BACON-CHEESE BISCUITS

Number Of Ingredients 9

4 slices thick-cut bacon
2 cups all-purpose flour, plus more for dusting
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon kosher salt
1 tablespoon chopped fresh chives
6 tablespoons cold unsalted butter, cut into small pieces, plus melted butter for brushing
1 cup grated Colby or cheddar cheese
1 cup buttermilk

Steps:

  • Preheat the oven to 425 degrees F. Cook the bacon in a skillet over medium heat until crisp. Drain on paper towels and reserve 2 tablespoons drippings. Finely chop the bacon.
  • Whisk the flour, baking powder, baking soda, salt, chopped bacon and chives in a medium bowl. Using a pastry blender or your fingers, work the butter into the flour mixture until it is in pea-size pieces. Stir in the cheese with a wooden spoon. Add the buttermilk and reserved bacon drippings and gently mix until just moistened. The dough will be loose.
  • Turn the dough out onto a lightly floured surface and knead 3 to 5 times, just until it comes together. (Don't overknead or the biscuits will be tough.) Roll out to 1/2 inch thick, then cut out biscuits using a floured 2-inch-round cutter. Arrange on an ungreased baking sheet. Reroll the scraps and cut out more biscuits. Brush the tops with melted butter.
  • Bake the biscuits until golden brown, 12 to 15 minutes. Serve warm.

QUICK BACON-CHEDDAR BISCUITS

2 cups flour
1 tablespoon baking powder
Kosher salt
1 teaspoon paprika
1 teaspoon onion powder
1 cup milk
1/2 cup butter, melted
8 strips bacon, cooked until crispy and crumbled
1 cup shredded Cheddar cheese
1 egg

Steps:

  • Heat the oven to 425 degrees F.
  • In a large bowl add the flour, baking powder, 1 teaspoon of salt, paprika, and onion powder. Mix to blend then make a well in the center of the bowl and add the milk, butter, bacon and cheese. Mix gently with a wooden spoon. The dough will be wet and sticky. Using a 1/4 cup measure or ice cream scoop, portion the batter onto a baking sheet, leaving an inch or so around each biscuit.
  • In a small bowl, beat the egg with a splash of water and then brush this mixture on the top of each biscuit. Bake in the oven until the biscuits are golden brown and a toothpick inserted in the center of one comes out clean, 20 to 22 minutes.

CANADIAN BACON, EGG AND CHEESE SLIDERS

6 large eggs
1/3 cup half-and-half
Kosher salt
6 slices Canadian bacon
2 tablespoons unsalted butter, at room temperature
12 slider or sweet Hawaiian rolls, split
3 slices cheddar cheese, each cut into 4 squares
Strawberries and grapes, for serving

Steps:

  • Preheat the oven to 350˚ F. Lightly coat an 8-inch square baking dish with cooking spray. Whisk the eggs, half-and-half and 1/2 teaspoon salt in a medium bowl. Pour into the pan and bake until puffed and set, 16 to 18 minutes. Let cool slightly.
  • Meanwhile, heat a large skillet over medium heat and coat with cooking spray. Add the Canadian bacon and cook, flipping, until browned, about 1 minute per side. Remove to a cutting board and cut each slice into 4 pieces.
  • Spread the butter on the cut sides of the rolls. Slice the baked eggs into 12 small pieces and lift out of the pan with a spatula; place one on each roll bottom. Top each with a piece of cheese, 2 pieces Canadian bacon and the roll tops. Thread strawberries and grapes onto skewers and serve with the sliders.

My own creation, easy and versatile.My husband loves Canadian Bacon and these are light and fluffy and go well with any breakfast or just on their own. Take them to work and pop them in the microwave. Bring to a brunch and share them with your friends. We had them for dinner. My husband really enjoyed them.

1 8 pack of grand biscuits
4 pieces of canadian bacon cut up in fours
4-5 eggs beaten
8 cubes of your favorite cheses ( i used colby jack)

Steps:

  • 1. Preheat oven to 400F. In a bowl beat eggs with salt & peper and set aside.
  • 2. Seperate biscuits and flatten in a greased cup cake pan bringing dough up the sides.
  • 3. Add canadian bacon and cheese. Pour egg mixture over meat and cheese. Be careful to not over fill. Bake for 30 minutes or until thorouly cooked. Let set for 10 minutes. Remove from pan on to a plate. Enjoy

  • Drop heaping tablespoonfuls on an ungreased baking sheet.

When ready to enjoy, defrost, wrap in paper towel and zap for a minute or two in the microwave. This recipe is for 6 but can easily be doubled to 12. The biscuits can be baked along with the eggs. Enjoy!

6 biscuits, baked and cooled (I used Sourdough Whole Wheat Biscuits.)
6 slices Canadian bacon
5 eggs
1/4 cup milk
salt
pepper
1/4 cup cheddar cheese, grated

Steps:

  • Preheat oven to 425 degrees.
  • Spray a 6 cup muffin tin with non-stick cooking spray and set aside.
  • In a small bowl, beat together the eggs and milk; salt and pepper to taste.
  • Divide the egg mixture evenly between the prepared muffin tins and place in preheated oven.
  • Bake for 8 to 10 minutes or until eggs are set; immediately sprinkle with grated cheese.
  • Remove from muffin tin and allow eggs to cool completely.
  • Split the biscuits and top each with a slice of the Canadian bacon.
  • When the eggs are cooled, place one on top of each slice of bacon.
  • Wrap in foil and freeze until ready to enjoy.
  • When ready to reheat, place in the refrigerator the night before, in the morning, wrap in a paper towel and reheat in the microwave at 70 percent power for 1 minute or until heated, turning after 30 seconds.

  • In a large bowl, combine the flour, sugar and baking soda. Cut in shortening until mixture resembles coarse crumbs. Stir in buttermilk just until combined.
