- Heat grill to 400-degrees. You can do this in your oven at the same temperature. Bring all the ingredients to your work area.
- Evenly distribute corn, potatoes, shrimp, and sausage between 4 heavy-duty foil sheets (approximately 12x18 inches each). Drizzle melted butter and about 2 tablespoons chicken broth over each foil packet. Season evenly and generously, to taste, with Cajun seasoning, salt, and pepper.
- Tightly seal foil packets by folding up the sides over the contents and tightly folding up the ends over the seam.
- Grill 30-40 minutes or until potatoes are tender, flipping once half-way through
- Serve immediately. (Be careful the steam is HOT)

- Heat gas or charcoal grill. Cut 4 (18x12-inch) sheets of heavy-duty foil. Spray with cooking spray.
- Mix tomatoes and chicken broth in 4-cup glass measuring cup. Add instant rice; stir and let stand about 8 minutes or until most of the liquid is absorbed. In small bowl, mix bell pepper and half of the green onions.
- Place equal amount of sausage on center of each sheet of foil. Scoop about 1/2 cup of the bell pepper mixture on top of sausage on each. Dividing evenly, spoon rice around sausage and vegetables. Divide any remaining soaking liquid over tops of vegetables. Sprinkle each with 1/4 teaspoon Cajun seasoning.
- Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
- Place packs on grill over medium heat. Cover grill; cook 6 minutes. Rotate packs 1/2 turn; cook 6 to 7 minutes longer or until sausage is heated through. Remove packs from grill; cut large X across top of each pack. Carefully fold back foil; stir to mix, and sprinkle with remaining green onions.

- Preheat grill OR oven to 400 degrees F.
- Cut 5 large sheets of heavy duty foil (about 12-inches wide by 17-inches long.) Coat foil generously with nonstick cooking spray. (Don't skip the spray or the food will stick to the foil.)
- In a large bowl, toss together all the ingredients.
- Divide mixture evenly into 5 equal portions and add to the center of each sheet of foil. (This comes out to a heaping 1 1/2 cups per packet.)
- To seal the foil packet, bring the short sides together in the middle and gently fold down over the ingredients, leaving a little space for steam. Then roll up the ends to seal closed.
- Place in the oven (on a sheet pan) or on the grill for 25-30 minutes, until shrimp is pink, rice is cooked through, and veggies are tender. (Test only 1 packet at a time; every time the packets are opened, the steam is released so it will take longer to cook.) If grilling, flip packets halfway through cook time.
- Carefully open the foil pack, expecting hot steam to be released. Let cool slightly and enjoy.

- 1. Preheat a grill over medium-high heat. Lay two 18-inch-long sheets of heavy duty aluminum foil on a flat surface.
- 2. Cut a long slit in each sausage about two-thirds of the way through and flatten gently so it opens like a book. Divide the sausages between the 2 pieces of foil. Toss the peppers and onions with the oil, oregano, 1 teaspoon salt and 1/2 teaspoon pepper and put on top of the sausages.
- 3. Bringing the short sides of the foil together, fold the seams together twice and then tuck the ends in and up to seal. Put the foil packets on the grill and grill, 17 to 20 minutes. Open the foil, being careful of steam; the sausages will be charred and have grill marks on the bottom and the vegetables will be tender. If not, just throw the packets back on the grill, unsealed, for a few more minutes until done.
- 4. Divide among 4 plates and serve with crusty bread or garlic bread.
EASY ITALIAN SAUSAGE, PEPPERS AND ONIONS FOR A CROWD OR A FEW
When my children are home for the summer they always ask for grilled foods and Italian sausage subs are a great meal for dinners or lunch. - put italian sausage ropes in roasting pan large enough to fit amount you are making.
- quarter onions and put on top.
- cut green peppers into strips and throw on top.
- add water.
- cover pan with heavy duty foil and bake for 2 hours at 300 degrees (time varies depending on amount of sausage).
- once done, cut into roll length pieces.
- ***OPTIONAL-at this point I have thrown on a hot grill to put grill marks and sear skins.
- put on nice hoagie rolls, cover with peppers and onions
- (optional)add provolone or mozzerella cheese get a good napkin and enjoy!
