SQUID INK PASTA WITH CALAMARI AND CHORIZO



Squid Ink Pasta with Calamari and Chorizo image

Number Of Ingredients 15

2 tablespoons extra-virgin olive oil, plus more for drizzling
1 ounce ground fresh chorizo
1 ounce red onion, thinly sliced
4 cloves garlic, sliced
2 ounces dry white wine
Kosher salt
2 portions Fresh Squid Ink Pasta, about 8 ounces each, recipe follows
4 ounces calamari rings and tentacles (4 squid)
1 pinch red pepper flakes
1 tablespoon sliced scallions (on the bias)
10 ounces (about 2 cups) all-purpose flour, plus more for dusting
2 whole large eggs (about 4 ounces)
4 yolks from 4 large eggs (about 2 1/2 ounces)
4 teaspoons squid ink
1 teaspoon kosher salt

Steps:

  • Heat the oil in a small saute pan over medium-high heat. Add the chorizo and cook until well browned, breaking up the sausage as it cooks with a wooden spoon. Add the onions and garlic and saute until translucent, about 3 minutes. Add the white wine and continue cooking about 30 seconds; the mixture should not be dry. Turn off the heat and set aside.
  • Bring a large pot of salted water to a rolling boil. Add the pasta and cook about 1 minute.
  • Turn the chorizo mixture back on. Add the calamari and red pepper flakes and saute until just cooked through. Drain the pasta and add to the pan along with 1 ounce of the pasta water. Cook for 1 minute on high heat to coat the pasta and finish the cooking process. Add the scallions and toss.
  • Place in a bowl and finish with another drizzle of oil and serve.
  • For the squid ink pasta dough: On a large, clean work surface, pour the flour in a mound. Make a well in the center about 4 inches wide. Pour the whole eggs, egg yolks, squid ink and salt into the well and, using a fork, beat thoroughly. When combined, gradually incorporate the flour into the eggs until a wet, sticky dough has formed. Fold any additional flour into the dough as needed while kneading, turning the dough roughly 45 degrees each time, for 2 to 5 minutes.
  • Wrap the ball of dough tightly in plastic wrap and let it rest on the countertop for 30 minutes.
  • To roll the noodles: Place a sheet of parchment paper on a tray or cutting board and dust lightly with flour. Unwrap the rested dough and cut into quarters. Set one quarter on the work surface and re-wrap the remaining dough. With a rolling pin, flatten the quarter of dough into an oblong shape about 1/2-inch thick.
  • Set a pasta maker to the widest setting and pass the dough three times through the machine at this setting. Narrow the setting by one notch and repeat. Repeat once more (the dough should now have passed through the third widest setting). Continue passing the dough through the rollers, reducing the thickness by one setting each time, until it reaches the desired thickness. It should now be very delicate and elastic to the touch and slightly translucent.
  • To cut the noodles: Adjust the pasta machine to the noodle setting of your choice. Working with one dough segment at a time, feed the dough through the pasta cutter. Alternatively, cut the folded dough by hand with a chef's knife to desired noodle width. Yield: 4 servings.

SEARED CALAMARI WITH WHITE BEANS AND CHORIZO

12 ounces calamari, cut into 1/4-inch rings
1/2 tablespoon chopped garlic
1/4 teaspoon red chili flakes
Sea salt and freshly ground black pepper

4 ounces chorizo Bilbao, sliced into 1/4-inch disks
1 tablespoon olive oil
1/2 cup cooked white beans, in their juice
1 red bell pepper, roasted, seeded, cut into 1/4-inch dice
1 tablespoon chopped parsley leaves
1 tablespoon freshly squeezed lemon juice
1 tablespoon unsalted butter
Croutons, for garnish, recipe follows
3 tablespoons olive oil
1 garlic clove, creamed
1 tablespoon chopped fresh parsley leaves
Sea salt and freshly ground black pepper
1 baguette

Steps:

  • In a small bowl, mix together the calamari rings, garlic, chili flakes, sea salt, and freshly ground black pepper. Set aside.
  • Heat a 12-inch skillet over medium-high heat. Toss in the chorizo and cook, shaking frequently, for 3 to 5 minutes or until slightly browned. Transfer the chorizo to a plate lined with a paper towel. Wipe out the skillet and return to high heat.
  • Add the oil to the skillet and heat until very hot. Add the calamari mixture to the skillet; be careful because the pan will flame. Saute for a few minutes and then add the chorizo, beans and their juice, red bell peppers, parsley, lemon juice, and butter. Bring to a boil and simmer for 1 to 2 minutes. Adjust seasonings. If there isn't enough liquid, add a few tablespoons of clam juice or water.
  • To serve, pour the stew into a shallow bowl and pass the croutons.
  • Preheat oven to 350 degrees F.
  • Mix the olive oil, garlic, parsley, sea salt, and freshly ground black pepper together. Cut the baguette into 1/4-inch slices at a severe angle. Lay baguette slices on a cookie sheet and brush with the seasoned oil. Bake for 10 to 12 minutes or until golden.

PIZZA WITH FRIED CALAMARI (FROM AL FORNO)

Pizza Margherita, recipe follows
5 ounces calamari, tubes and tenticles cleaned
1 cup all-purpose flour
Hot Pepper Infused olive oil, recipe follows
Sliced scallions
6 ounces Pizza Dough, recipe follows
1/4 cup virgin olive oil, for brushing and drizzling
1/2 teaspoon minced fresh garlic
1/2 cup loosely packed shredded fontina
2 tablespoons freshly grated Pecorino Romano
6 tablespoons chopped canned tomatoes, in heavy puree
8 basil leaves
1 tablespoon active dry yeast
6 cups high-gluten flour
2 1/2 teaspoons kosher salt
Extra-virgin olive oil
3 cups olive oil
1/4 cup hot Hungarian paprika
1/4 cup crushed red pepper flakes
3 garlic cloves, peeled and trimmed

Steps:

  • Cut the tubes into rings. Lightly coat the squid with flour and fry 360 degree F oil until golden brown. We make this pizza the same way as the margarita except that the spicy oil is drizzled on instead of just olive oil and then the calamari is placed on top, and garnished with scallions.
  • Prepare a hot charcoal fire, setting the grill rack 3 to 4 inches above the coals.
  • On a large, oiled, inverted baking sheet, spread and flatten the pizza dough with your hands into a 10 to 12-inch free-form circle, 1/8-inch thick. Do not make a lip. You may end up with a rectangle rather than a circle; the shape is unimportant, but do take care to maintain an even thickness.
  • When the fire is hot (when you can hold your hand over the coals for 3 to 4 seconds at a distance of 5 inches), use your fingertips to lift the dough gently by the 2 corners closest to you, and drape in onto the grill. Catch the loose edge on the grill first and slide the remaining dough into place over the fire. Within a minute the dough will puff slightly, the underside will stiffen, and grill marks will appear.
  • Using tongs, immediately flip the crust over, onto the coolest part of the grill. Quickly brush the grilled surface with olive oil. Scatter the garlic and cheeses over the dough, and spoon dollops of tomato over the cheese. Do not cover the entire surface of the pizza with tomatoes. Finally, drizzle the pizza with 1 to 2 tablespoons of olive oil.
  • Slide the pizza back toward the hot coals, but not directly over them. Using tongs, rotate the pizza frequently so that different sections receive high heat; check the underside often to see that it is not burning. The pizza is done when the top is bubbly and the cheese melted, about 6 to 8 minutes. Serve at once, topped with the basil leaves and additional olive oil, if desired.
  • Pizza Dough: Sprinkle the yeast over 1/2 cup warm (105 to 110 degrees F) water and allow it to dissolve and activate, about 5 minutes. Combine the flour and salt and mound it onto a cool work surface creating a high walled well in the center. Combine the yeast mixture with 1 1/2 cups of cool water and pour into the well. Slowly begin to mix the water and flour, a little at a time, moving your fingers in short, counter clockwise circles around the border of the water. When the dough is firm enough to hold it's shape, scrape the remaining flour over it and knead until the mass is smooth and shiny, approximately 7 minutes. Transfer the dough to a bowl that has been brushed with olive oil. Brush the top of the dough with olive oil to prevent a skin from forming, cover the bowl with plastic wrap, and let rise in a warm place away from drafts until doubled in bulk, about 2 hours. Punch down the dough and knead once more. Let the dough rise again for about 40 minutes, punch down again and form dough into 4 balls.
  • Combine all the ingredients in a heavy saucepan. Bring to a boil, lower the heat to very low, and gently simmer for 10 minutes. Remove from the heat and set aside for 30 minutes so the flavors continue to infuse the oil as it cools
  • Strain the oil into a clean jar. When it has cooled to room temperature, cover and refrigerate.

CHORIZO PIZZA WITH PEPPERS & MANCHEGO

½ quantity pizza dough (see recipe in 'goes well with', right), divided into 2 balls
4 cooking chorizo sausages
4-6 peeled plum tomato from a can, drained
100g manchego , shaved (reserve a few shavings to serve)
100g firm mozzarella , cut into 2cm cubes
½ Romero pepper , thinly sliced
pinch of chilli flakes (optional)
2 handfuls spinach leaves

Steps:

  • Prepare the dough following the instructions in our basic pizza dough recipe in 'goes well with', right.
  • Thickly slice the chorizo and pan-fry until crisp. Remove and set aside. Cook one side of the pizzas.
  • Crush 2-3 of the tomatoes with your hands and drain in a sieve, then spread on the cooked side of the pizzas. Top with both cheeses, the pepper and chorizo. Season and add chilli flakes if you like it hot. Grill, covered, until the cheese is melted. Finish with the spinach leaves and shavings of manchego.

TENDER SUMMER SQUID WITH CHORIZO & AÏOLI

215g pack cooking chorizo , skin removed
1 onion , finely chopped
few thyme sprigs , leaves only
1 tsp sweet smoked paprika , plus a little for the aïoli
50ml dry white wine
450g cherry vine tomato
500g prepared squid , tubes cut into rings, plus tentacles
450g large new potato , peeled and cut into bite-sized chunks
small pack flat-leaf parsley , leaves roughly chopped
1 garlic clove , crushed
4 tbsp good mayonnaise , ideally olive oil-based
squeeze of lemon juice , plus extra to serve
crusty bread , to serve

Steps:

  • Heat a large wide pan. Add the chorizo and fry for 5 mins, using your spatula to break up, until golden and oozing with oil.
  • If there's more than 2 tbsp of oil in the pan, spoon out the excess. Add the onion and thyme and soften for 5 mins.
  • Stir in the paprika, cook for 1 min, then splash in the wine and scrape any bits from the bottom of the pan. Add the tomatoes, cover with a lid and simmer for 10 mins until the tomatoes have collapsed. Don't season with salt, as the sausages are salty enough for now.
  • Add the squid, make sure it's nestled well into the juices, then cover again and simmer for 1 hr. Add the potatoes, then cook for another 30 mins, adding a splash of water if it looks dry. Mix the garlic, mayo and lemon juice, then set aside. Sprinkle with a little paprika, if you like.
  • Test the squid; it should be so tender a spoon cuts through it, then check the potatoes are cooked. Stir in the parsley and serve with a dollop of the aïoli, a squeeze of lemon and some crusty bread.

1/2 red pepper, cut into thin strips
1/2 onion, thinly sliced
1-1/2 cups sliced fresh mushrooms
1 fresh jalapeño pepper, seeded, sliced
1 ready-to-use baked pizza crust (12 inch)
1/2 tsp. olive oil
1 cup CLASSICO Traditional Pizza Sauce
1-1/2 cups KRAFT Mexican Style Finely Shredded Four Cheese
1 plum tomato, thinly sliced
1 Tbsp. chopped cilantro

Steps:

  • Heat oven to 425ºF.
  • Cook chorizo in large skillet on medium heat 5 to 7 min. or until done, stirring occasionally; drain. Add red peppers and onions; cook 3 min., stirring occasionally. Stir in mushrooms and jalapeño peppers; cook 4 to 5 min. or until mushrooms are tender.
  • Place pizza crust on baking sheet; brush edge with oil. Spread crust with sauce; top with 3/4 cup cheese, chorizo mixture, tomatoes and remaining cheese.
  • Bake 12 to 14 min. or until crust is golden brown and cheese is melted. Sprinkle with cilantro.
