We still can't settle on our favorite salsa, but, honestly, why bother? There are so many fantastic options! We love trying them all in this twist on classic meat loaf. You can make these loaves ahead, and they'll last for a few days-perfect for meat loaf sandwiches topped with a little Monterey Jack cheese. -Tasha Tully, Owings Mills, Maryland

3/4 cup uncooked instant brown rice
1 can (8 ounces) tomato sauce
1-1/2 cups salsa, divided
1 large onion, chopped
1 large egg, lightly beaten
1 celery rib, finely chopped
1/4 cup minced fresh parsley
2 tablespoons minced fresh cilantro
2 garlic cloves, minced
1 tablespoon chili powder
1-1/2 teaspoons salt
1/2 teaspoon pepper
2 pounds lean ground beef (90% lean)
1 pound ground turkey
1/2 cup shredded reduced-fat Monterey Jack cheese or Mexican cheese blend

Steps:

  • Preheat oven to 350°. Cook rice according to package directions; cool slightly. In a large bowl, combine tomato sauce, 1/2 cup salsa, onion, egg, celery, parsley, cilantro, garlic and seasonings; stir in rice. Add beef and turkey; mix lightly but thoroughly., Shape into two 8x4-in. loaves in a greased 15x10x1-in. baking pan. Bake until a thermometer inserted in center reads 165°, 1 to 1-1/4 hours., Spread with remaining salsa and sprinkle with cheese; bake until cheese is melted, about 5 minutes. Let stand 10 minutes before slicing., Freeze option: Bake meat loaves without topping. Securely wrap and freeze cooled meat loaf in foil. To use, partially thaw in refrigerator overnight. Unwrap meat loaves; place in a greased 15x10x1-in. baking pan. Reheat in a preheated 350° oven until a thermometer inserted in center reads 165°, 40-45 minutes; top as directed.

COLD MEATLOAF WITH SQUASHED TOMATO & PEPPER SALSA

Thickly slice this meatloaf and serve in rolls as a picnic burger, or on its own as a tasty and economical cold cut

500g pack beef mince
500g pack pork mince
1 onion , finely chopped
2 eggs
50g stale breadcrumbs
handful oregano sprigs, leaves picked, or use 1 tsp dried
handful thyme sprigs, leaves picked, or use 1 tsp dried, plus extra for scattering
2 rosemary sprigs, leaves picked
2 garlic cloves , 1 crushed, 1 thinly sliced
2 tbsp olive oil , plus extra for greasing
bread rolls and rocket leaves, to serve
2 red and 2 yellow peppers , deseeded and thickly sliced
½ tsp dried crushed chillies
300g ripe tomatoes
2 tsp balsamic vinegar
1 tsp caster sugar
handful basil leaves

Steps:

  • Heat oven to 180C/160C fan/gas 4. Put the mince, onion, eggs, crumbs, 1 tsp salt and ½ tsp black pepper into a large bowl. Roughly chop the oregano leaves and finely chop the thyme and rosemary leaves. Add the herbs and crushed garlic to the bowl, then mix very well with your hands. Grease a 900g/2lb loaf tin with a little oil, then press in the mince, leaving the top a little mounded. Scatter with a few more thyme leaves and drizzle with a little oil.
  • Toss the peppers with the remaining garlic, 2 tbsp oil and chillies in a large roasting tin. Put the meatloaf and peppers into the oven, with the peppers on the shelf below the meat. Roast for 30 mins.
  • Meanwhile, quarter the tomatoes or chop a little smaller if they are large. After 30 mins, stir the tomatoes, vinegar and sugar into the peppers, which should be starting to look soft and turning golden at the edges, then cook for 40 mins more. The meatloaf should be hot in the middle (test with a skewer), and the tomatoes looking soft and juicy.
  • Pour the excess fat and juice away from the meatloaf, then leave to cool. Squash the tomatoes into the peppers with the back of a fork, tear in the basil and season. Put into a container. Wrap meatloaf and its tin in foil. Serve sliced in rolls with salsa and a handful of rocket.

2 medium yellow onions, chopped
4 garlic cloves, minced
3 tablespoons jalapeno peppers, minced (or to taste)
2 tablespoons sun-dried tomatoes, minced
1/4 cup capers, drained
1/3 cup tomato paste
3 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon cayenne (or to taste)
1/2 lb lean ground beef
1 1/2 lbs lean ground turkey
1/2 cup breadcrumbs
1/2 cup milk
1 1/2 cups plum tomatoes, finely diced (or chopped)
1/2 cup white onion, finely diced
1/2 cup fresh cilantro, finely chopped
2 tablespoons cider vinegar
1 teaspoon sugar

Steps:

  • To make salsa:.
  • Place all salsa ingredients in a small bowl and mix well. Set aside for about an hour to let flavors marry.
  • Yield: 2 cups.
  • To make meatloaf:.
  • Preheat the oven to 350*F.
  • Heat the oil in a skillet over medium low heat. Add the onion and garlic and saute until soft, about 10 minutes. Move to a large mixing bowl.
  • Now add the jalapeno pepper, tomatoes, capers, tomato paste, chili powder, cumin and cayenne to the onion mixture, and mix completely.
  • Add the ground beef and turkey, bread crumbs, and milk. Mix thoroughly.
  • Place the meat loaf in a 9 x 4 1/2 x 2 1/2" bread pan. Place in the oven and bake for 1 1/2 hours, until crusty brown on top. Remove from oven and allow to rest for about 10 minutes.
  • Serve with the salsa. Enjoy!

1/2 cup onion, diced

1/4 cup fat free chicken broth
1/2 cup roasted red pepper, canned, diced
1/4 cup tomato paste
1/2 cup chili sauce, bottled
2 tablespoons cajun seasoning
2 tablespoons Worcestershire sauce
1 cup seasoned dry bread crumb

Steps:

  • Preheat oven to 350°F.
  • Saute onion and garlic in chicken broth until soft.
  • Stir in red peppers, tomato paste, chili sauce and Cajun spices.
  • Cook on low heat for 10 minutes; cool slightly.

2 bay leaves
1 teaspoon salt
1 teaspoon ground cayenne pepper
1 teaspoon ground black pepper
½ teaspoon ground white pepper
½ teaspoon ground cumin
½ teaspoon ground nutmeg
4 tablespoons butter
¾ cup chopped onion
½ cup chopped green bell pepper
¼ cup chopped green onions
4 cloves garlic, minced
1 tablespoon hot pepper sauce
1 tablespoon Worcestershire sauce
½ cup evaporated milk
½ cup ketchup
1 ½ pounds ground beef
½ pound andouille sausage, casings removed
2 eggs, beaten
1 cup dried bread crumbs

Steps:

  • In a small bowl, combine the bay leaves, salt, cayenne pepper, ground black pepper, ground white pepper, cumin, and nutmeg; set aside.
  • Melt the butter or margarine in a saucepan over medium heat. Add the onion, bell pepper, green onions, garlic, hot pepper sauce, Worcestershire sauce, and reserved seasoning mix. Saute until mixture starts sticking to the bottom of the pan, about 6 minutes. Stir in the milk and ketchup; continue cooking for 2 more minutes, stirring occasionally.
  • Remove vegetable mixture from heat, and allow to cool to room temperature. Place the beef and sausage in an ungreased 9x13 inch baking dish. Add the eggs, the vegetable mixture, and the bread crumbs. Remove the bay leaves. Mix well by hand, and form into a loaf about 1 1/2 inches high.
  • Bake uncovered at 350 degrees F (175 degrees C) for 25 minutes. Then raise heat to 400 degrees F (200 degrees C) and bake for another 35 minutes. Let stand for 5 minutes before serving.

40 bay leaves
1/2 cup salt
1/4 cup each pepper, white pepper, cayenne pepper, ground cumin and nutmeg
40 green onions, thinly sliced
15 medium onions, chopped
10 medium green peppers, chopped
40 garlic cloves, minced
4 cups butter
1 cup Worcestershire sauce
2/3 cup hot pepper sauce
6 cans (12 ounces each) evaporated milk
1 bottle (64 ounces) ketchup
8 packages (8 ounces each) dry bread crumbs (20 cups)
36 eggs, beaten
30 pounds lean ground beef (90% lean)
10 pounds ground pork

Steps:

  • Combine the seasonings; set aside. In Dutch ovens, saute onions, green peppers and garlic in butter until tender. Add Worcestershire sauce, hot pepper sauce and reserved seasonings. Cook and stir for 8-10 minutes. Discard bay leaves. Remove from the heat; stir in milk and ketchup. Cool. , Add bread crumbs and eggs; mix well. In several large bowls, combine beef, pork and vegetable mixture; mix well. Pat into 11 greased 13-in. x 9-in. baking pans. , Bake at 350° for 65-75 minutes or until no pink remains and a thermometer reads 160°; drain.
