2-1/2 pounds medium red potatoes
1/4 cup olive oil
2 shallots, chopped
1 garlic clove, minced
1 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
1/2 teaspoon pepper
2 tablespoons minced fresh parsley

Steps:

  • Cut each potato lengthwise into eight wedges. , In a large bowl, combine the oil, shallots, garlic, salt, paprika, cayenne and pepper; add potatoes and toss to coat. Place in a greased roasting pan., Bake, uncovered, at 450° for 45-50 minutes or until tender and golden brown, turning every 15 minutes. Sprinkle with parsley.

1 Tbsp. olive oil
3/4 cup diced onion
3/4 cup diced red or green bell pepper
1 can (14.5 oz.) Del Monte® Diced New Potatoes, well drained
1 can (15.25 oz.) Del Monte® Whole Kernel Corn-No Salt Added, well drained
(Optional) salt
(Optional) black pepper

Steps:

  • 1. Heat oil in a large skillet over medium-high heat. Cook onions and peppers 7-8 minutes or until beginning to richly brown on edges, stirring occasionally.
  • 2. Stir in the potatoes and corn, cook 3 minutes to heat through. Remove from heat, cover and let stand 3 minutes to absorb flavors. Stir before serving. Salt and pepper to taste, if desired.

3 pounds red potatoes, well-scrubbed and cut into 1/2-inch cubes
1 package (10 ounces) pearl onions, peeled
2 tablespoons olive oil
2 teaspoons dried basil leaves or thyme leaves
1 teaspoon paprika
/34 teaspoon salt
3/4 teaspoon dried rosemary
3/4 teaspoon black pepper

Steps:

  • Preheat oven to 400°F. Spray large shallow roasting pan (do not use glass baking dish or potatoes will not brown) with nonstick cooking spray. Add potatoes and onions to pan; drizzle with oil. Combine basil, paprika, salt, rosemary and pepper in small bowl; mix well. Sprinkle over potatoes and onions; toss well to coat lightly with oil and seasonings. Bake 20 minutes; toss well. Continue baking 15 to 20 minutes or until potatoes are browned and tender.

WAY TOO EASY CAJUN POTATOES



Way Too Easy Cajun Potatoes image

These were a staple in the Irish Channel in the good ole days. I still make mine in a cast iron pan but you can use any oven proof pan. For those who must have heat, add extra cayenne. To shorten baking time we sometimes nuke the potato chunks a little before adding to the oil.

4 -5 medium potatoes
1 tablespoon cajun seasoning
1 tablespoon oil
cayenne pepper
salt and pepper

Steps:

  • Pre heat oven to about 375-400.
  • With a fork score all over the potatoes (peeled or not), this will make them more crisp.
  • Chop the potatoes into 1 1/2-2 inch chunks.
  • Put the oil in the pan (warming the pan first is good, but not vital), add potatoes, sprinkle all seasonings over (go easy with the salt; more can be added after cooking) and toss and stir potatoes with two forks until all chunks are coated.
  • Bake for 15 mins, stir well (again with the forks), bake a further 10-15 minutes.
  • Note: If you've nuked them, the potatoes will need a little less time. Watch them towards the last few minutes.

1 lb shrimp, peeled and deveined
4 red potatoes, quartered
2 pieces corn, quartered
2 tablespoons oil, divided
1 tablespoon butter, cubed
4 cloves garlic, minced
2 teaspoons garlic powder
2 ½ teaspoons paprika
1 ¼ teaspoons dried oregano
1 teaspoon onion powder
1 ¼ teaspoons dried thyme
½ teaspoon red pepper flakes
1 teaspoon cayenne pepper
2 teaspoons salt
1 teaspoon pepper
fresh parsley, chopped
lemon wedge, to garnish

Steps:

  • Preheat oven to 375°F (190°C).
  • In a small bowl, combine the Cajun spice mix ingredients and stir to combine.
  • In a baking dish, combine potatoes, corn, 2 garlic cloves, 1 tablespoon of oil, and ½ tablespoon of the cajun spice mix.
  • Mix until the vegetables are coated evenly with the spice mix. Place butter on top.
  • Bake for 25 minutes.
  • In a medium bowl, combine the sausage, shrimp, garlic, oil, and ½ tablespoon of the spice mix. Save the remaining spice mix for future recipes.
  • Mix well.
  • Add the sausage and shrimp into the same baking dish as the corn and potatoes.
  • Bake for another 15 minutes.
  • Top with fresh parsley. Serve with lemon wedges and beer!

1/4 cup vegetable oil
1 tablespoon cajun seasoning (listed below)
1 1/2 teaspoons dry oregano or 1 1/2 teaspoons thyme

1/2 cup paprika
1/4 cup black pepper
1 1/2 teaspoons cayenne

  • -Cajun Spice Mix----Combine spices thoroughly and store in a closed jar, and put in a cool dry place for later use.
