CHEESY SPINACH AND BEEF CASSEROLE (SPINACH FANDANGO)
A cozy, hearty spinach and beef casserole with fresh mushrooms and melty jack cheese. You call it what you want, we call it Spinach Fandango.

Steps:
- Preheat oven to 350F.
- In a large skillet or dutch oven, combine the 1lb ground beef, 1 diced onion, 8oz fresh sliced mushrooms, 1 clove of minced garlic, and 1 tsp oregano and cook over medium heat until meat is browned and the vegetables are softened and fragrant.
- While the beef mixture is browning, microwave the frozen spinach to defrost it. I microwaved it in a microwave safe bowl for 4 minutes. Then, remove from the microwave and over the sink, press the spinach up against the sides of the bowl to extract excess liquid and drain off the liquid. You can also use cheesecloth or a sieve if you prefer.
- Once the spinach is fully strained, add it to the browned beef mixture and toss to combine.
- Next, combine the rice, 1 tsp oregano, 1 cup sour cream, 1 Tbs butter and 3/4 cup of milk in a small bowl and stir until combined and creamy. If the rice isn't warm and the butter doesn't melt, you can microwave it for 45 seconds.
- Add the creamy rice mix to the beef and spinach mixture and then pour it all into a medium to large sized rectangular casserole dish and spread evenly to all sides.
- Sprinkle 8 oz shredded Monterrey Jack Cheese evenly over the top of the casserole.
- Bake for 35 - 40 minutes or until the casserole is bubbling and the cheese on top is melty and slightly browned.
- Allow to rest for 5 minutes after removing from the oven before slicing.

- Make the meat filling. Peel & chop onion, garlic (and mushrooms if using) then add to a pan with 1 tablespoon olive oil.
- Lightly fry until the onions are soft and translucent (not brown as this will make them taste bitter)
- Add your meat and cornstarch and cook, stirring in the pan with the other ingredients. Add the spinach and Worcestershire Sauce and leave to simmer very low whilst you make the cheese sauce. Season if you wish with salt & pepper.
- Make the Cheese Sauce. Melt butter in pan under gentle heat
- Add Flour and beat until smooth paste and take pan off the heat.
- Slowly add the milk and broth (combine them in to one jug for ease), a little at a time and combine until smooth, then add a little more of the milk / broth, combine. Continue until all the milk / broth is used.
- Return to gentle heat, and keep stirring until thick This will take about 5 minutes so be patient and keep stirring!. Season with salt and pepper if you wish. (your cheese may be salty so taste the sauce first!)
- Add 3/4 of the grated cheese and combine. The remaining 1/4 of the cheese is for the top of the bake.
- Build the Pasta Bake. Preheat oven to 170 C / 325 F / Gas 3
- Start with a layer of 1/3 of the meat sauce on the bottom of the pan, then a layer of cooked pasta, then cheese sauce. Repeat these layers, ending with the cheese sauce as the final top layer. Then sprinkle the remaining grated cheese on top.
- *** you should be able to make 3 layers altogether.
- Place in the oven for 45 minutes. I would advise to place the bake on a baking tray to catch any drips. When done, remove and leave to set for 30 minutes. If you try and cut the bake when it is piping hot it is too slushy. Allow to firm up a little then you can make nice portions and get the bake from the pan using a fish slice.

- Place the beef, bacon, onion and garlic in a fry pan and cook gently until meat has changed colour and onion is softened.

I was surprised at how few recipes there were on here for ground beef and spinach with pasta, aside from lasagna and manicotti, so I made this up one night.

Steps:
- Saute the onion in a deep frying pan for 1-2 minutes, then add the ground beef.
- Cook until beef is browned, then add the tomatoes, spices, salt and pepper to taste.
- Simmer for 3-4 minutes, then add the spinach and simmer 3-4 minutes more.
- Adjust seasonings to taste.
- Meanwhile, boil and drain the pasta according to directions on the package.
- Combine the two and place in a baking tray.
- Sprinkle the cheese over the top and bake in a hot oven until melted and the dish is pipping hot, about 5 minutes.
- Serve with a salad and garlic bread.
