- Preheat oven to 450 degrees F.
- Cut potatoes into wedges. In a large bowl, combine oil, hot sauce, thyme, paprika, and cumin. Toss potatoes in dressing and spread out in a single layer on a nonstick cookie sheet. Season wedges with salt and pepper and roast for 20 minutes, turning once.
CAJUN OVEN-FRIED POTATO CHIPS
This recipe comes from a Gourmet magazine way back in the 80's, and I still make them often my family loves these! If you want you can omit the Cajun seasoning! If you are lucky enough to own a mandoline, then use it to slice the potatoes. Your oven must be at 500 degrees to create a crispy potato slice! You could reduce the recipe to half if desired but why would you want too, you won't be able to stop eating these, they are that good, so better make the full amount!!!

- Pat the potato slices dry using paper towels.
- Arrange the potato slices in one layer on two buttered cookie sheets pans.
- Brush the slices with melted butter.
- Bake in a 500 degree oven for 15-20 minutes or until the edges are golden brown.
- Sprinkle lightly with Cajun seasoning and coarse salt.

LOW-FAT HOME-MADE OVEN CHIPS
Everybody loves chips...only problem is the high calorie count!! This really simple recipe cuts the calories down so you don't have to feel so guilty about indulging!

Steps:
- Pre-heat the oven to 220 degrees.
- Cut the potatoes into thick chips.
- Heat the stock in a large pan,when boiling,plunge the potatoes into it and cook approx 5 mins or until just tender.
- Drain the potatoes and cool slightly-reserve the stock for making chips on another day!
- Put the oil in a large ziplock bag and carefully toss the chips in it-at this point you can freeze them for use another day.
- Transfer the chips to a non-stick baking tray and bake for approx 15 mins,turning them once or twice, until golden and crisp (if cooking from frozen allow a little longer!).
- Sprinkle with paprika or if you're like me and can't live without it some spicy chicken salt.

- In a small bowl: mix cheese, salt and garlic.
- Place sliced potatoes in a large bowl.
- Spray a light coating of cooking spray,toss and coat both sides.
- Sprinkle tops with the cheese mixture.
- Toss potatoes to season both sides.
- Place in a shingled layer in the basket.
- Bake on the french fry setting (400 degrees) for 10-13 minutes, flip half way through.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Pierce potatoes with a fork and place on a baking sheet.
- Bake in the preheated oven until tender, about 1 hour. Let cool completely, 15 to 20 minutes. Dice potatoes, leaving the skin on.
- Heat a large cast iron frying pan or nonstick skillet over medium heat. Add olive oil. When hot, add onion, bell peppers, and garlic. Saute until veggies have softened, 3 to 5 minutes. Add potatoes, butter, thyme, Cajun seasoning, salt, and pepper. Cook, stirring occasionally, until potatoes are golden brown, 10 to 12 minutes. Top with parsley.

- Preheat oven to 400°F Brush 2 large baking sheets with some oil or spray with PAM*.
- Peel the potatoes and slice very thin, using a mandoline or slicer. Immediately arrange potatoes in a single layer on baking sheets. Brush with remaining oil or spray with PAM*.
- Bake in the center of the oven until golden, 12--15 minutes.
- Transfer to wire racks while still hot.
- Sprinkle chips with thyme and salt to taste.
- Cool completely.

- Heat the oven to 200C/180C fan/gas 6. Peel the potatoes and cut them into long chip shapes - the thickness is entirely up to you, though the width of a finger is ideal. Rinse under the cold tap and pat dry with a tea towel.
- Spread the chips on a large non-stick baking tray and toss with the olive oil and celery salt. Lie them flat in a single layer - use two trays rather than overcrowd one.
- Roast for 45-50 mins, turning now and then. When cooked they should be golden brown and crisp with a light fluffy centre. Scatter on sea salt to serve.
