CALABACITAS CON QUESO RECIPE
This Mexican calabacitas con queso recipe is perfect to serve as a meatless main along with warm tortillas, rice, and salsa. As a side for your favorite protein, or also used to make tacos, quesadillas, and tostadas!

Steps:
- Heat oil on a pan or cast iron skillet over medium heat.
- Add poblano, jalapeño peppers, and onions. Sauté for 5 minutes or until onions become transparent and peppers start to soften.
- Add calabacitas squash and cook, stirring constantly for 3-4 minutes.
- Add tomatoes, garlic, and corn. Season with cumin, salt, and pepper.
- Mix well and allow everything to cook for 3-4 minutes stirring constantly.
- Add vegetable stock (or water), mix well and bring to a simmer.
- Cover and cook stirring from time to time until all vegetables are tender.
- Adjust with salt and pepper, add ⅔ of cheese and mix well.
- Add the remaining cheese on top, cover the pan, and turn off the heat.
- Allow resting for a couple of minutes or until cheese melts on top.
- Serve as suggested in the recipe notes below.

- Preheat oven to 350 degrees.
- In large saute pan place butter and heat to medium high until melted and hot. Add zucchini, squash, and corn and saute for two minutes until just warmed.
- Add green chiles and stir well. Cook for five minutes.
- Place mixture in baking dish. Sprinkle with jack cheese and cheddar.
- Bake for 10-15 minutes until cheese is melted.

- Calienta el horno a 350º F.
- Cocina las calabacitas en agua hirviendo en una cacerola grande de 5 a 7 min. o hasta que se ablanden; escúrrelas y reserva 1 taza del agua. Deja enfriar las calabacitas.
- Córtale una rebanada fina al extremo del cabito de cada calabacita ; ahuécalas hasta que tengan 1/4 pulg. de grosor. Pica la calabacita que sacaste; combínala con el queso mozzarella y con el feta.
- Calienta el aceite en una sartén mediana a fuego medio. Agrega la cebolla, los chiles y el ajo; cocínalos 3 min. o hasta quelas cebollas estén tiernas pero crujientes. Retíralos del fuego. Agrega la mitad de la mezcla de cebolla a la mezcla de calabacitas; rellena las calabacitas con esta mezcla. Ponlas en un molde para hornear de 13x9 pulgs.
- Mezcla el agua que reservaste, la salsa de tomate y el resto de la mezcla de cebolla en la licuadora hasta obtener una consistencia homogénea. Viértelo sobre las calabacitas; cubre el molde con papel aluminio.
- Hornea las calabacitas de 25 a 30 min. o hasta que se terminen de calentar. Espolvoréalas con el queso parmesano. Sírvelas con arroz.

I think that New Mexico has a law on the books that says that everyone has to eat squash regularly. That's okay, because once you've tried this 'squash and chiles', you will like squash! PS zucchini is a green squash...or you can use yellow squash.

- Saute the onion and garlic in the bacon grease or oil until translucent.
- Add the chiles, zucchini, and corn.
- Simmer until the squash is tender, about 20 minutes.
- Add the cream.
- Raise heat until cream starts to boil.

- Heat oil or lard in skillet and cook onions until tender.
- Add garlic, zucchini, and tomato; cook until veggies are crisp-tender.
- Preheat oven to 350°F.
- In a large ovenproof casserole, mix together zucchini mixture with chopped poblanos and corn; season with salt.
- Cover with shredded cheese.
- Bake at 350F for 15-20 minutes or until warmed through and cheese starts to color.
- For Vegetarian simply use the oil or a vegetable based shortening such as Crisco for the Lard.

- Heat oil over low heat in a non-stick skillet. Sauté onion in oil.
- Add zucchini and cook over medium heat for 5 minutes, stirring occasionally.
- Add garlic to green chile and add to zucchini mixture.
- Cook for 3 minutes, stirring occasionally.
- Add corn, salt and pepper.
- Cover and cook over low heat for 8 minutes or until squash is tender.
