30 Minute Stovetop Turkey Tetrazzini image

This is a quick and easy turkey tetrazzini recipe to make and is sure to become a new family favorite - plus it makes great use of Thanksgiving or Christmas leftovers!

1 tablespoon vegetable oil
1/2 cup chopped onion (optional)
10 ounces sliced white button mushrooms
2 cups low-sodium chicken broth (see notes about seasoning)
2 1/2 cups milk (whole or 2% preferred)
1 (12-oz) box spaghetti (uncooked (regular, whole wheat or high-fiber all work))
2 cups cooked and shredded turkey (OR rotisserie chicken OR around 1 pound cooked turkey breast)
1/2 cup sour cream (low fat or full fat both work)
1 tablespoon butter
1/4 cup parmesan cheese (grated)
Italian parsley (chopped (optional))

Steps:

  • Heat the oil in a large pot one medium-high heat. Add the onion (if using) and mushrooms and cook until starting to soften. This should take about 2-3 minutes.
  • Pour the chicken stock and milk into the pot bring to a boil over medium-high heat. Add the spaghetti to the pot and cook until almost al-dente, about 10 minutes. Stir in the cooked turkey meat and finish cooking until the pasta is done.
  • Take the pot off the heat, stir in the sour cream, butter and cheese. Serve immediately garnished with chopped parsley, if you like.

1 pound Cooked Turkey Breast (cut into 1-inch chunks)
1 tablespoons Canola Oil
1 cup Onion (chopped)
12 ounces Mushrooms (sliced)
1 teaspoon Dried Thyme
¼ teaspoon Kosher Salt
¼ teaspoon Black Pepper
¼ cup Dry White Wine (or cooking sherry)
3 cups Unsalted Chicken Stock
2 cups Broccoli Crowns (cut into florets)
8 ounces Egg Noodles
1 (5-ounce) can Low Fat Evaporated Milk
1 cup Parmesan Cheese (shredded)
¼ cup Parsley (chopped)
1 tablespoon Lemon Zest

Steps:

  • Heat oil in large skillet over medium-high heat. Add onion, celery, mushrooms, thyme, salt, and pepper. Cook and stir about 8 minutes, or until vegetables are softened. Add wine and cook for 2 minutes. Add the chicken stock and bring to a boil. Stir in the broccoli and noodles. Top the noodles with the turkey. Press down on mixture to get as much of the noodles submerged into liquid as possible. Cover and lower heat to low.Simmer covered skillet for about 10 minutes, stirring occasionally. Noodles should be cooked al dente. Remove the lid and stir in the evaporated milk. Simmer uncovered for 5-10 minutes. Sauce will thicken slightly. Remove from heat and stir in Parmesan cheese, parsley, and lemon zest.Divide evenly between 6 plates and serve.

1 shallot, chopped
1 garlic clove, minced
1 pound mushrooms, sliced
3 tablespoons chopped parsley
2 tablespoons thyme leaves
2 bay leaves
Salt and pepper, to taste
Grated lemon zest
2 cups chicken broth, low sodium
4 tablespoons butter
1/4 cup flour
1 egg yolk, lightly beaten
1 cup milk
4 pounds cooked turkey breast, chunks or tenders
1 pound egg noodles, cooked
1/2 cup bread crumbs
1/2 cup grated Parmesan
1/2 cup sliced almonds, toasted

Steps:

  • Coat a skillet with oil and put over medium heat. Add shallot and garlic, cook, stirring, until translucent, about 3 minutes. Add the mushrooms and herbs and saute for 3 to 5 minutes until lightly browned. Season with salt and pepper. Transfer the mushrooms to a glass bowl, grate in the zest of a lemon, then cover with plastic wrap to infuse the flavor. Set aside.
  • Heat the chicken broth in a medium saucepan and keep warm over low heat. Melt butter in the skillet and stir in the flour to make a roux. Cook, stirring constantly, for 3 minutes. Whisk in the warm stock and stir vigorously to avoid lumps. Continue for 5 minutes until the sauce is thickened and smooth. Add the egg, milk, reserved mushrooms, and turkey. Cook and stir until heated through, do not let boil. Fold in the cooked noodles and mix to combine.
  • Spoon the mixture into a buttered 9 by 13-inch baking pan and smooth out with a spoon. Sprinkle with bread crumbs and Parmesan. Bake in a preheated 350 degrees F until the sauce bubbles and a top crust has formed, 20 to 30 minutes. Garnish with toasted almonds before serving.

1 cup dry white wine
1/2 teaspoon salt, plus more

4 cups turkey or chicken broth, plus more if needed
One 8-ounce package cream cheese
3 cups leftover Thanksgiving turkey, shredded or diced
1 1/2 cups frozen green peas
1 cup grated Monterey Jack cheese

12 ounces thin spaghetti, broken in half and cooked

Steps:

  • Preheat the oven to 350 degrees F.
  • Melt the butter in a large pot over medium heat and add the garlic.
  • Throw in the mushrooms, wine, salt and pepper, and cook them, stirring occasionally, until the liquid reduces by half, 3 to 4 minutes.
  • Sprinkle the flour all over, then stir to combine.
  • Pour in the broth, stir and continue to cook until the sauce is nice and thick, 3 to 4 minutes.
  • Add the cream cheese and stir until it mixes in. (Don't worry if it seems a little lumpy at first. That will go away!)
  • Add the turkey, peas, Monterey Jack, olives, Parmesan and bacon.
  • Stir until everything is well combined, then add salt and pepper to taste.
  • Add the spaghetti and stir to combine. If the mixture is too thick, splash in 1/2 cup of broth.
  • Pour the whole shebang into a large casserole dish and even out the surface.
  • Sprinkle on the panko breadcrumbs and bake it until the crumbs are golden brown and the casserole is bubbly, 20 to 25 minutes.
  • Serve it to hearty appetites!

6 tablespoons butter
1/2 pound mushrooms thinly sliced
1 tablespoon Madeira
4 tablespoons flour
1 1/2 cups chicken or vegetable broth
1/2 cup heavy cream
2 to 3 cups leftover cooked turkey, cut into 3/4-inch dice
1/2 pound linguine cooked to al dente stage
1/3 cup grated Parmesan cheese mixed with 2 tablespoons dry bread crumbs
Salt and freshly ground black pepper

Steps:

  • Heat 2 tablespoons of the butter in a skillet. When the foaming subsides, add the mushrooms and saute, over high heat for 2 to 3 minutes until the mushrooms have absorbed the butter and are tender. Stir in the Madeira and evaporate over high heat.
  • In another saucepan heat 3 tablespoons of butter. When foaming subsides, stir in the flour and cook for a minute. Whisk in the chicken broth and bring to a boil. Cook, over low heat, for about 5 minutes or until thickened. Remove sauce from heat and stir in the cream. Season to taste with salt and pepper. Fold in the mushrooms and turkey.
  • Preheat the oven to 350 degrees. Butter a 1 1/2 quart casserole. Layer half of pasta, half of mushroom and turkey mixture and repeat with pasta and turkey mushroom mix. Scatter Parmesan and bread crumbs over the top and dot with remaining tablespoon of butter. Heat for 45 minutes or until heated through, sauce is bubbling and top is browning. If you wish, slide casserole under the broiler for a moment to brown the top.

6 tablespoons butter
1 pound white mushrooms, trimmed and sliced 1/4 inch thick
1/2 cup all-purpose flour
3 cups milk
1 can (14.5 ounces) reduced-sodium chicken broth
3/4 cup dry white wine
3 cups grated Parmesan cheese
1/2 teaspoon dried thyme leaves
1 pound linguine, broken in half
1 rotisserie chicken, skin removed, meat shredded (about 4 cups)
1 package (10 ounces) frozen peas, thawed and drained

Steps:

  • Preheat oven to 400. Bring a large pot of salted water to a boil (for pasta). In a large saucepan, melt 2 tablespoons butter over high heat. Add mushrooms, and season with salt and pepper. Cook, tossing frequently, until tender and browned, 8 to 10 minutes. Transfer to a bowl, and set aside.
  • Make sauce: In same saucepan, melt remaining 4 tablespoons butter over medium heat. Add flour; cook, whisking, about 1 minute. Whisking constantly, gradually add milk, broth, and wine. Bring to a boil; reduce to a simmer, and add 2 cups Parmesan and thyme. Season with salt and pepper.
  • Cook pasta 2 minutes less than package instructions for al dente; drain and return to pot. Add sauce, chicken, peas, and mushrooms. Toss well to combine. Divide between two shallow 2-quart baking dishes; sprinkle with remaining Parmesan. Freeze (see below) or bake until browned, about 30 minutes. Let stand 10 minutes before serving.

1/4 teaspoon onion powder

2 (8 ounce) packages presliced mushrooms
1 (8 1/2 ounce) can peas
3/4 cup skim milk
2/3 cup fat free sour cream
1/3 cup grated parmesan cheese
1 (10 3/4 ounce) can reduced-fat cream of chicken soup
cooking spray
1/3 cup dry breadcrumbs
2 tablespoons butter, melted

Steps:

  • Preheat oven to 450 degrees.
  • Cook pasta (omit salt and fat).
  • Drain.
  • In a large nonstick skillet, add onion powder, sherry, and mushrooms.
  • Cover and cook until mushrooms are tender (about 4 minutes).
  • Drain off about half of the liquid.
  • In a large bowl, combine peas, milk, sour cream, cheese, and soup.
  • Add salt, pepper, pasta, chicken, and mushroom mixture to soup mixture.

8 ounces sliced mushrooms (optional)
1/2 cup white wine (or sherry)
1/2 cup flour

4 ounces light cream cheese (low fat)

2 cups turkey meat, cooked and shredded (or chicken)

This classic turkey or chicken spaghetti casserole is rich with cheese and has a crunchy bread crumb topping. It was named after Luisa Tetrazzini, a famous Italian opera star at the turn of the 20th century. She enjoyed her fame with a flamboyant and generous public life, singing not only in opera houses but also for free on city streets: In 1910 she gave an outdoor Christmas Eve concert for a huge crowd in San Francisco. It's unclear exactly how this particular dish came to be named after her - it was certainly meant as a compliment - but some accounts say it was her own recipe. The optional curry powder isn't traditional, but it's delicious, and a little added flair seems in the spirit of Ms. Tetrazzini.

5 tablespoons unsalted butter
1 pound cremini mushrooms, any tough or dry stems discarded, sliced

1 cup dry white wine
4 cups chicken or turkey stock or broth
8 ounces cream cheese, cut into chunks
3 cups shredded or chopped leftover cooked turkey or chicken

1 heaping cup grated Parmesan (4 ounces)
1 cup shredded or grated fontina (4 ounces)
Black pepper
1 cup panko bread crumbs
1/2 cup slivered almonds

Steps:

  • Heat the oven to 400 degrees. Bring a large pot of well-salted water to a boil and cook the pasta until just shy of al dente, about 2 minutes less than the package directs. Drain and rinse with cold water.
  • Meanwhile, in a large Dutch oven, melt 4 tablespoons of the butter over medium-high heat, and add the mushrooms. Season lightly with salt, and cook, stirring only occasionally, until the mushrooms have released their liquid and have started to brown deeply, 8 to 11 minutes. Add the garlic and cook, stirring, until fragrant, 1 minute. Add the flour and curry powder, if using. Stir well, until the flour and the mushrooms are evenly combined and the flour is evenly moistened, about 1 minute. Whisk in the white wine, and let it come to a boil, whisking constantly. Let the wine bubble to reduce slightly, 2 minutes. Whisk in the chicken stock, and let it come to a boil. Cook until it thickens noticeably, about 5 minutes.
  • Reduce the heat to low. Whisk in the chunks of cream cheese (don't worry if the cream cheese appears curdled), then fold in the turkey, peas and the cheeses. Season generously with black pepper. Add the drained pasta and toss with tongs to combine. Taste and add salt if necessary.
  • Transfer to a 9-by-13-inch baking dish. Melt the remaining tablespoon of butter in a small bowl in the microwave, and toss it together with the panko and the almonds. Sprinkle the panko-almond mixture all over the top of the pasta, and bake until bubbly and browned on top, about 25 minutes. Let the casserole rest for 5 minutes before serving. It will be very creamy at first but will firm up as it cools.

  • Combine cornstarch and broth until smooth; stir into the onion mixture. Bring to a boil; cook and stir for 2 minutes or until thickened.
  • Reduce heat to low. Add the milk; cook and stir for 2-3 minutes.
