Steps:
- combine the seasoning mix ingredients in a small bowl and set aside.
- melt the butter in 1 quart saucepan over medium heat.
- add the onions, celery, bell pepper, green onions, garlic, tabasco, worcestershire and seasoning mix.
- saute until mixture starts sticking excessively, about 6 mins, stirring occasionally and scraping the pan bottom well.
- stir in the milk and 1/2 cup catsup.
- continue cooking for about 2 mins, stirring occasionally.
- remove from the heat and allow mixture to cool to room temperature.
- place the ground beef and pork in an ungreased 13 x 9 inch baking pan.
- add the eggs, the cooked vegetable mixture removing the bay leaves, the bread crumbs.
- mix by hand until thoroughly combined in the center of the pan -- shape the mixture into a loaf that is about 1 1/2 inches high x 6 inches wide and 12 inches long.
- bake uncovered at 350 for 25 minutes, then raise heat to 400 and continue cooking until done, about 35 minutes longer.
- serve immediately,.

PAUL PRUDHOMME'S CAJUN MEAT LOAF
I've never been a fan of meat loaf. After all, its a loaf of meat with ketchup on it...or so I thought. My friend made this for me last night and it was so good! The recipe is from Paul Prudhomme (of K-Paul's, New Orleans). Warning: this is very spicy and if you're not used to eating "cajun" type foods, you might want to back off on the cayenne & hot sauce just a bit.

- Combine the seasoning mix ingredients in a small bowl and set aside.
- Melt the butter in a 1-quart saucepan over medium heat. Add the onions, celery, bell peppers, green onions, garlic, Tabasco, Worcestershire and seasoning mix.
- Saute until mixture starts sticking excessively; about 6 minutes, stirring occasionally and scraping the pan bottom well.
- Stir in the milk and catsup.
- Continue cooking for about 2 minutes, stirring occasionally.
- Remove from heat and allow mixture to cool to room temperature. REMOVE BAY LEAVES.
- Place ground beef and pork in an ungreased 9 x 13 inch baking pan.
- Add the eggs, cooked vegetable mixture (cooled) and the bread crumbs. Mix by hand until thoroughly combined.
- In the center of the pan, shape the mixture into a loaf that is about 1 1/2 inches high, 6 inches wide and 12 inches long.
- Bake uncovered at 350° for 25 minutes, then raise heat to 400° and continue to cook until done, about 35 minutes longer.
- Serve Immediately as is or with "Very Hot Cajun Sauce for Beef".
CAJUN STYLE MEATLOAF
This is meatloaf with some kick! The seasonings really bring out the flavor of the meat.

- In a small bowl, combine the bay leaves, salt, cayenne pepper, ground black pepper, ground white pepper, cumin, and nutmeg; set aside.
- Melt the butter or margarine in a saucepan over medium heat. Add the onion, bell pepper, green onions, garlic, hot pepper sauce, Worcestershire sauce, and reserved seasoning mix. Saute until mixture starts sticking to the bottom of the pan, about 6 minutes. Stir in the milk and ketchup; continue cooking for 2 more minutes, stirring occasionally.
- Remove vegetable mixture from heat, and allow to cool to room temperature. Place the beef and sausage in an ungreased 9x13 inch baking dish. Add the eggs, the vegetable mixture, and the bread crumbs. Remove the bay leaves. Mix well by hand, and form into a loaf about 1 1/2 inches high.
- Bake uncovered at 350 degrees F (175 degrees C) for 25 minutes. Then raise heat to 400 degrees F (200 degrees C) and bake for another 35 minutes. Let stand for 5 minutes before serving.

CAJUN TURKEY MEATLOAF

Steps:
- Preheat oven to 375
- Heat 2T butter in a pan over medium heat
- Add carrots, onion, green pepper, and celery and saute till soft, about 10-15 minutes (salt & pepper to taste)
- Add in garlic and cook for 1 more minute
- Remove from heat and let cool
- In a large bowl, combine turkey, Worcestershire, milk, ketchup, eggs, spices, bread crumbs, and veggie mixture
- Combine till incorporated but not over-mixed.
- Transfer mixture to a bread loaf pan, brush remaining ketchup on top and bake for 1hr and 10 minutes
- Let stand for 10-15 minutes to cool and distribute juices, serve immediately or refrigerate for up to 5 days!

CAJUN TURKEY MEATLOAF
Next time you are making turkey meatloaf try kicking it up a notch! While this won't be featured on a Brennan's menu anytime soon it is delicious. The original recipe was from Bon Appetit but I've modified it over time. If you are leary of using only turkey, consider a mix of 1 part beef to 2 parts turkey.

- If you don't have a pre-made Cajun spice blend, there are several good ones on this site. Try Cajun Seasoning Mix #14190 or Cajun Seasoning #33092. Look for one that has no added salt.
- Preheat oven to 350°F
- Optional Step: You can ground the oatmeal in the food processor one or two pulses. You are not looking for flour, just bits of oatmeal somewhat smaller than the whole grain.
- Combine all ingredients except mustard in large bowl. Season with salt and pepper.
- Place meat mixture in a nonstick loaf pan.
- Cover and bake 20 minutes. Scrape off any crud that may appear on the surface. Spread top with mustard.
- Bake uncovered another 35 minutes.
- Remove from pan and cut into slices.

GRANDMA'S CAJUN MEATLOAF
Grandma's cajun meatloaf will be the only meatloaf recipe you need! It's juicy, simple, easy and guaranteed to be the best meatloaf recipe out there!

- In a large mixing bowl, combine the beef, sausage, garlic, nutritional yeast, cajun seasoning, cream cheese, eggs, worcestershire and breadcrumbs. Work together with a wooden spoon for a few minutes. Then mix together with your hands (make sure they're clean!). Place the meatloaf mixture on a parchment paper covered cookie sheet. Mold into a 'loaf' shape. Create on the top a slight indentation with a 'lip' around it. Combine the ketchup and gochujang sauce and spread on top. Bake in a preheated 375 oven for 30 to 35 minutes. Remove. Loosely cover with foil and let the meat rest about 5 minutes. Sprinkle the parsley on top and serve.
CAJUN MEATLOAF
Steps:
- Preheat oven to 400 degrees.Chop all of the fresh vegetables (peppers, onions, celery) into a small dice and mince the garlic. Over medium-high heat, melt 6 tablespoons butter. Once butter begins to start browning, add the diced vegetables and garlic. Add about 1 teaspoon salt. After these have cooked for a few minutes add 1 tablespoon Worcestershire sauce, 1 teaspoon black pepper, 1 teaspoon nutmeg and 1 teaspoon cayenne pepper. If you like it hot, add a couple shakes of your favorite hot sauce. Next add about ½ cup of ketchup. Continue cooking and stirring for a few more minutes. Remove from heat.After allowing the mixture to cool for a couple of minutes, add about ½ cup of milk. Stir until combined. Next add at least 1 cup of breadcrumbs. Continue adding breadcrumbs and stirring until mixture is a nice, thick paste. In a large mixing bowl place the ground beef and pork. Whisk 3 eggs and add to the meat. After allowing the pasty vegetable mixture to cool down a bit, begin incorporating it into the meat. Keep working all of the Cajun-Vegetable mix into the meat until all is blended well.Spray a sheet pan with some non-stick cooking spray. Next, using your hands, form your meat mixture into a loaf on the sheet pan. Make the loaf around 6-8 inches wide and about 1 ½ inches thick. In a small bowl or measuring cup, mix together ¾ cup of ketchup with about 2 tablespoons honey. Slather this sauce over the whole meatloaf.Place in a 400 degree oven for about 40 minutes.

- In a skillet, heat oil at medium heat. Add garlic, onion, carrot, red bell pepper, cajun seasoning, salt and pepper. Cook, stirring from time to time, for about 5 minutes or until onion has soften. Add corn and keep cooking 2 minutes. Let cool a little bit.

A healthy version of meatloaf that does not sacrifice the taste for a healthy alternative! Leftovers are great on onion rolls with lettuce and tomato for a great sandwich treat. Your can use either Creole or Cajun seasoning. I've been making this for years, and I can't remember where I got it. Sometimes, I put slices of pancetta (or bacon) on the outside.
