CRESCENT ROLL-UP SANDWICHES

This is a very easy recipe that I got from a neighbor--makes a great lunch with some soup or a salad! I think she said that she got the recipe from Pillsbury... which makes sense as this is a great way to use crescent rolls! I have made these as ham and swiss, turkey and swiss, roast beef and cheddar. There are so many options! Note: You can make these more of a meal sandwich (for the guys) if you use the large crescet rolls and double the meat and cheese for each sandwich. (So 12 slices of meat with 6 slices of cheese.)

1 (8 ounce) can crescent rolls (8 rolls)
1/4 lb sliced meat (8 slices)
1/4 lb sliced cheese (4 slices cut in half diagonally)
2 tablespoons mustard (optional)

Steps:

  • Preheat oven to 350 degrees F.
  • Seperate the crescent roll dough into the 8 triangles.
  • Spread the mustard on the dough (if you are using it).
  • Put 1 piece of meat and 1 piece of cheese on each roll, folding the meat over the cheese to copy the crescent triangle.
  • Roll up the crescent roll, wide to narrow, and place on a cookie sheet with the point of the crescent on the bottom.
  • Bake 15 to 20 minutes or until golden.
  • Serve warm.

5 tablespoons butter
3 ounces cream cheese, softened
2 cups cooked chicken
1/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons milk
1 tablespoon chopped onion
1 tablespoon chopped pimiento
2 (8 ounce) cans crescent rolls
3/4 cup seasoned croutons, crushed

Steps:

  • In a bowl, blend the cheese and 2 tablespoons of the butter until smooth.
  • Add the next 6 ingredients. Mix well.
  • Separate dough into four pieces, then half them. Fill with the chicken mixture. Pull the dough to cover the meat. (It should look like a triangle now. ) Press edges to seal.
  • Brush the top with the remaining butter and then with the crushed croutons or you can use Parmesan cheese.
  • Bake at 325 for 15-20 minutes on a cookie sheet.

1 (8 ounce) can Pillsbury Refrigerated Crescent Dinner Rolls
4 slices kraft pasteurized process American cheese (1 oz. each) or 4 slices natural cheddar cheese (1 oz. each)
1/2 lb bacon, fried, drained and crumbled (8 slices)
1 tablespoon chopped onions or 1/2 teaspoon mccormick or schilling instant minced onion
1/2-1 teaspoon mccormick or schilling celery salt
1/2 cup milk
2 eggs

Steps:

  • Heat oven to 375 degrees.
  • Separate crescent dough into four large rectangles.
  • Place two rectangles in ungreased 8-or9-inch square pan; press over bottom and 1/2 inch up sides to form crust, sealing perforations.
  • Place cheese slices over dough.
  • Sprinkle with bacon and onions.
  • Blend celery salt, milk and eggs; pour over bacon and onion.
  • Separate remaining crescent dough into triangles; arrange triangles over bacon-egg mixture; do not seal.
  • Bake at 375 degrees for 30 to 35 minutes or until golden brown and filling is set.

4 ounces refrigerated crescent dinner rolls
1/2 cup chicken, finely chopped
1/4 cup celery, finely chopped
2 tablespoons low-fat mayonnaise
1 tablespoon pimiento, chopped
1/2 teaspoon lemon juice
1/4 teaspoon salt
1/8 teaspoon pepper
2 teaspoons mayonnaise
2 slices reduced-fat bacon, cooked crisp
8 slices cucumbers, cut thin

Steps:

  • Heat oven to 325°F
  • Separate dough into 4 triangles.
  • Place 2 triangles together. one on top of the other; press to seal edges.
  • Roll up starting at shortest side of the triangle to the opposite side of triangle and rolling to opposite point.
  • Place point side down on ungreased cookie sheet.
  • Repeat using remaining 2 triangles.
  • Bake at 325°F for 20 to 30 minutes or until crescents are golden brown.
  • Cool.
  • In a small bowl, combine all remaining ingredients except 2 teaspoons mayonnaise, bacon and cucumber; blend well.
  • Cut crescents in half lengthwise; spread 1 teaspoon mayonnaise on cut side of each top half.
  • Place chicken mixture on the bottom half of each crescent.
  • Top each with bacon slice, 4 cucumber slices and top of crescent.
