CAJUN SPICED TOFU
Delight yourself by making this Cajun Spiced Tofu recipe! Great in salads, on a burger or just by itself with vegetables, it's sure to be a winner!

Steps:
- Add all the ingredients of the Cajun Seasoning to a mixing bowl and mix well
- Add the Flour, Chickpea Brine to their own bowls
- Place each strip of tofu into the Flour to cover them
- Then take the floured tofu strips and soak them in the chick pea brine
- After that, place the wet tofu into the cajun seasoning and cover well
- Drizzle olive oil over a hot frying pan on high heat
- Fry each strip of cajun seasoned tofu and flip when crispy on the underside
CAJUN TOFU
This was inspired by a recent trip to New Orleans. I wanted something vegetarian, but with Cajun taste & this is what I came up with. It's easy enough for a weeknight dinner, but tastes like you've been cooking a while. You can serve it over rice, pasta or, if you want to be really southern, grits.

Steps:
- Mix the first 9 ingredients to make a spice mix. Set aside.
- Heat butter and olive oil in a large pot.
- Add onion and saute until starting to brown.
- Add garlic and 3 Tbsp of the spice mix.
- Stir and cook a couple minutes.
- Add pepper and celery and cook a couple more minutes.
- Add tomato sauce, bay leaf and tofu.
- Mix well.
- Bring to a boil and then simmer 10 minute.
- Add hot sauce to taste.

- Drain the package of tofu and wrap the tofu block around a layer of paper towels. Press the tofu by placing it between 2 large plates. Weigh down the top plate with something heavy, like a bag of flour. Let the tofu sit for 15 to 20 minutes.
- In a medium bowl, mix 1 1/2 tablespoons of olive oil, soy sauce, honey, cajun spice powder, garlic powder (if using) and salt. Rub the tofu with the marinade. Let the tofu sit for at least 15 minutes or cover the bowl and marinade the tofu overnight in the refrigerator.
- Heat a grill pan over medium-high heat. Drizzle about 1 to 1 1/2 tablespoons of olive oil over the grill pan. Add the tofu slices on top of the pan. Arrange them so that the tofu slice are laid diagonally, along the 2 and 8 ‘o clock position or 4 and 10 ‘o clock position. Cook the tofu until you see grill marks on the tofu, about 2 to 3 minutes. Flip the tofu over and repeat on the other side.
