2 1/2 cups Gold Medal™ whole wheat flour
2 tablespoons olive oil
1/2 teaspoon salt
1 tablespoon olive oil
1 tablespoon whole-grain cornmeal
1 can (8 oz) pizza sauce
2 cups finely shredded Italian mozzarella and Parmesan cheese blend (8 oz)
1 package (6 oz) sliced Canadian bacon, cut into fourths
1 small green bell pepper, chopped (1/2 cup)

Steps:

  • In medium bowl, dissolve yeast in warm water. Stir in flour, 2 tablespoons oil and the salt. Beat vigorously with spoon 20 strokes. Let dough rest 20 minutes.
  • Move oven rack to lowest position. Heat oven to 425°F. Grease cookie sheet with 1 tablespoon oil; sprinkle with cornmeal. Pat dough into 12x10-inch rectangle on cookie sheet, using floured fingers; pinch edges to form 1/2-inch rim.
  • Spread pizza sauce over crust. Top with cheese, bacon and bell pepper. Bake 15 to 20 minutes or until edge of crust is golden brown.

1 (6 ounce) jar marinated artichoke hearts, quartered
2 small Boboli pizza crusts (6 inch)
2 cups shredded fontina or 2 cups mozzarella cheese
8 slices Canadian bacon, cut into strips
3 plum tomatoes, sliced
1/4 cup crumbled feta cheese
2 green onions, thinly sliced
1 tablespoon chopped fresh oregano or 1 tablespoon basil

Steps:

  • Drain the artichoke hearts and set aside.
  • Sprinkle half of the fontina cheese over the pizza crusts.
  • In a bowl, add the quartered artichoke hearts, Canadian bacon, tomatoes, feta cheese, green onions, and oregano; stir to combine.
  • Add salt and pepper if necessary.
  • Divide the mixture and place it evenly over the cheese.
  • Sprinkle with the remaining cheese.
  • Transfer pizzas to a pizza grill pan.
  • Place pan on grill rack over medium heat.
  • Cover and grill for 5-10 minutes or until the cheese is melted and pizza is heated.

My friend Marsha has made pizza every Friday night for many years. This healthy whole wheat version is delicious. Add any other toppings you like to this basic version.

1/2 lb bread flour (2 c.)
1/2 lb whole wheat flour (2 c.)
1/2 teaspoon salt
1 tablespoon yeast
water, to mix

Steps:

  • Mix dough ingredients together.
  • Let rise until doubled.
  • Heat pizza stones at 500 degrees.
  • Roll out dough and let rise again, about 10 minutes.
  • Take stones out of the oven, smooth on the dough.
  • Put on a little olive oil, fresh chopped tomatoes, mozzarella, S&P, oregano, parsley Cook in 500 degree oven for 12-15 minutes.

We were watching the baseball game and decided on pizza. This is what I came up with and DH thought it was very good and I should share. So here it is. Please feel free to add more or less of the ingredients to suit your tastes.

1 (11 ounce) thin crust pizza dough (I used Pillsbury but use homemade if desired)
1 (6 1/2 ounce) jar marinated artichoke hearts, coarsely chopped
2 teaspoons jarred minced garlic
1 cup shredded mozzarella cheese (or more, fontina would be good also)
1/4 cup sun-dried tomato alfredo sauce (can use more, we do not like saucy)
4 ounces Canadian bacon, cut into strips
1 (10 ounce) can Rotel tomatoes & chilies, drained
feta cheese
2 slices red onions, coarsely chopped
1/4 teaspoon dried basil
salt and pepper

Steps:

  • Preheat oven to 400 degrees.
  • Spread dough on large greased cookie sheet.
  • Drain artichoke hearts reserving some of the marinade. Set hearts aside.
  • Brush crust with some of the reserved marinade.
  • Brush on garlic.
  • Sprinkle mozzarella cheese over crust.
  • Bake 5 minutes.
  • Remove crust and spoon on sauce to your desire of thickness.
  • Add artichokes, bacon, tomatoes, and onion.
  • Sprinkle as much feta cheese over pizza as desired.
  • Sprinkle basil over crust.
  • Bake 10 to 12 minutes longer or until crust is baked to your choosing.
  • Cut into squares.

1/2 teaspoon crushed dried oregano
1/2 teaspoon dried basil
1/4 teaspoon crushed red pepper flakes

Steps:

  • Preheat oven to 450°F Place the unbaked pizza crust on an ungreased nonstick pizza pan.
  • Spread the pizza sauce over the crust, leaving a 1-inch border around the rim.
  • Sprinkle with half of the cheese.
  • Arrange the Canadian bacon on top of the cheese, covering evenly.
  • Top with mushroom slices and bell pepper rings.
  • Sprinkle evenly with oregano, basil, and red pepper flakes.
  • Top with remaining cheese.
  • Bake for 13 to 15 minutes, until the crust is crisp and the cheese is melted and browned.
