With layers of walnuts, crunchy caramel, chocolate, and then more walnuts, English Toffee makes a delicious homemade gift.

Number Of Ingredients 6

2 cups walnuts (finely chopped)
1 cup unsalted butter (2 sticks)
1 cup sugar
1 teaspoon vanilla
1/4 teaspoon salt
2 King-size Hershey milk chocolate bars

Steps:

  • Lightly butter 10x12 cookie sheet (with lip). Spread half the walnuts evenly on top.
  • Using a heavy-bottom pan, melt butter, sugar, vanilla, and salt over low heat, stirring gently until the sugar is completely dissolved.
  • Continue cooking and gently stirring over low heat for 9 - 12 minutes, or until a candy thermometer reads 280-300 degrees.
  • Evenly pour mixture on top of walnuts and quickly spread into a thin layer.
  • Lay chocolate bars on top and allow to sit for about 30 seconds until slightly melted. Using an offset spatula, carefully spread the chocolate into a thin layer.
  • Sprinkle the remaining walnuts all over the top and gently press in with a fork.
  • Allow toffee to set until completely cool, then refrigerate for at least 30 minutes to allow the chocolate to completely firm up.
  • Break into pieces and store in an airtight container.

1 lb butter
2 1/2 cups sugar
1 cup water
1/4 cup white corn syrup
1 cup finely chopped nuts
1 large Hershey Bar, grated

Steps:

  • Butter a cookie sheet, grate hershey bar, chop nuts until fine.
  • Cover cookie sheet with nuts, then grated chocolate and set aside.
  • Combine butter, sugar, water, and syrup in heavy pan and bring to a boil.
  • Cook to hard ball stage (280* F.).
  • Pour on prepared cookie sheet and cover with remaining nuts and grated bar.
  • Cool.
  • Break into pieces when cold.

This is another of my Mom's recipes that is so good. Hope you enjoy. Prep time is estimated and cooking time is based on how long it takes to harden in the frig.

Number Of Ingredients 6

1 cup butter
1 cup sugar
1 cup slivered almonds
1 tablespoon water
1 tablespoon light Karo syrup
5 Hershey Bars

Steps:

  • Combine all ingredients except the Hershey Bars.
  • Cook in heavy pan over high heat.
  • Stir until shade darker than brown sugar- about 10 to 12 minutes.
  • Pour onto cookie sheet and spread with back of wooden spoon to all edges.
  • Crush five Hershey Bars and spread over the top.
  • Refrigerate immediately for about an hour or until cool.
  • When harden, break into pieces and store in air tight container.
  • Best if kept in refrigerator.

1 tablespoon plus 1-3/4 cups butter, softened, divided
2 cups sugar
1 tablespoon light corn syrup
1 cup chopped pecans
1/4 teaspoon salt
1 pound milk chocolate candy coating, coarsely chopped

Steps:

  • Butter a 15x10x1-in. pan with 1 tablespoon butter; set aside. In a heavy 3-qt. saucepan, melt the remaining butter. Add sugar and corn syrup; cook and stir over medium heat until a candy thermometer reads 295° (soft-crack stage). Remove from the heat; stir in pecans and salt. , Quickly pour into prepared pan. Let stand for 5 minutes. Using a sharp knife, score into lines. Let stand at room temperature until cool., Separate into squares, using a sharp knife if necessary. In a microwave, melt candy coating, stirring often. Dip squares, one at a time, in coating. Place on waxed paper until set.

1 cup butter (only real butter can be used in this recipe)
1 cup sugar
1/4 cup water
1/2 teaspoon salt
3 semi-sweet chocolate baking squares or 1/2 cup chocolate chips
1 cup coarsely broken pecans

Steps:

  • In heavy saucepan, combine butter, sugar, water, and salt.
  • Cook to hard-crack stage (300°F) stirring with a WOODEN SPOON constantly and watching carefully. Do not try a plastic spoon, it will melt into your delicious candy!
  • Immediately pour into ungreased 13"x9" pan.
  • Cool until hard.
  • Melt chocolate over hot, but not boiling water.
  • Spread over toffee; sprinkle with nuts, pressing them into chocolate.
  • Let stand 2-3 hours or chill 30 minutes.
  • Break into bite-size pieces.

24 unsalted saltine crackers
1 cup butter
1 cup firmly packed light brown sugar
1/2 teaspoon vanilla extract
1 (6 ounce) package semisweet chocolate morsels
pecan halves

Steps:

  • Preheat oven to 375°.
  • Butter a 13x9 baking pan.
  • Arrange saltines right side up in a single layer in pan.
  • Melt butter and sugar over medium heat.
  • Bring to boil, boil 3 minutes stirring occasionally.
  • Remove from heat.
  • Stir in vanilla.
  • Pour over crackers, spread evenly with spatula.
  • Bake for 5 minutes, if crackers move, rearrange with a fork.
  • Cool for about 10 minutes.
  • Sprinkle chocolate morsels over top.
  • Let stand about 5 minutes the evenly spread over top.
  • Cool completely, then cut in 2x1 inch bars.
  • Place a pecan half over each piece.
  • Store in refrigerator.
