1 ½ lb boneless beef check roast, cut into 1 (2.54 cm) in cubes
3 teaspoons kosher salt, divided
2 teaspoons neutral oil, such as canola
1 red bell pepper, seeded and diced
½ yellow onion, diced
2 stalks celery, siced
3 cloves garlic, roughly chopped
1 cup diced tomato, drained
2 tablespoons tomato paste
2 tablespoons Frank's RedHot® Original Cayenne Pepper Hot Sauce, plus more for drizzling
1 tablespoon McCormick Cajun Seasoning
nonstick cooking spray, for greasing
3 tablespoons unsalted butter
1 cup grits
2 cups whole milk, plus more as needed
2 cups water
1 ½ teaspoons kosher salt
1 cup shredded sharp cheddar cheese
scallion, thinly sliced, for garnish

Steps:

  • Make the beef: Season the beef with 2 teaspoons of salt.
  • Heat the oil in an Instant Pot on "Sauté" mode. Add the beef and sear on all sides, using tongs to turn the meat, 7-9 minutes total. Remove the beef from the Instant Pot and set aside.
  • Add the bell pepper, onion, celery, and garlic to the Instant Pot and sauté for 5 minutes, until softened. Stir in the tomatoes, tomato paste, Frank's RedHot® Original Cayenne Pepper Hot Sauce, McCormick Cajun Seasoning, and the remaining teaspoon of salt.
  • Return the beef to the Instant Pot and stir well. Put the lid on the Instant Pot, set the pressure valve to "Sealing," and pressure-cook for 50 minutes.
  • Turn the pressure valve to "Venting" to release the pressure quickly. (Be sure to read all Instant Pot instructions carefully for safety.) Carefully remove the lid.
  • Remove the beef mixture from the Instant Pot and set aside. Clean the Instant Pot insert.
  • Make the grits: Generously coat the Instant Pot insert with nonstick spray. Add the butter and melt on "Sauté" mode. Add the grits and cook, stirring frequently, for 2 minutes, until fragrant. Whisk in the milk, water, and salt. Bring mixture to a simmer, then whisk well.
  • Put the lid on the Instant Pot, set the pressure valve to "Sealing," and pressure-cook for 10 minutes.
  • Let pressure naturally release for 15 minutes, then turn the pressure valve to "Venting" to release the rest of the pressure. Carefully remove the lid.
  • Carefully hold the Instant Pot with an oven mitt and use a silicone spatula or wooden spoon to move the grits around and release from the bottom of the pot, then whisk well to incorporate.
  • Stir in the cheddar cheese. Let cheese melt for 1 minute, then stir again. (If the grits get too thick before serving, stir in a bit of milk to loosen.)
  • To serve, spoon the grits into shallow bowls. Scoop the beef mixture on top. Drizzle with Frank's RedHot® and garnish with the scallions.

For the Grillades
2 lbs round steak (pounded to 1/4 inch thickness and cut into 2 inch squares)
1/2 cup all-purpose flour
1 teaspoon salt
1 teaspoon Creole Seasoning
2 tablespoons extra virgin olive oil
2 medium yellow onions (diced)
2 cloves garlic (minced)
1 large red bell pepper (about 1 cup, diced)
1/2 cup celery (diced)
2 cups tomatoes (diced or 1 (14 oz) can diced tomatoes, drained)
1/3 cup all-purpose flour
5 tablespoons unsalted butter or 5 tablespoons extra virgin olive oil
3 cups beef broth
1 tablespoon red wine vinegar
3 bay leaves
1 tablespoon Creole seasoning (see below)
2 tablespoons fresh parsley (chopped)
For the Grits
1 cup stone-ground old-fashioned grits
5 cups milk
1 teaspoon salt

Steps:

  • Combine the 1/2 cup flour, salt and one teaspoon of Creole Seasoning in a shallow bowl. Dredge the pieces of beef in the flour, shaking off the excess and transfer to a large plate.
  • Heat the oil in a stainless steel skillet over medium-high heat until hot but not smoking. Place the beef in the skillet, being careful not to overcrowd, and fry on both sides until browned. Transfer the beef to a plate.
  • Saute the onions in the skillet until soft and translucent, about 5 minutes. Add the garlic and saute for another minute. Add the bell pepper and celery and saute until soft, about 5-7 minutes. Add the tomatoes and saute for another 4-5 minutes, scraping up any browned bits in the skillet. Transfer the vegetables to a bowl.
  • Melt the 5 tablespoons of butter or olive in the same skillet over medium heat. Add the 1/3 cup flour and whisk constantly until the mixture is a rich brown, about 4 minutes. Add the beef broth and red wine vinegar, whisking continually until the mixture is smooth and thickened.
  • Return the vegetables to the skillet and add the Creole Seasoning and bay leaves. Return the beef to the skillet and bring to a simmer. Reduce the heat to low, cover, and simmer for 1 1/2 hours or until the meat is very tender, stirring occasionally.Stir in the parsley and simmer for another 5 minutes. Add salt and pepper to taste. Remove the bay leaves.
  • Serve the grillades and gravy ladled over hot grits (see below).
  • For the Grits: In a 5-quart pot over medium-high heat, bring the milk and salt to a simmer, stirring regularly to prevent the milk from burning.
  • Slowly add the grits in a steady stream, whisking constantly to prevent lumps. Add the salt. Reduce the heat to low, cover, and cook for about 30 minutes, stirring occasionally until the grits are thick and tender.

CAJUN T-BONE STEAK

2 teaspoons garlic powder
2 teaspoons paprika
2 teaspoons kosher salt
2 teaspoons freshly ground black pepper
1/4 teaspoon cayenne pepper
One 1- to 1 1/2-inch-thick T-bone steak (1 to 1 1/2 pounds)
Vegetable oil, for the grill

Steps:

  • Combine the garlic powder, paprika, salt, black pepper and cayenne in a small bowl. Place the steak on a rack set over a baking sheet. Sprinkle the spice mixture evenly on both sides of the steak (use all of the spice mixture). Let the steak sit on the rack at room temperature for 30 minutes to 1 hour.
  • Preheat a grill to medium-high. Lightly brush with the oil.
  • Place the steak on the grill, then cook until dark marks form on the underside and the steak releases easily from the grill, about 6 minutes. Flip the steak and continue cooking until a thermometer inserted in the center (avoiding bone) registers 125 degrees F for medium-rare, 5 to 7 more minutes. Remove to a cutting board and let the steak rest for 10 minutes before slicing and serving.

5 cups low-sodium vegetable broth
3/4 cup quick grits
1 1/2 cups grated Monterey Jack cheese
1 1/2 cups grated sharp Cheddar
4 ounces cream cheese
4 tablespoons salted butter
1 tablespoon olive oil
4 ounces button mushrooms, halved
1 large zucchini, cut into bite-size chunks
1 ear corn, kernels removed
1 red onion, cut into bite-size chunks
1 red bell pepper, chopped
1 jalapeno pepper, seeded and finely chopped
1 1/2 tablespoons Cajun seasoning, plus more as needed
1 tablespoon tomato paste
Hot sauce, as needed
Freshly ground black pepper
Juice of 1/2 lemon
3 scallions, sliced, for garnish

Steps:

  • Bring 3 cups of the vegetable broth to a boil in a saucepan. Slowly stir in the grits. Return to a boil and cook for 3 to 4 minutes. Turn down the heat and stir in the Monterey Jack, Cheddar and cream cheese. Cook for another 3 to 4 minutes. Stir in 2 tablespoons of the butter and keep warm.
  • Heat the remaining 2 cups broth in a separate saucepan until hot.
  • Meanwhile, heat the oil and remaining 2 tablespoons butter in a large skillet over medium-high heat. Add the mushrooms, zucchini, corn, onion, bell pepper and jalapeno to the skillet and cook for 1 minute. Season the vegetables with the Cajun seasoning. Continue to cook until well browned, an additional minute. Add the tomato paste. Stir in the hot broth and add hot sauce and black pepper to taste. Cook until the vegetables are tender but not mushy, another 2 minutes. Add the lemon juice. Taste and adjust the seasoning.
  • To serve, spoon a hefty serving of grits into a bowl. Top with the veggies and sauce. Garnish with some scallions and serve.

1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon paprika
1 tablespoon ground black pepper
2 teaspoons cayenne pepper
2 teaspoons lemon pepper
1 teaspoon ground thyme
1 teaspoon ground oregano
2 tablespoons dark brown sugar
One 6- to 8-pound beef brisket
4 stalks celery, chopped
4 cloves garlic, chopped
2 onions, sliced
2 green bell peppers, sliced
One 28-ounce can diced tomatoes with their liquid
One 6-ounce can tomato paste
2 cups brewed coffee with chicory, cooled
Chopped fresh parsley, for serving
Grits, such as Creamy Cheese Grits, recipe follows, for serving
1 tablespoon butter
1 tablespoon oil
2 jalapenos, diced
1 onion, diced
1 red bell pepper, diced
4 cups stone-ground grits
8 cups low-sodium chicken (or beef) broth, plus more if needed
2 cups half-and-half
2 cups grated Cheddar

Steps:

  • Combine the kosher salt, seasoned salt, onion powder, garlic powder, paprika, black pepper, cayenne, lemon pepper, thyme and oregano in a bowl. Stir in the brown sugar. Rub the brisket with the dry rub, wrap in plastic TIGHTLY and refrigerate overnight.
  • When ready to cook, preheat the oven to 275 degrees F.
  • Put the brisket in a baking pan. Top with the celery, garlic, onions and green peppers. Pour over the tomatoes and tomato paste and stir, then add the coffee. Cover with foil and bake until the meat is very tender and shreds easily, 6 to 8 hours.
  • Remove the meat to a large cutting board and shred. Serve the shredded meat with the vegetables and juices. Garnish with chopped parsley. Serve with grits.
  • Heat the butter and oil in a pan and add the jalapenos, onions and bell peppers. Cook until softened, 5 minutes or so.
  • Pour in the grits, followed by the broth and 3 cups water. Stir, and then bring to a boil. Reduce the heat to low, and then cover and cook for 30 to 40 minutes, stirring occasionally.
  • Add the half-and-half. Stir, and then cook until the grits are tender, another 20 to 30 minutes. At any time, add more broth if the grits look like they need more cooking liquid.
  • Remove the grits from the heat and stir in the cheese. Serve immediately.

Steps:

  • In a skillet, cook bacon until crisp.
  • Cool, crumble and set aside.
  • Drain all the bacon grease from the skillet except 2 tablespoons.
  • Saute the onions and green pepper in the bacon grease until the onion is translucent.
  • Add the tomatoes to the onions and peppers.
  • Simmer for 1 hour.
  • Add the cooked grits to the tomato mixture.
  • Top with the reserved crumbled bacon.
