DEEP-FRIED TAGALONGS

Deep-Fried Tagalongs image

These gooey deep-fried treats are the perfect excuse to buy another box of Tagalongs® at the next Girl Scout cookie sale. The chocolate-covered peanut butter cookies are dipped in a sweet batter that gets an extra peanutty boost from powdered PB. They're fried until golden and served with a dusting of powdered sugar and chocolate sauce for dipping.

Provided by Food Network Kitchen

Categories     dessert

Time 20m

Yield 14 fried cookies

Number Of Ingredients 12

Canola oil, for frying
1/2 cup semisweet chocolate chips
1/3 cup heavy cream
1 cup all-purpose flour (see Cook's Note)
3 tablespoons powdered peanut butter
2 tablespoons granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup buttermilk
1 large egg, beaten
14 chocolate-covered peanut butter patty cookies, such as Tagalongs® (one 6.5-ounce box), frozen
3 tablespoons confectioners' sugar

Steps:

  • Fill a medium Dutch oven halfway with canola oil and heat until a deep-frying thermometer registers 375 degrees F. Set a rack over a baking sheet.
  • Put the chocolate chips in a small bowl. Heat the heavy cream in a small pot until almost to a boil. Pour the cream over the chocolate chips and allow to sit for 1 minute. Stir until completely smooth. Reserve the sauce while you fry the cookies--it will thicken as it cools.
  • Whisk together the flour, powdered peanut butter, granulated sugar, baking powder and baking soda in a medium bowl. Add the buttermilk and egg and whisk until just combined.
  • Add 7 cookies to the batter and use a fork to completely coat them in the batter. Add the cookies 1 at a time to the hot oil until all 7 are added. Fry, turning the cookies occasionally with a slotted spoon, until puffed and golden brown, 2 to 3 minutes. Use the slotted spoon to transfer the fried cookies to the rack on the baking sheet. Repeat the frying process with the remaining cookies and batter.
  • Stack the fried cookies on a platter and sift confectioners' sugar over the top. Serve immediately with the chocolate sauce for dipping.

STIR-FRIED ASPARAGUS AND BASIL WITH SPICY ORANGE SAUCE

Stir-Fried Asparagus and Basil with Spicy Orange Sauce image

Provided by Food Network

Categories     side-dish

Yield Serves 4 as a side dish

Number Of Ingredients 8

1/3 cup orange juice
1 1/2 tablespoons soy sauce
1/2 teaspoon hot red pepper flakes, or more to taste
1 1/2 pounds asparagus
4 teaspoons roasted peanut oil
2 medium garlic cloves, minced
1 tablespoon minced fresh gingerroot
1/2 cup packed fresh basil leaves

Steps:

  • Combine the orange juice, soy sauce, and hot red pepper flakes in a small bowl and set aside.
  • Snap off the tough ends of the asparagus. If the asparagus are thin, cut them on the diagonal into 2-inch pieces. If the asparagus are average or thicker, cut the spears in half lengthwise and then on the diagonal in 2-inch pieces.
  • Heat 1 tablespoon of the oil in a large nonstick skillet set over high heat. When the oil is shimmering but not smoking, add the asparagus and stir-fry for 2 minutes. Push the asparagus to the sides of the pan and place the garlic and ginger in the center. Drizzle the remaining 1 teaspoon oil over the garlic and ginger. Cook until fragrant, about 20 seconds. Add the orange juice mixture, toss to coat well, and cover. Cook until the asparagus are tender, 2 to 3 minutes, depending on the thickness of the spears.
  • Remove the cover and add the basil. Stir-fry until the sauce has reduced to a thick glaze, about 30 seconds. Serve immediately.

DEEP-FRIED CAMEMBERT

Deep-Fried Camembert image

Provided by Food Network

Categories     appetizer

Time 15m

Yield 4 to 6 servings

Number Of Ingredients 7

2 (4-ounce) Camembert pieces
1 (1 1/2-ounce) truffle, optional, thinly sliced
2 cups flour
4 eggs
2 cups bread crumbs
1 cup finely chopped ground walnuts
3 quarts vegetable oil

Steps:

  • Wrap the Camembert in plastic wrap and place in the freezer for 1 hour.
  • Remove the plastic wrap and, using a knife, slice the cheese in half horizontally so you have 2 round layers as you would a cake for layers.
  • If using the truffles, place the truffle slices on 1 half, slightly overlapping the pieces, until it is covered. Cover with the other half of the Camembert and firmly press together. Repeat with the second Camembert. If you are not using truffles, you may replace them with mixed berries or other mushrooms.
  • Bread the cheese first dipping it in flour, egg, and bread crumbs mixed with the ground walnuts. Repeat this process twice to ensure the cheese is covered and it won't seep out the sides.
  • In a fryer or large pot, heat the oil to 375 degrees F and fry the cheese until golden brown.
  • To serve, slice the cheese and serve on a platter with fruits.

Provided by Brian Genest

Categories     Veggie Fries

Time 55m

Yield 6

Number Of Ingredients 11

2 cups all-purpose flour
2 tablespoons ground paprika
2 tablespoons garlic powder
1 tablespoon baking powder
1 tablespoon salt
2 large eggs
1 cup buttermilk

  • Coat each asparagus stalk in the flour blend, dunk into the egg mixture, then roll in the bread crumbs. Transfer to the refrigerator and let them rest for 30 minutes; this will help the breading stick during frying.

  • Fry asparagus in the hot oil, working in batches as needed, until breading is golden brown, about 4 minutes. Transfer to a paper towel-lined plate to drain excess grease. Serve hot.
