the butter to melt. Take the baking sheet out of the oven and set it aside, as soon as the butter is melted to avoid burning. If you don't want to use the butter, then use a silicon mat lined baking sheet to make cleaning easy.
- Separate the egg yolk and egg white of an egg and take the egg white in a medium size mixing bowl ( We DO NOT need the egg yolk in this recipe ). Add vanilla extract and whisk it until frothy.
- Add sugar, salt and cinnamon to the the egg white mixture and mix it gently until well combined.
- Now add the cashews and pecan halves to this mixture and mix well until all the nuts are properly coated with the egg white and sugar mixture.
- Spread these cinnamon sugar coated cashews and pecans in a single flat layer on the sheet pan which is ready with the melted butter.
- Bake for about 25 to 30 mins. Take them out and stir properly every 10 mins for the first 20 mins and watch very closely after 20 mins to check if they are done. They took about 28 mins in my oven but every oven is little different, So watch to see they don't burn in the last few mins.
- Once candied cashews and pecans are done, take them out of the oven and allow them to cool completely. Nuts get crunchier as they cool down, so wait until they are completely cool to enjoy them. Leave them on the counter for couple hours and then store them in an air tight container at room temperature for around 2 to 4 weeks ( if they last that long???? )
- Preheat the air fryer for 3 mins. Take a small cube of butter on a fork and grease the preheated air fryer basket evenly.
- Use the above instructions to prepare the egg white and sugar coated nut mixture.
- Spread the cinnamon sugar pecans and cashews in the air fryer basket evenly in a single layer as much as possible. ( I took the slotted crisper trays out of my air fryer basket and spread the nuts on the greased flat non stick base of the air fryer basket of my Gourmia Air fryer.
- Air fry at 300°F for about 20 to 25 mins, stirring every 5 mins, until the caramelized pecans and cashews nuts are done and take them out to lay them down on a parchment paper or a silicon mat to cool down. It took me 25 mins in my air fryer but since every air fryer is different, watch closely after 15 mins to make sure nuts are not burning. Nuts get crunchier as they cool down, so wait until they are completely cool to enjoy them. Store them in an air tight container at room temperature for around 2 weeks.

- In a large bowl combine sugar, cinnamon, ginger, nutmeg, and salt.
- Blanch nuts in boiling water for 1 minute. Drain and dry them off in a kitchen towel. Lightly toss them into the sugar mixture until coated. Remove nuts, and set aside the sugar spice mixture.
- Bring the oil in a deep fryer or a heavy-bottomed pan to 330 to 350 degrees-F (do not let the oil burn). *Hint: place 1 nut in the oil and when it starts to sizzle, add the rest of the nuts.
- Fry approximately 1 minute, the nuts will turn golden in color, and float. Remove from the oil and add directly to the sugar mixture and toss again. Carefully remove nuts and shake off excess sugar, let cool and serve.

- Preheat the oven to 350 degrees F. Place the cashews on a baking sheet and place in the oven. Toast the cashews for 10 minutes, or until golden brown. Be sure to watch the cashews carefully so they don't burn! Remove the cashews from the oven and cool. In a saucepan (copper works best), add the sugar and the water. Bring the mixture to a boil. Once the mixture is boiling and the sugar has dissolved, add the cashews. Continue cooking the mixture, stirring constantly. The sugar will thicken, and then become granular again, continue stirring. The sugar will then begin to turn back into a clear liquid. When all of the sugar has turned into a clear liquid, remove the pan from the heat, stirring constantly. Once the sugar begins to turn a golden color, spoon the nuts onto a parchment paper lined sheet pan. Allow to cool.;
MICROWAVE CANDIED NUTS
This is a recipe my Mom used to make for Christmas gift giving. You can use any kind of nuts you want. It is particularly good with pecans or cashews. Make sure to do some peanuts this way as well, use blanched peanuts so you dont have the skins collecting the candied mixture in the bottom of the dish. You can make separate batches of different nuts, then mix them together after they have cooled. It is very important to use unsalted nuts. If there is any salt your mixture will not candy properly. These were done in a 600 watt microwave. With a higher wattage oven you will likely have to cook these at about 5 or 6 for the power level. As all microwaves cook differently it is a good idea to start with a batch of peanuts. If your sugar mixture starts to brown rather than crystalize you may have some salt in the nuts or the power level is too high. When cooked at the correct power level these nuts will have a lovely white crystalized coating on them. These taste so good it is worth the effort to figure out what power level works for your microwave.

- Remove from heat.

CAYENNE CANDIED PECANS
This is a recipe that I borrowed from a great friend and chef, Chef James. This recipe is easy and the pecans come out delicious. They have a slight sweetness from the honey, a salty, nutty flavor from the butter and of course the spicy cayenne kick. These are fantastic in salads or just by the handful.

- Pre heat oven to 350 degrees.
- To toast the pecans, place evenly on a cookie sheet. Bake for 5-10 minutes at 350 degrees, checking often. They will burn quickly!
- In a 4-quart saucepan, place all ingredients, except pecans, and heat until mixture reaches 250 degrees. Turn off heat and add pecans to saucepan and mix well.
- Spread coated pecans evenly on cookie sheet lined with parchment paper or cooking spray. Bake at 350 degrees for 15 minutes. Check the pecans midway during cooking, give them a mix using a spatula, spread evenly on cookie sheet and continue cooking.
- Cool and enjoy.

- Generously grease 151/2x101/2x 1-inch jelly roll pan.
- Beat egg white in medium bowl with electric mixer on high speed until soft peaks form.
- Add almonds and pecans; stir until coated.

- In a small saucepan, mix together cashews, sugar, and water over medium heat until sugar dissolves.
