BROTHY TOMATO SOUP

In this recipe, you use bacon renderings as the base of the soup. This adds a nice smokey flavor that pairs nicely with the pungent, spicy flavors from the kimchi and gochujang. Finish the soup with some of the crumbled bacon or pair it with a grilled cheese sandwich for a nice twist on the classic soup and sandwich combo.

8 slices thick-cut bacon, chopped
1 cup drained kimchi, roughly chopped
1 onion, chopped
3 cloves garlic, minced
1 1-inch piece ginger, peeled and minced
1 tablespoon gochujang, plus more to taste
1 tablespoon packed light brown sugar
2 14.5-ounce cans diced tomatoes
4 cups low-sodium vegetable broth
Thinly sliced scallions, for topping

Steps:

  • Cook the bacon in a large pot or Dutch oven over medium-high heat, stirring occasionally, until golden brown and crisp, 8 to 10 minutes. Remove to paper towels and reserve for the grilled cheese. Pour off all but 3 tablespoons of the drippings from the pot.
  • Add the kimchi and onion to the pot. Cook, stirring and scraping up any browned bits, until softened, about 5 minutes. Add the garlic and ginger and cook, stirring, 1 minute. Add the gochujang and brown sugar and cook, stirring, until the vegetables are coated and the bottom of the pot is starting to brown, 1 to 2 minutes. Add the tomatoes and vegetable broth and bring to a boil. Reduce the heat and simmer until the soup is slightly reduced and thickened, 20 to 25 minutes. Remove 1 1/2 cups soup from the pot and transfer to a blender; puree until smooth. Return to the pot and stir to combine. Add more gochujang if desired, 1/2 teaspoon at a time.
  • Divide the soup among bowls. Top with sliced scallions.

PUMPKIN, PENNE AND CABBAGE

Salt
1 medium butternut squash, or 1 small cooking/sugar pumpkin, peeled and cut into bite-size pieces
Olive oil cooking spray
Freshly ground pepper
Freshly grated nutmeg
A pinch of saffron threads
2 cups chicken stock
1 pound of white/green cabbage, cut into fat julienne
6 tablespoons butter
18 to 20 fresh sage leaves
1 pound penne
1 cup freshly grated Parmigiano-Reggiano, plus some for topping

Steps:

  • Preheat the oven to 400 degrees F. Bring a pot of salted water to a boil. Arrange the squash on a baking sheet and spray with the cooking spray to lightly coat; season with salt, pepper and a little nutmeg. Roast to tender and brown at the edges. Place the saffron in the chicken stock in a medium pot and add the cabbage. Bring to a low boil, then reduce the heat to a simmer. Cook the cabbage to very tender, about 20 minutes. Melt the butter in small pan over medium heat, add the sage and fry the leaves to crisp. Remove to a towel, and then crumble the leaves. Lightly brown the butter. Boil the pasta in salted water to al dente, reserve 1/2 cup starchy water, then drain. Toss the pasta with the starchy water, squash, cabbage and stock, browned butter, crumbled sage and cheese. Toss for 2 minutes to absorb the sauce, then place in casserole and cool. Store for a make-ahead meal. To reheat, bake at 375 degrees F, loosely covered with foil. Then top with a little cheese, and broil to crisp up the edges.

2 tbsp olive oil
1 large onion , finely chopped
2 celery sticks , finely chopped
1 large carrot , finely chopped
70g smoked pancetta , diced (optional)
1 large Savoy cabbage , shredded
2 fat garlic cloves , crushed
1 heaped tsp sweet smoked paprika
1 tbsp finely chopped rosemary
1 x 400g can chopped tomatoes
1.7l hot vegetable stock
1 x 400g can chickpeas , drained and rinsed
shaved parmesan (or vegetarian alternative), to serve (optional)
crusty bread , to serve (optional)

Steps:

  • Heat the oil in a casserole pot over a low heat. Add the onion, celery and carrot, along with a generous pinch of salt, and fry gently for 15 mins, or until the veg begins to soften. If you're using pancetta, add it to the pan, turn up the heat and fry for a few mins more until turning golden brown. Tip in the cabbage and fry for 5 mins, then stir through the garlic, paprika and rosemary and cook for 1 min more.
  • Tip the chopped tomatoes and stock into the pan. Bring to a simmer, then cook, uncovered, for 30 mins, adding the chickpeas for the final 10 mins. Season generously with salt and black pepper.
  • Ladle the soup into six deep bowls. Serve with the shaved parmesan and crusty bread, if you like.
