CAJUN REMOULADE SAUCE
Spicy! Similar to Remoulade Sauce at Rutherford Grill (Napa Valley) for dipping their smoked artichokes. Also excellent for crab cakes and anything fried.

CAJUN SPICE MIX
This is a mildly hot Cajun spice mix you make yourself with common spices from your pantry. For those who like it hotter, add the optional crushed red pepper. This makes a great oven Cajun hashbrowns!

CAJUN JAMBALAYA
Steps:
- In a bowl combine shrimp, chicken and Creole seasoning, and work in seasoning well. In a large saucepan heat oil over high heat with onion, pepper and celery, 3 minutes. Add garlic, tomatoes, bay leaves, Worcestershire and hot sauces. Stir in rice and slowly add broth. Reduce heat to medium and cook until rice absorbs liquid and becomes tender, stirring occasionally, about 15 minutes. When rice is just tender add shrimp and chicken mixture and sausage. Cook until meat is done, about 10 minutes more. Season to taste with salt, pepper and Creole seasoning.
CAJUN BUTTER SAUCE
I found this recipe in a magazine several years ago. My kids call it dirty butter sauce because of it's light brown color from the chili powder. They ask for it everytime I serve corn on the cobb. It is absolutely fabulous on any steamed vegetable. I often omit the red pepper to cut down on the heat. It still has just enough pepper for flavor. I also use a chicken base flavoring to make my broth.

EASY CAJUN SALMON
Cajun salmon is a quick and easy dinner recipe that is bursting with flavor. Cajun seasoned salmon is quickly seared until blacked, then a little cream (or dairy-free cashew cream) is added to the pan to make a creamy cajun sauce. It's delicious!

Steps:
- Mix the seasoning ingredients together in a small bowl. Reserve about ½ tablespoon of the seasoning then sprinkle the remaining evenly over the top of the salmon.
- Heat the oil in a large nonstick pan over medium-high heat. Add the salmon to the pan, top side facing down. Cook for 5 minutes, or until the side of the salmon that is facing the pan is well-browned (blackened). Flip the salmon over and continue to cook for another 3-4 minutes, or until the salmon is fully cooked. It should reach an internal temperature of 140 degrees Fahrenheit. Remove the salmon from the pan.
- Add the cream and the reserved ½ tablespoon of cajun seasoning to the pan. Simmer for about 1 minute, or until the cream reduces slightly. Serve the salmon with the cajun cream sauce poured over the top and a little minced parsley for color.

- Cajun Shrimp Boil. Look no further than slow cooker shrimp boil for a quick summer supper. What a spread! Gather your family and delve into this sloppy, delicious boil.
- Cajun Shrimp and Grits. Possibly the most delicate shrimp and grits recipe I’ve ever cooked! It’s simple and only has a few ingredients! The creamy grits are topped with cajun-seasoned shrimp and spicy, strong seasonings.
- Cajun Crab Dip. This seafood dip is fully prepared in minutes with Monterey Jack cheese, lump Alaska crab meat, cream cheese, and a spicy cajun blend.
- Crawfish Cajun Etouffee. During crawfish season in Louisiana, nothing is better than this dish. A spicy and rich tomato roux with bell peppers, fresh garlic, shrimp, and crawfish.

- Andouille Sausage and Chicken Gumbo. Any great gumbo will begin with a well-made roux. It’s essential to have a deep color. The lighter the roux, the greater the thickening power, still the less flavor.
- Cajun Fried Chicken. You may feel that it’s deep-fried because it’s crunchy. Add a dash of cajun flavor to this classic Southern dish. You can make this dish without or with skin, and it will still be great!
- Cajun Chicken Cassoulet. I have modified this classic French recipe for a Louisiana table by adding spice, okra, and smoked cajun sausage. This simple cassoulet recipe is packed with chicken, sausage, beans, and vegetables.
- Spicy Cajun Chicken. Such a great combination of brown sugar, cajun seasoning, and chicken. There won’t be any food leftover. This spicy cajun chicken is the thing I make at least once a month.
