Steps:
- Get the rice going. Heat a large pan to medium heat and add olive oil.
- Add onion and jalapeno peppers and cook about 5 minutes to soften.
- Add garlic and cook another minute, until you can smell the yummy garlic.
- Add the rice and stir. Cook for a couple minutes, stirring, to very lightly brown the rice.
- Add the fire roasted tomatoes and vegetable broth. Stir.
- Add corn, peas, Cajun seasonings, cayenne, cumin, salt and pepper, and hot sauce if using. Stir and bring to a quick boil.
- Reduce heat and simmer for about 20 minutes, or until the rice has absorbed all of the liquid and is softened to your liking. If it needs more cooking, add a bit more broth and keep it simmering until you LOVE it.
- While the rice is cooking, bring a large pot of water to a boil.
- Slice the tops off of the bell peppers and remove the innards. Boil them about 5 minutes to slightly soften.
- Preheat oven to 350 degrees.
- Mix the rice and shredded cheese together and stuff each pepper full. You may have extra stuffing, depending on the size of your peppers.
- Bake on a large baking sheet for 30-40 minutes.
- Remove from heat and top with your favorite hot sauce, fresh chopped herbs and spicy chili flakes.

Steps:
- Bring a pot of salted water to a boil. Add the pasta and cook until al dente. Drain the pasta and set aside.
- Meanwhile, heat 2 tablespoon each olive oil and butter in a large cast iron skillet over high heat. Add the green and red bell peppers and mushrooms and sprinkle over the garlic and 2 teaspoons Cajun seasoning. - Reduce the heat to medium-high. Pour in the broth and bring to a boil. Cook for 5 minutes, scraping the bottom of the pan. Reduce heat to medium-low, pour in the heavy cream followed by the tomatoes and cook, stirring constantly, until thickened, 3 minutes. The sauce should be spicy.
- Add the cooked pasta, scallions to the sauce and toss to coat. Season to taste with salt and pepper. Sprinkle over chopped parsley and serve.

- Before the stampede, grab a large Magnalite pot (10-quart) and brown the Andouille sausage (cut in cubes or slices), ground beef and ground pork on high heat (do not drain). The idea here is to get some good browning/sear in the pan so don't fret if it sticks to the bottom, that's the idea. Just don't go overboard and burn it.
- Throw in the celery, onion and garlic, cover, reduce heat and let it do it's thing for 10 minutes at least, stirring frequently.

- Have all your ingredients ready before starting because the roux doesn’t wait! Prep the veggies (keep the cauliflower separated, it goes in after the other veggies) and if you want, mix the spices together, as well as the liquid seasonings (tabasco, liquid smoke, Worcestershire sauce).
- Start with the roux. In a large, heavy-bottom pot, heat oil on medium-high heat. When hot, add the flour and whisk until incorporated. Continue cooking, whisking constantly, for about 20 minutes or until the mixture (called a roux) reaches a dark amber color. Make sure to keep an eye on the roux at all times to make sure it doesn’t burn. Reduce the heat if it’s browning too quickly and starts smelling a bit burnt.
- Once the roux reaches the perfect color, immediately stir in bell pepper, celery, onion, garlic, and okra. Cook for about 5 minutes or until the veggies are softened, stirring every 15 seconds or so.
- Stir in stock and crushed tomatoes. Mix until well combined, then stir in cauliflower, spices and seasonings (paprika, garlic powder, onion powder, oregano, thyme, bay leaf, salt, pepper, Tabasco, liquid smoke and Worcestershire sauce). Bring to a simmer (this will take anywhere for 5 to 10 minutes) and then cook for another 15 minutes or so, until the cauliflower is tender (you should be able to easily pierce the florets with a knife).

- In a nonstick pan, dry-toast the walnuts on medium heat, tossing and flipping them for about four minutes. Remove from heat and place in the bowl of a food processor. Add the oats, tomato paste, tahini, cajun spice blend, sea salt, worchestershire sauce, and liquid smoke. Process, scraping the bowl down as needed until crumbly but holds together after giving it a squeeze in your fist. Add 1/2 the chickpeas, and 1/2 the rice. Set aside. In a large mixing bowl, add the remaining 1/2 of the chickpeas and rice and mash together using a potato masher just a few times to soften (we still want chunks here). Set aside.
- Over the flame of a gas range, roast the jalapeño, turning with tongs as it blackens. You'll hear the pepper pop and smell it's smoky flavor. Once completely black, set it aside to cool while assembling the other ingredients. Cut off the stem and slice it into three chunks.
