1 1/2 cups grated cheese
2 cups cod
3 tablespoons butter
1/2 teaspoon pepper
2 cups milk
2 tablespoons flour
1/2 teaspoon salt

Steps:

  • Mix flour with melted butter over low heat.
  • Pour milk in slowly.
  • Add pepper and salt to taste.
  • Increase heat to high.
  • Continue stirring.
  • Grease casserole dish.
  • Pour a little sauce in dish, layer flaked fish, cheese, sauce, then another layer of fish and cheese.
  • Bake at 350 F for 1/2 hour.

2 lbs cod fish fillets
3 tablespoons margarine
6 tablespoons all-purpose flour
2 cups milk
salt & fresh ground pepper
1 1/2 cups cheddar cheese, shredded

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease an 8x 12 inch baking dish.
  • Bring a large pot of lightly salted water to a boil.
  • Add cod fillets and cook for 4 to 6 minutes; drain.
  • Melt margarine in a medium saucepan.
  • Remove from heat and mix in the flour and milk.
  • Return to stove over medium heat, and stir until thickened.
  • Season with salt and pepper.
  • Flake fish into baking dish, alternating layers with sauce.
  • Sprinkle top with shredded cheese.
  • Bake in preheated oven for 20 to 25 minutes, or until cheese is browned.

This is a fun way to get your kids involved in cooking and get them excited about eating their own personal vegetable.

3 slices stale bread, any kind
2 tablespoons parmesan cheese, grated
3 tablespoons butter
1/3 cup flour
2 cups milk
2 lbs cauliflower, cored and cut into small pieces
1 cup gruyere cheese, grated
1/2 cup Canadian bacon, chopped

Steps:

  • In a food processor, shred the bread and Parmesan Cheese together until it becomes crumb like.
  • In a large saucepan, melt butter over medium low heat and add flour. Cook whisking vigorously for 2 minutes, being very careful not to burn. Add milk. Cook for another 2 minutes.
  • Increase heat to medium-high and add cauliflower. Bring to a boil, then reduce to a simmer. Cover pot and cook for abut 5 minutes until the cauliflower begins to soften. Add ham and remaining cheese. Remove from heat. Season with salt and pepper to your liking.
  • Cool mixture and scoop spoonfuls of the mixture into a muffin tin with each cup coated with non stick cooking spray. Cover the top of each "muffin" with the bread and Parmesan mixture.
  • Bake in a 350 degree oven for about 20 minutes, covered with foil. Remove foil and bake for about another 15 minutes, until bubbly and golden brown on top.
  • Enjoy!

1 ½ cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x 12 inch baking dish. Bring a large pot of lightly salted water to a boil. Add cod fillets and cook for 4 to 6 minutes; drain.
  • Melt margarine in a medium saucepan. Remove from heat and mix in the flour and milk. Return to stove over medium heat, and stir until thickened. Season with salt and pepper.
  • Flake fish into baking dish, alternating layers with sauce. Sprinkle top with shredded cheese.

Steps:

  • Melt butter, add flour, salt and pepper.
  • Stir to make a paste.
  • Add milk and cook until it thickens, stirring constantly.
  • Grease a 2-quart casserole.
  • pour a little of the sauce over the bottom.
  • Add a layer of cod, sprinkle with cheese.
  • Repeat these layers until all ingredients are used, ending with a layer of cheese.
  • Bake at 350 until nicely browned (about 1/2 hour).
