We rubbed these tender ribs with cayenne, dry mustard, paprika and a few other spices to impart an amazing Cajun flavor. Laissez les bons temps rouler!

2 lb. pork baby back ribs
3 Tbsp. brown sugar
1-1/2 Tbsp. paprika
1-1/2 tsp. ground red pepper (cayenne)
1/2 tsp. dry mustard
1/2 tsp. garlic powder
1/2 tsp. ground black pepper
1/4 cup water
1/2 cup BULL'S-EYE Original Barbecue Sauce, divided

Steps:

  • Heat grill to medium heat.
  • Place ribs in single layer on large sheet heavy-duty foil. Mix next 6 ingredients; rub evenly onto both sides of ribs. Bring up foil sides; double fold top and one end to seal packet. Add water to packet through open end. Double fold remaining end, leaving room for heat circulation inside.
  • Grill 45 min. to 1 hour or until ribs are done. Remove ribs from foil; discard foil.
  • Return ribs to grill; brush with half the barbecue sauce. Grill 15 min., turning and brushing occasionally with remaining barbecue sauce.

1 rack pork baby back ribs
1/2 cup water
1 Tbsp. paprika
2 tsp. salt
2 tsp. garlic powder
1 tsp. pepper
3/4 tsp. onion powder
3/4 tsp. dried leaf oregano
3/4 tsp. dried leaf thyme
1/2 tsp cayenne pepper
1/2 tsp. creole seasoning
1/4 tsp. crushed red pepper flakes
1/4 cup packed brown sugar
1 cup barbecue sauce (use your favorite!)
1/2 tsp. molasses
1/2 tsp. creole seasoning
1/4 tsp. garlic powder
1/8 tsp. onion powder

Steps:

  • Mix the dry rub ingredients in small bowl, and the barbecue sauce ingredients in a small bowl, set aside.
  • Put the ribs on a large cutting board, flip them over so the curved side is up. Remove and discard the silver skin, I do this but getting my fingers under middle edge on one side and pulling up, most of the time I can get it off in one piece. Cut the ribs into 4 even portions. I do this because it fits nicely in the slow cooker.
  • Using your hands rub the dry rub on the ribs on both sides. Place the rib pieces into the slow cooker that has been sprayed with non-stick cooking spray. Take half of the barbecue sauce and spread over the ribs (being careful not to contaminate the rest of the barbecue sauce with the raw meat, that sauce will be used later when the ribs are cooked.) Add the 1/2 cup water around the ribs.
  • Cover and cook on Low for 8 hours without opening the lid during the cooking time.
  • Brush the remaining barbecue sauce on the ribs.
  • Enjoy!

4 teaspoons kosher salt
1 tablespoon dried thyme
1 tablespoon garlic powder
1 tablespoon onion powder

3 slabs pork baby back spareribs
3 cloves garlic (minced)
3 scallions (trimmed and chopped, white and green parts)
1 cup ketchup
¼ cup molasses
¼ cup (½ stick) unsalted butter
½ cup cider vinegar
¼ cup Dijon mustard
1 tablespoon Tabasco or other hot sauce
½ teaspoon coarse or kosher salt

Steps:

  • In a small bowl mix together the paprika, salt, thyme, garlic powder, onion powder, black pepper and cayenne pepper. Remove the membranes from the bone side of all of the racks of ribs using a sharp knife and peeling the membrane off. Rub the seasoning all over the ribs. Place the ribs in a container or a bowl, loosely covered, and refrigerate for 4 to 24 hours.
  • Before you're ready to cook the ribs, make the basting sauce. In a medium saucepan combine the garlic, scallions, ketchup, molasses, butter, vinegar, mustard, or hot sauce and stir over medium heat until the butter is melted. Let simmer for another 15 minutes or so. You can make this ahead of time and reheat.
  • Preheat the oven to 350°F. Line two rimmed baking sheets with aluminum foil. Place the ribs bone side down in a roasting pan and pour 1 cup of water into each pan. Roast until the meat starts to pull away from the bones, about 1 1/2 hours.
  • Remove the pans from the oven and drain off any remaining water. Baste the ribs generously with the sauce. Baste them on all sides with the sauce and bake for another 1/2 hour in the oven, bone side down. You can put them under the broiler for the last 2 minutes or so to give them a nicely caramelized top (watch them carefully so they don't burn!).
  • Let the rib racks sit for 10 minutes before cutting them into individual ribs and serving.

2 cups baby carrots
1 large onion, coarsely chopped
1 large green bell pepper, cut into 1 inch pieces
1 large red bell pepper, cut into 1 inch pieces
2 teaspoons garlic, minced
2 tablespoons cajun seasoning, divided (or Creole Seasoning)
3 1/2-4 lbs pork ribs (country-style)
1 (14 1/2 ounce) can stewed tomatoes, undrained
2 tablespoons water
1 tablespoon water
1 tablespoon cornstarch
hot cooked rice

Steps:

  • Combine carrots, onion, bell peppers, garlic, and 2 tsp Cajun or Creole seasoning in slow cooker; mix well.
  • Trim excess fat from ribs. Cut into individual riblets. Sprinkle 1 tbsp Cajun or Creole seasoning over ribs; place in slow cooker over vegetables. Pour tomatoes with juice over ribs (slow cooker will be full.) Cover; cook on LOW 6 to 8 hours or until ribs are fork tender.
  • Remove ribs and vegetables from cooking liquid to serving platter. Let liquid stand 5 minutes to allow fat to rise. Skim off fat. Blend water, cornstarch, and remaining 1 tsp Cajun or Creole seasoning until smooth; stir into slow cooker. Cook, uncovered, on HIGH 15 to 30 minutes or until sauce is thickened. Return ribs and vegetables to sauce; carefully stir to coat. Serve with rice.

GRILLED COUNTRY-STYLE PORK RIBS

The country-style pork ribs are rubbed with a dry rub, grilled over a two-zone fire, and finished in BBQ sauce. An inexpensive weeknight grilling recipe!

6 country-style pork ribs ((about 3-5 pounds)
6 tablespoons pork dry rub
1 cup barbecue sauce

Steps:

  • Rinse the ribs gently under cool running water in the sink and pat dry with paper towels. (See Notes)
  • Rub the country-style ribs with a dry rub of your choice, using your hands to press it onto the meat so it will adhere. Let them sit out on the counter while preheating the grill or for best results, cover the ribs with plastic wrap refrigerate for two hours or overnight.
  • Light a chimney full of charcoal. When the coals are lit and gray with ash, pour out the coal into the grill and set up the coals for a two-zone fire for indirect heat. Preheat to 350 degrees F.
  • Place the ribs over direct heat on a clean and oiled grate. Grill until golden brown with a slight char on them, about 3 to 5 minutes (depending on size), then flip the ribs and char the other side for an additional 3 to 5 minutes.
  • When both sides of the ribs are charred, move them over to the cooler (indirect) side of the grill. Close the lid and allow the ribs to cook for about 20 to 30 minutes at 350 degrees F. Add charcoal and adjust the vents of the grill to maintain temperature.
  • After 20 minutes, check the temperature of the ribs with an instant-read thermometer. The thickest part of the ribs should read somewhere around 135 to 140 degrees F.
  • At this point, move the ribs back over direct heat and baste with warm barbecue sauce to caramelize the sauce. It's important to pay close attention not to let the ribs get to charred and black.
  • Double-check the temperature which should be at 145 to 150 degrees F before removing from the grill. Remove them and allow the ribs to rest at least 10 minutes before serving.

Country-style pork ribs*
Salt and pepper
Your favorite BBQ sauce

Steps:

  • Preheat your oven to 300°F. Salt and pepper both sides of your ribs and place in a single layer in your pan, fattier side up.
  • Cover the pan tightly with foil and bake for 2 hours. Carefully (steam and liquid in the tray will be hot!) remove ribs from the oven and check the meat. They should be starting to become tender. If they still feel tough, re-cover them and place them back in the oven for 15 to 30 minutes.
  • Transfer ribs to a plate and drain liquid from the pan. Return ribs to tray and brush with a generous coating of BBQ sauce.
  • Turn oven down to 275°F and bake ribs, uncovered, for 1 hour more, or until you can pull the meat apart with a fork (if your ribs were small and already pretty tender when you put them back in the oven, start checking after 20 minutes). Brush with another coat of BBQ sauce, rest for 5 minutes, serve and enjoy!
