These delicious fritters were made weekly by the school cafeteria cook who, "after hours" let me sample them ...ummmmm so good and easy to make. I never want to lose this recipe! Try them they're nice with a pork dinner .. but my family loves them for dessert...you decide.

1 cup flour
1 1/2 teaspoons baking powder
3 tablespoons sugar
1/4 teaspoon salt
1 egg (beaten)
1/3 cup milk
1 cup apple (diced)
1 cup cooking oil
confectioners' sugar (for dusting)

Steps:

  • Measure and sift all dry ingredients.
  • Beat eggs and milk together; slowly incorporating the dry ingredients.
  • Add the chopped apples.
  • In a heavy skillet on the stovetop, heat cooking oil over medium-high heat.
  • Drop teaspoon full of apple-batter into hot oil and fry until golden brown in color- 3 to 4 minutes on each side.
  • Remove from oil and drain on brown paper.
  • Cool and sprinkle with powdered sugar.
  • Makes 12 small fritters.
  • Eliminate the sugar and serve with pork roast.

1 1/2 cups flour
1/2 cup quick-cooking yellow corn grits
2 1/2 teaspoons baking powder
1 tablespoon sugar
1/4 teaspoon salt
2 1/4 cups plain yogurt
10 ounces cooked pork loin, cut in 1/4-inch cubes
2 red apples, cut in 1/4-inch cubes
vegetable oil
honey

Steps:

  • In a large bowl, combine flour, grits, baking powder, sugar, and salt. Mix well. Add 2 cups of yogurt, pork, and apples. Mix well.
  • In deep fryer or 4-quart heavy saucepan, heat about one inch of oil to 350ºF. Drop some of the batter by large serving spoons (about 1/4 cup) gently into the oil. Make only several fritters at a time. Do not overcrowd pan or fritters won't be crisp. Cook for about 3 to 4 minutes on each side or until golden brown. To avoid splattering hot oil, use a spatula and a slotted spoon to flip the fritters. Drain on paper towels and keep warm.
  • Serve fritters with honey and a dollop of the remaining yogurt.

October is "apple season" on Amish farms around the Midwest. Amish homemakers love this time of year for making apple butter, cider and dessert treats like these fritters.

1 cup flour, sifted
1 1/2 teaspoons baking powder
3 tablespoons confectioners' sugar
1/4 teaspoon salt
1/4 cup milk
1 egg, well-beaten
2 medium tart apples, thinly sliced

Steps:

  • Sift all the dry ingredients into a bowl.
  • Stir the milk into the egg.
  • Add to dry ingredients and mix well.
  • Drop batter by spoonfuls into deep fat heated to 365 and fry about 3 minutes.
  • Turn fritters during frying.
  • Drain on absorbent paper.

I was just recently told that Apple Pie is a Canadian "invention"... in my search to preserve part of my American dream of baseball and apple pie... I found this recipe that is truly Canadian. In fact, I can now live in denial as my search went no further than the fritter as I abandoned all research to whip these up... These are so delicious and so delicate - just in time for apple season too..... I raise my glass of Fosters (Australian for Canadian Beer) in thanks and gratitude!

2 large eggs
2 tablespoons sugar
3/4 cup dry white wine
1 cup apple juice
1 pinch salt
2 teaspoons grated lemon zest
2 teaspoons grated orange zest
3 cups all-purpose flour, sifted
2 lbs tart apples, peeled, cored and cut into eighths (such as Granny Smith or MacIntosh)
vegetable oil, for deep-frying
1/4 cup confectioners' sugar (to garnish)
1 cup heavy cream, whipped to soft peaks, for garnish

Steps:

  • Whisk the egg and the sugar in a mixing bowl until foamy and slightly thickened, about 5 minutes. Add the wine, apple juice, salt, lemon and orange zests and mix thoroughly. Add the flour and blend until the batter is smooth. Allow the batter to rest, covered, for 1 hour.Combine the apple wedges and the batter. Coat the fruit gently but thoroughly with batter.
  • Pour oil to a depth of 5 inches in a deep pot. Heat over medium heat until it registers to 350º F on a deep-frying thermometer.
  • To make the fritters, use a large spoon to scoop up about four apple wedges and use another spoon to push the mixture gently into the oil. Continue adding fritters to the hot oil, but do not overcrowd.
  • Deep fry until light golden brown, about 5 minutes. Drain the fritters on absorbent towels. Repeat with the remaining fruit and batter. It is best to serve fritters immediately, but if necessary, they may be kept warm in a 200° F oven while finishing the remaining fritters; leave uncovered to keep fritters crisp.Dust lightly with confectioner's sugar and serve with whipped cream.
