Spicy Vegetarian Stuffed Peppers Recipe image

A vegetarian recipe for sweet bell peppers stuffed with spicy rice and cheese, baked, then topped with your favorite hot sauce. These are cheesy and hearty and just the right amount of spicy. Easy to freeze.

1 tablespoon olive oil
1 medium yellow onion (chopped)
2 jalapeno peppers (chopped)
4 cloves garlic (chopped)
3/4 cups long grain rice
12 ounces fire roasted tomatoes ((I used a store bought can))
1.5 cups vegetable broth (+ more as needed)
½ cup frozen corn (- or fresh corn if you can get it!)
½ cup frozen peas
1 tablespoon Cajun seasonings
1 teaspoon cayenne powder
½ teaspoon cumin
Salt and pepper to taste
1-2 tablespoons favorite hot sauce ((If Desired for Extra Spiciness))
1 cup shredded cheese ((Cheddar is good, or Colby or Pepper Jack))
4 bell peppers
Hot Sauce, spicy chili flakes, fresh chopped herbs for serving

Steps:

  • Get the rice going. Heat a large pan to medium heat and add olive oil.
  • Add onion and jalapeno peppers and cook about 5 minutes to soften.
  • Add garlic and cook another minute, until you can smell the yummy garlic.
  • Add the rice and stir. Cook for a couple minutes, stirring, to very lightly brown the rice.
  • Add the fire roasted tomatoes and vegetable broth. Stir.
  • Add corn, peas, Cajun seasonings, cayenne, cumin, salt and pepper, and hot sauce if using. Stir and bring to a quick boil.
  • Reduce heat and simmer for about 20 minutes, or until the rice has absorbed all of the liquid and is softened to your liking. If it needs more cooking, add a bit more broth and keep it simmering until you LOVE it.
  • While the rice is cooking, bring a large pot of water to a boil.
  • Slice the tops off of the bell peppers and remove the innards. Boil them about 5 minutes to slightly soften.
  • Preheat oven to 350 degrees.
  • Mix the rice and shredded cheese together and stuff each pepper full. You may have extra stuffing, depending on the size of your peppers.
  • Bake on a large baking sheet for 30-40 minutes.
  • Remove from heat and top with your favorite hot sauce, fresh chopped herbs and spicy chili flakes.

4 medium baking potatoes, unpeeled, each cut into 8 wedges
4 tsp olive oil
1 red onion, roughly chopped
1 yellow pepper
1 tbsp Cajun spice mix
2 x 410g/14oz cans mixed pulses in water, rinsed and drained
400g can chopped tomatoes
150ml vegetable stock
1 tbsp dark chocolate, chopped
4 tbsp reduced-fat soured cream

Steps:

  • Heat oven to 220C/200C fan/gas 7. Toss the potato wedges in 2 tsp oil and spread out in a single layer on a large baking tray. Cook for 30-35 mins, turning halfway, until tender and golden brown.
  • Meanwhile, for the chilli, put the remaining oil into a casserole dish and fry the onion and pepper for 5 mins. Add Cajun spice, pulses, tomatoes and stock. Cover and simmer for 15-20 mins. Remove casserole from the heat and stir in the chocolate until melted. Ladle the chilli into bowls, top each with 1 tbsp soured cream and serve with the wedges.

2 tablespoons sugar

  • In a Dutch oven, saute onions and green pepper in oil until tender. Add garlic; cook 1 minute longer. 1 teaspoon olive oil
1 pound chicken thighs (chopped - chicken breast is good, too)
Salt and pepper (to taste)
12 ounces andouille ( sliced into ¼ inch slices)
½ cup peanut oil (or vegetable oil)
½ cup flour
1 medium bell pepper (chopped)
1 medium onion (chopped)
1 medium celery stalk (chopped)
3 cloves garlic (chopped)
1 cup okra ( I used frozen)
2 tablespoons Cajun seasoning (or more to taste)
6 cups chicken stock
3 bay leaves
4 tablespoons chopped parsley (+ more for serving)
1 tablespoon filé powder (or to taste if desired)
For Serving: Cooked white rice if desired

Steps:

  • Heat a pan to medium heat. Add 1 teaspoon olive oil and heat.
  • Season chicken with salt and pepper and add to the pan along with the sliced andouille. Cook a couple minutes per side until browned. Set aside until ready to use.
  • Add ½ cup peanut oil to a large pot and heat to medium heat. Add flour and stir. Cook for 20-30 minutes, constantly stirring, until the roux browns to the color of chocolate.
  • Add peppers, onion, celery and garlic. Stir and cook about 5 minutes.
  • Add chicken and andouille. Stir and cook for 1 minute.
  • Add okra, Cajun seasoning and chicken stock. Scrape up the brown bits from the bottom.
  • Add bay leaves and cook at medium-low heat for 1 hour to thicken. You can simmer longer if you'd like.
  • Stir in parsley and cook 5 minutes.
  • Remove from heat and stir in filé powder, if using.
  • Serve into a bowl, over white rice if desired, and garnish with extra parsley.

1 pound fettuccine
3 tablespoons olive oil
3 tablespoons salted butter
1 large green bell pepper, sliced
1 large red bell pepper, sliced
1 pound white mushrooms, quartered
3 cloves garlic, minced
4 teaspoons Cajun seasoning
2 zucchinis, quartered and sliced
2 1/2 cups low-sodium vegetable broth
1 cup heavy cream
4 Roma tomatoes, diced
8 scallions, chopped
Kosher salt and freshly ground black pepper
Chopped fresh parsley, for garnish

Steps:

  • Bring a pot of salted water to a boil. Add the pasta and cook until al dente. Drain the pasta and set aside.
  • Meanwhile, heat 2 tablespoon each olive oil and butter in a large cast iron skillet over high heat. Add the green and red bell peppers and mushrooms and sprinkle over the garlic and 2 teaspoons Cajun seasoning. Let the peppers and mushrooms sit a few seconds, so they start to blacken on the bottom, then cook, stirring gently, about 1 minute.
  • Add the remaining tablespoon of olive oil and butter. Throw in the zucchini, and another 2 teaspoons of Cajun seasoning and cook, stirring, for an additional 1 to 2 minutes.
  • Reduce the heat to medium-high. Pour in the broth and bring to a boil. Cook for 5 minutes, scraping the bottom of the pan. Reduce heat to medium-low, pour in the heavy cream followed by the tomatoes and cook, stirring constantly, until thickened, 3 minutes. The sauce should be spicy.
  • Add the cooked pasta, scallions to the sauce and toss to coat. Season to taste with salt and pepper. Sprinkle over chopped parsley and serve.

8 ounces penne pasta
2 tablespoons unsalted butter

1/4 cup freshly grated Parmesan
Kosher salt and freshly ground black pepper, to taste
2 Roma tomatoes, diced
2 tablespoons chopped fresh parsley leaves

Steps:

  • In a gallon size Ziploc bag, add chicken, 1 tablespoon olive oil and cajun seasoning, shaking to coat thoroughly. Heat remaining 1 tablespoon olive oil in a grill pan over medium high heat. Add chicken and cook, flipping once, until cooked through, about 5-6 minutes on each side. Set aside and keep warm. In a large pot of boiling salted water, cook pasta according to package instructions; drain well. Melt butter in a saucepan over medium heat. Add garlic, and cook, stirring frequently, until fragrant, about 1-2 minutes. Gradually whisk in heavy cream and lemon zest. Cook, whisking constantly, until incorporated, about 1-2 minutes. Stir in Parmesan until slightly thickened, about 1-2 minutes. If the mixture is too thick, add more heavy cream as needed; season with salt and pepper, to taste. Stir in pasta and gently toss to combine. Serve immediately with chicken, garnished with tomatoes and parsley, if desired.

2 tablespoons extra virgin olive oil
2 lbs ground turkey breast
4 celery ribs, chopped

1/4 cup Frank's red hot sauce
2 tablespoons chili powder

1 (28 ounce) can crushed tomatoes

6 cups Fritos corn chips, crushed

Steps:

  • Place the hot links in a large stockpot.
  • Heat 2 T olive oil in a large skillet and add the ground turkey. Break up the meat with the back of a wooden spoon and continue to cook until all the meat is browned.
  • Add the celery, onion, bell peppers and garlic, cook for 3-4 minutes.
  • Put the meat and veggies in the stockpot with the sausage.
  • To the stockpot, add the hot sauce, chili powder, cumin, paprika, cayenne, Creole seasoning, stock, crushed tomatoes, tomato sauce, V8 and both beans. Stir until combined and bring to a bubble.
  • Turn heat down to a simmer and cook for at least 1 hour.
  • Season the chili with salt and pepper. Serve with some crushed Fritos and chopped scallions on top.

Steps:

  • In a large saucepan, heat the vegetable oil. When the oil is hot, add the onions and saute for 3 to 5 minutes, or until the vegetables start to wilt. Season with salt and cayenne. Stir in the stew meat, chili powder, cumin, crushed red pepper, and oregano. Brown the meat for 5 to 6 minutes. Stir in the garlic, tomatoes, tomato paste, and beef stock.   • Mix the masa and water together. Slowly stir in the masa slurry, add the beans, and continue to cook for 30 minutes. Reseason with salt and cayenne. Place a handful of the chips in each shallow bowl. Spoon the chili over the chips. Garnish with the grated cheese, sour cream and jalapenos.
