2 cups vegetable oil
2 tablespoons Cajun seasoning
2 tablespoons dried Italian-style seasoning
garlic powder to taste
2 tablespoons lemon pepper
10 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness

Steps:

  • In a large shallow dish, mix the oil, Cajun seasoning, Italian seasoning, garlic powder, and lemon pepper. Place the chicken in the dish, and turn to coat with the mixture. Cover, and refrigerate for 1/2 hour.
  • Preheat the grill for high heat.
  • Lightly oil the grill grate. Drain chicken, and discard marinade. Place chicken on hot grill and cook for 6 to 8 minutes on each side, or until juices run clear.

3 tablespoons butter or margarine, melted

Steps:

  • 1. Preheat oven to 400°F. In small bowl, combine soup mix, bread crumbs and spices. Dip chicken in bread crumb mixture until evenly coated.
  • 2. On lightly greased baking sheet, arrange chicken; drizzle with butter.

1/3 cup freshly squeezed Lemon Juice
1 1/2 tablespoons Cajun Seasoning (of choice, store bought or homemade)
3 cloves Garlic (minced)
2 tablespoons Tabasco Sauce
2 tablespoons Worcestershire Sauce
1 tablespoons Vinegar
4 boneless Chicken Breast Halves (cut into bite-sized cubes)
1 cup Bojangles Cajun Seasoned Flour (Recipe below)
3 Eggs

Steps:

  • Combine lemon juice, Cajun seasoning, garlic, Tabasco, Worcestershire sauce and vinegar in a small bowl.
  • Add chicken cubes and stir to make sure all cubes are well-covered with sauce.
  • Place, covered, in the refrigerator, for 6 to 8 hours or overnight.
  • When ready to cook, prepare Bojangles Cajun Seasoned Flour according to recipe below. Place mixture in a small bowl and set aside.
  • Preheat oven to 400°F.
  • Place eggs in a small bowl and beat lightly.
  • Lift chicken from marinade, shaking off excess.
  • Roll each cube, first in the egg mixture then in flour mixture to coat evenly.
  • Place cubes on a nonstick baking sheet.
  • When all cubes are floured, place in preheated oven and bake for 10 to 12 minutes.
  • Serve hot.
